Alabama has some tasty fresh blackberries. Decades ago, my mama was heading out to pick blackberries to make a cobbler, but she ended up going to the hospital to have me instead. - Preheat oven to 350°. Pour 1/2 cup melted butter into an 8-in. square baking dish. In a small bowl, combine flour, 1 cup sugar, milk and vanilla until blended; pour into prepared dish. In another bowl, combine blackberries, remaining 1/2 cup sugar and remaining 2 tablespoons melted butter; toss until combined. Spoon over batter., Bake until topping is golden brown and fruit is tender, 45-50 minutes. Serve warm.

- Preheat oven to 350 degrees F (175 degrees C).
- Pour the melted butter into the bottom of an 8x8-inch square baking pan. Mix the sugar, self-rising flour, and milk together until moistened, and pour the mixture over the butter. Do not stir. Spread blackberries evenly over the batter.

- Preheat the oven to 180°C/fan 160°C/gas 4. Peel and core the apples, then chop into small, chunky pieces. The prepared weight should be about 700g. Put in a mixing bowl, then combine with the blackberries, 125g golden caster sugar and 2 tbsp flour. Set aside to draw out the juices.
- Meanwhile, for the topping, break the hard-boiled egg yolks, if using, into a food processor. Sift in the flour, baking powder, golden caster sugar and a pinch of salt, then whizz briefly. Add the butter, then pulse until the mixture looks like fine breadcrumbs. Transfer to a mixing bowl, then stir in the whipping cream to form a soft and quite sticky dough. Turn out onto a floured work surface, then gently bring it together into a ball. Carefully roll the dough out to a thickness of 1.5cm, then cut into 8 x 6.5cm rounds using a plain or fluted pastry cutter.
- Stir the melted butter into the reserved fruity mixture, then spoon it into a 2.5 litre (20cm x 30cm) shallow ovenproof dish. Arrange the cobbler discs on top of the fruit, leaving a small gap between each one. Brush the 'cobbles' with the remaining 1 tbsp whipping cream, then sprinkle over the demerara sugar. Bake for 40 minutes until the fruit is bubbling around the edges and the cobbles have risen and are golden brown. Serve with a glug of cream or custard, a dollop of crème fraîche or a scoop of ice cream.

- Preheat oven to 350°F.
- In a medium pot, combine blackberries, 1 cup sugar, and water. Bring to a boil, reduce heat to a simmer, and cook for 5 to 10 minutes until reduced and thickened, stirring occasionally. Remove from heat.
- While blackberries are cooking, whisk together flour, remaining 1/2 cup sugar, baking powder, and salt in a large bowl. Slowly blend in milk and vanilla and mix until batter is smooth.
- Put butter (sliced into 6 equal pieces) in a 9 by 13-inch baking dish and place in preheated oven for a couple of minutes to melt. - Before starting this recipe make sure to place the coconut oil in the freezer for at least 15-20 minutes so it is frozen and preheat the oven to 375F.
- First prepare the fruit filling. Add the slices peaches and blackberries to an 8*8 baking dish and top with the maple sugar, lemon juice, and arrowroot powder. Mix together until the arrowroot is completely dissolved and the mixture is evenly coating the fruit slices. Set aside the pan and make the cobbler topping.
- Add the all-purpose flour, maple sugar, baking powder, and salt to a large mixing bowl and sift together. Then, take the frozen coconut oil from the freezer and grate it into the bowl of dry ingredients. It's okay if large chunks fall off. Use a pastry cutter or a fork to "cut" the coconut oil into the dry ingredients until crumbly.
- Next, add in the oat milk and vanilla bean paste. Use the same pastry cutter or fork to cut the milk into the bowl until a shaggy dough forms. The dough should be moist, but not be fully together and should have chunks or pieces of coconut oil throughout.
- Take the cobbler dough and break it into 6-10 pieces and arrange the chunks of dough on top of the fruit filling. Then, add the cobbler to the oven and bake for 45-50 minutes until the fruit filling is bubbling and the topping has browned and cooked through.
- Remove the cobbler from the oven and let sit about 15 minutes before serving so the filling can firm up. Then, serve as is or top with a big scoop of vanilla ice cream. Enjoy!
