BLACKBERRY BROWNIE COBBLER
This is a blackberry cobbler made with a brownie topping instead of the usual 'white/beige' crusts. Blackberries and brownies are a great combination! I have had a bumper crop of blackberries this summer and wanted to try something new. I played with a few brownie recipes and this one works as a pourable topping for the berries.

Steps:
- 1. Preheat oven to 350 degrees. For the bottom layer, beat the ingredients together using a mixer. It will be like a thick cake batter.
- 2. Spray the pan lightly with PAM then pour the batter into an 8 or 9-inch pan. Using a spatula spread the batter to the edges of the pan.
- 3. For the top layer, place the blackberries on top of the batter in a single layer, covering the batter with the blackberries.
- 4. Sprinkle the sugar over the blackberries.
- 5. Then pour 1 cup cold tap water on top.
- 6. Place on cookie sheet (sometimes it bubbles over) and place on center rack in oven.
- 7. Bake for 45 minutes to 1 hour; until the top is brown and the center doesn't jiggle. Cool before serving.
- 8. Serve with vanilla ice cream and/or whipped topping.
- 9. This same recipe may be used with apples, apricots, or canned peaches. If these fruits are used, place them on the bottom of a greased pan, batter on top, then sugar and water over all.
- 10. You may substitute boysenberries, huckleberries, or blueberries for the blackberries.

- First, I put my blackberries in a colander and rinsed them on low pressure, because you don't want to crush your blackberries. I washed and rinsed them a few times just to make ensure they're clean.
- After you've washed your blackberries, you can began prepping them for your cobbler. You will want to slice your 2 tablespoons of chilled unsalted butter into small cubes.
- Then, you'll add your 2 tablespoons of diced and chilled unsalted butter, and 1 cup of sugar into the bowl with the blackberries. You may want to add a little more sugar, but that depends on the tartness of your berries.
