PAN-FRIED VENISON WITH BLACKBERRY SAUCE

Pan-fried venison with blackberry sauce image

Blackberries are delicious in savoury sauces, and this version is the perfect match for the richly flavoured venison

Provided by Sara Buenfeld

Categories     Dinner, Main course

Time 25m

Number Of Ingredients 7

1 tbsp olive oil
2 thick venison steaks, or 4 medallions
1 tbsp balsamic vinegar
150ml beef stock (made with 2 tsp Knorr Touch of Taste beef concentrate)
2 tbsp redcurrant jelly
1 garlic clove , crushed
85g fresh or frozen blackberry

Steps:

  • Heat the oil in a frying pan, cook the venison for 5 mins, then turn over and cook for 3-5 mins more, depending on how rare you like it and the thickness of the meat (cook for 5-6 mins on each side for well done). Lift the meat from the pan and set aside to rest.
  • Add the balsamic vinegar to the pan, then pour in the stock, redcurrant jelly and garlic. Stir over quite a high heat to blend everything together, then add the blackberries and carry on cooking until they soften. Serve with the venison, celeriac mash (see below) and broccoli.

PORK CHOPS WITH BLACKBERRY PORT SAUCE

Pork Chops with Blackberry Port Sauce image

I love pork chops. I love fruit with pork chops. The most common fruit accompaniment for pork is apple, but I wanted to try something a little different. I considered apricots (I love them too), but thought they are too sweet. After reading a number of different recipes, I settled on blackberries. They are tart and, I thought, would pair well with a sweet port to make the sauce.

Categories     Main Dish Recipes     Pork     Pork Chop Recipes     Pan Fried

Time 30m

Yield 6

Number Of Ingredients 13

6 (4 ounce) boneless pork loin chops
½ teaspoon salt
½ teaspoon ground black pepper
2 teaspoons olive oil, divided
2 shallots, minced
2 teaspoons dried thyme leaves
¾ cup sweet port wine
¾ cup blackberry juice
¾ cup chicken broth
1 tablespoon balsamic vinegar
2 teaspoons cornstarch
2 teaspoons water
2 cups fresh blackberries

Steps:

  • Season the pork chops on both sides with salt and pepper. Heat 1 teaspoon of olive oil in a skillet over medium-high heat, and pan fry the chops until they are lightly browned and no longer pink in the center, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Set the chops aside.
  • Heat 1 more teaspoon of olive oil in the skillet, and cook and stir the shallots and thyme until the shallots start to become translucent, about 1 minute. Pour in the port wine, blackberry juice, chicken broth, and balsamic vinegar. Bring the mixture to a boil, scraping off and dissolving any brown flavor bits from the skillet into the sauce. Cook until reduced by a third, about 5 minutes. Mix cornstarch and water into a paste, and stir into the sauce. Cook until thickened, stirring constantly, about 1 minute. Reduce heat to low, and stir in the blackberries. Simmer until berries are hot.
  • Return the chops to the skillet, and turn to coat with sauce. Serve hot, topped with sauce.

DUCK BREASTS WITH PORT REDUCTION SAUCE

Duck Breasts with Port Reduction Sauce image

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry

Number Of Ingredients 9

2 tablespoons minced shallots
3/4 cup ruby port wine
1/2 cup chicken stock
2 sprigs fresh thyme
2 tablespoons unsalted butter
Coarse salt
Freshly ground pepper
1 large Muscovy duck breast, about 1 pound
Coarse salt and freshly ground pepper

Steps:

  • Using a sharp knife, trim away excess skin from the duck (leaving enough to amply cover the breast). Using a sharp knife, score the skin, first cutting diagonally in one direction, and then the other, in a crosshatch manner. Cut all the way through the skin and most of the fat, but avoid the flesh. Alternatively, you can use a Jaccard tool to pierce the skin. On a small rimmed baking sheet or a plate, place a 1/4 inch layer of salt rough the size of the duck breast. Place duck breast skin-side down on bed of salt. Let stand at room temperature for 1 hour. Remove and brush off salt with a stiff brush. Line a small rimmed baking sheet or shallow dish with ice cubes and cover with plastic wrap. Place duck breast skin-side down on plastic wrap and weight it with a cheesecloth bundle filled with pie weights or dried beans for 25 minutes at room temperature.
  • Preheat oven to 350 degrees. Remove cheesecloth bundle and season flesh side with pepper, and place skin side down, in an unheated 10-inch skillet. Top again with cheesecloth bundle and cook over medium-low heat until a small pool of fat forms in the pan. As fat accumulates, spoon off into a heatproof bowl and reserve for another use; allowing it to cool before storing in an airtight container at room temperature. Continue to cook duck until the skin is nicely browned and crisp, about 25 minutes. Use tongs to turn breast over and top with cheesecloth bundle for 1 minute. Remove bundle and transfer skillet to oven and cook until duck is medium rare, 8 to 12 minutes. It should register 125 degrees on an instant-read thermometer inserted into the thickest part. Transfer to a wire rack set over a rimmed baking sheet to rest for 5 to 7 minutes. The duck will continue to cook slightly during this time.
  • Drain all of fat from the pan and place over medium heat. Add the shallots and cook until soft, about 2 minutes. Increase heat to medium high and add the port, chicken stock, and thyme, scraping the bits from the bottom of the pan with a wooden spoon. Bring to a simmer and cook until sauce is syrupy and reduced to 1/3 cup. Remove from heat and whisk in butter until fully incorporated. Season to taste with salt and pepper and serve.
  • Slice duck crosswise on a slight angle into 1/4-inch-thick slices, fan out on serving plates, and drizzle with sauce before serving.

  • Remove pork tenderloin from the refrigerator and unwrap about 45 minutes ahead of time to get the chill off. With a thin, sharp knife, slice off any silverskin and any extra fat. Set aside until ready to sear and roast.
  • Start the sauce. Place a small saucepan (2 quart) over medium-low heat and add olive oil. When oil is warm, add the shallot and cook until it’s a light golden color, about 2 minutes. Add garlic and cook 1 minute. Add wine and bring to a boil. Reduce wine by half, to about one cup.
  • Turn heat to low and add the blackberries, jam and vinegar. Stir and cook a few minutes until the sauce is thickened, breaking up the blackberries with a fork. If you want the sauce thicker, mix the arrowroot starch and warm water together in a small bowl and stir into the sauce. Turn heat off and allow the sauce to hold while you cook the pork tenderloin.
  • Pre-heat oven to 375°F degrees. Cover a rimmed baking sheet with foil or parchment. Drizzle pork with two teaspoons olive oil and roll the pork around to coat it, then sprinkle salt, pepper and granulated garlic. Heat a skillet or sauté pan over medium heat until hot. Sear the pork until golden brown on all sides. Place the pork on the foil-covered baking sheet and place in the oven. Roast until the pork reaches 145 degrees internally, about 6-8 minutes. Oven timing varies. Measure it with a digital thermometer. Allow the pork to stand for a few minutes to absorb the juices. Then slice and offer the blackberry wine sauce beside the pork tenderloin.
