BLACKBERRY WALNUT COOKIES

Steps:
- Preheat oven to 350°F with rack in middle.
- Blend together butter, sugars, vanilla, and 3/4 teaspoon salt in a bowl with a fork. Stir in flour and nuts (dough will be sticky).
- Form level tablespoons of dough into balls (total of 40) and arrange 2 inches apart on 2 ungreased large baking sheets. Flatten balls to 1/3 inch thick using bottom of a glass dipped in flour. Bake, 1 sheet at a time, until edges are golden, about 20 minutes. Cool cookies on sheets 5 minutes, then transfer to racks to cool completely.
- Spoon 1 teaspoon jam onto flat sides of 20 cookies, then sandwich with remaining cookies.
BLACKBERRY JAM CAKE WITH WALNUTS AND CARAMEL ICING

- For cake:
- Preheat oven to 325°F. Butter and flour two 9-inch-diameter cake pans with 2-inch-high sides. Sift first 6 ingredients into medium bowl. Using electric mixer, beat butter in large bowl until fluffy. Gradually add sugar, beating until well blended. Beat in eggs 1 at a time. Beat in jam. Beat in dry ingredients in 4 additions alternately with buttermilk in 3 additions. Fold in walnuts. Divide batter between prepared pans. Bake cakes until tester inserted into center comes out clean, about 45 minutes. Cool cakes in pans 10 minutes. Run knife around pan sides to loosen cakes. Turn cakes out onto racks and cool completely.
- For icing:
- Combine brown sugar, evaporated milk, butter, molasses and salt in heavy medium saucepan. Whisk over medium-low heat until blended and smooth. Transfer mixture to large bowl. Cool to lukewarm, whisking occasionally, about 15 minutes. Working in batches, sift powdered sugar into mixture, beating until smooth after each addition. Beat in vanilla extract. Cover and refrigerate icing until firm enough to spread, about 30 minutes.
- Place 1 cake layer, flat side up, on serving platter. Spread 1 1/2 cups icing over top. Top with second cake layer, flat side down. Spread remaining icing over top and sides of cake. (Can be prepared 1 day ahead. Cover cake and refrigerate. Let cake stand at room temperature 2 hours before serving.)
BLACKBERRY WALNUT CHEESECAKE SQUARES
If your from the south or have eaten southern cooking,then then you know what I mean when I say it is Blackberry picking time. LOL. You eat more then you pick and when you mix that with walnuts and cream cheese there is no going back!

- Preheat the oven to 350 degrees F. Grease 9x13 baking pan. Crush vanilla wafers. Place cookies into gallon size plastic zip lock bag and use a rolling pin to roll over and over until all are crushed fine. Chop nuts finely, if using in a nut grinder.
- If you don't have a nut grinder,you can place in a ziplock and use a meat tenderizer to break into pieces. In a medium size bowl mix together cookie crumbs,ground nuts and butter. Cream together well. Mix in vanilla. Press into prepared baking pan for the crust.
- In a medium size bowl cream together cream cheese and powdered sugar. Whip eggs and add to cream cheese mixture, blend in well. Mix in sour cream. Smooth the filling over crust in baking pan. Bake for about 50 minutes or so. Remove from oven.
- Cover lightly with foil for about 15 minutes. Remove cover and let cool. In a saucepan over medium heat,add enough water to just cover bottom of pan. Mix in blackberries and sugar. Bring just to a boil stirring frequently for about 5 minutes.
- In small bowl add flour and 2 Tbsp water together. Add to Berry mixture,bring to a boil for about 1-2 minutes or until desired thickness. Remove from heat. Let cool. Pour blackberry sauce over cheesecake. Let chill in frig over. Next day cut into 15 squares and serve.
BLUEBERRY WALNUT BREAD
Delicious quick bread for bread machines. Blueberries, walnuts and just a little grated lemon peel for that extra zing!

- In a large bowl, beat together the margarine, milk, eggs and sugar. Stir in the flour, baking powder, baking soda and salt. Carefully fold in the blueberries and walnuts. Fold in lemon zest.
- Spray bread machine pan with cooking spray. Pour mixture into bread machine pan and put pan into bread machine. Select Quick Bread/Cake cycle, and press Start. Check in 1 minute to see if mixture is well blended. Cook until cake cycle stops. Cool completely in bread machine pan before removing.

- In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar and salt. Beat until combined, scraping side of bowl occasionally.
