BLACKBERRY MOJITO
We went blackberry picking and came back home with way too much of those awesome fruit. That is when I thought I could used some to make a nice cocktail. Hope you'll be enjoying as much as I did. Cheers!

Steps:
- Combine blackberries, raw sugar, mint leaves, lemon juice, and lime juice in a tall glass; muddle until mint leaves and blackberries are slightly crushed. Add lemon-lime beverage and vodka. Fill a cocktail shaker with ice; add blackberry mixture. Cover shaker and shake; pour into a glass.

HOMEMADE BLACKBERRY PLUM JAM
These two late summer/early fall treats make for the most amazing flavor when combined. The sweetness of the blackberry combined with the tartness of the plum are exceptionally balanced in jam!

Steps:
- Prepare the boiling water canner before starting to cook your jam. (Fill the canner/stockpot at least half full of enough clean, warm water so the level will be at least 1" over the top of the filled jars once they're added).
- Wash, pit and chop plums w/ skins.
- Wash and crush blackberries w/ potato masher.
- Place plums and crushed blackberries in large pot.
- Add pectin a little at a time to plums and berries, stirring constantly.
- Heat on high stirring constantly until mixture comes to a FULL boil.
- Add sugar ALL at once, stirring.
- Bring mixture back to a full hard boil, stirring constantly.
- Use potato masher to carefully further crush plums and berries in pot.
- Boil for 5 minutes.
- Skim off foam, if present.
- Place in sterilized, hot jars, leaving 1/4" headspace.
- Wipe edges of jars with clean cloth, place lids and screw on bands fingertip-tight.
- Process in a boiling water bath for ten minutes at sea level (over 1000 feet, add one minute of processing for each 1000 feet in altitude).
- Remove from water and place jars on a cloth-protected counter or cooling rack to cool undisturbed for 24 hours.
- Remove rings from sealed jars and store; put any unsealed jars in the refrigerator and use first.

Steps:
- Bring sugar and 1 1/4 cups water to a boil in a small saucepan, stirring until sugar is dissolved, 3 minutes. Remove from heat; let cool 15 minutes. Syrup can be refrigerated for up to 1 month.
- Combine lemon juice, fruit, and basil in a bowl. Add syrup; mash lightly to release juices. Refrigerate at least 1 day and up to 4 days.
- Combine fruit mixture and vodka in a pitcher or punch bowl; ladle about 1/3 cup into each glass. Fill with ice. Top with sparkling water, garnish with more basil, and serve.

Steps:
- Prepare fruit by crushing and then measure 3 cups of the fruit into a large bowl.
- Stir sugar into fruit and set aside for 10 minutes.
- Mix the water and the pectin together in a small saucepan.
- Bring to a full rolling boil over high heat while stirring constantly and continue boiling for 1 full minute.
- Stir the pectin/water into the fruit and stir constantly for 3 minutes.
- Fill plastic or glass freezer containers to within ½-inch of top, cover with lids and let stand at room temp for 24 hours.
- Store in freezer.
- After opening, store in refrigerator up to 3 weeks.

- Add the blackberries, water, and pure maple syrup to a saucepan. Cover, and bring to a full boil. Reduce the heat to a simmer, uncover, and simmer until blackberries turn bright pink and the mixture is very fragrant, about 8 to 10 minutes. Remove mixture from heat, add the basil, and replace the cover. Allow saucepan to sit for 5 minutes for the flavors to infuse.
- Strain the blackberry mixture into a jar (I like using a small fine mesh strainer), and push the blackberry and basil pulp against the strainer with a spoon or fork to maximize the amount of syrup (and flavor) you get out. Discard the blackberry and basil pulp. Refrigerate the syrup until ready to use (note: if you’d like to reduce the syrup further until it’s thick, simply cook it longer on the stove top before refrigerating. This is certainly an option, although it isn’t necessary).
- Add desired amount of fresh blackberries and chopped basil to each glass, then fill with ice. Pour 1-½ ounces of white rum into each glass, followed by 1 ounce of lime juice and 3 to 4 tablespoons (to taste) of blackberry syrup. Fill the remainder of each glass with sparkling water (or soda water), stir, and garnish with lime wedges.
