- Set oven rack about 6 inches from the heat source and preheat the oven's broiler to high. Place jalapeno peppers on a baking sheet.
- Broil in the preheated oven, turning every 2 to 3 minutes, until skin on the jalapenos is blackened and bubbling, 8 to 10 minutes.
- Remove jalapeno peppers from oven and place in a resealable plastic bag; set aside for 5 to 10 minutes. Carefully open the bag and remove jalapeno peppers; let sit until easily handled. Peel blackened skin from jalapeno peppers, slice open, remove the seeds, and mince the pepper.
- Combine jalapeno peppers, blackberries, water, brown sugar, honey, orange juice, orange-flavored liqueur, garlic, and orange zest in a saucepan over medium heat; simmer for 5 to 10 minutes. Reduce heat to low and continue simmering until glaze has reduced in size and is thickened, 5 to 10 minutes more. Mash the glaze with a potato masher until blackberries are broken down. Remove saucepan from heat.
- Reduce oven temperature to 325 degrees F (165 degrees C). Place the ham in a roasting pan and brush some of the glaze over the ham; cover loosely with aluminum foil.
- Bake in the preheated oven, basting with glaze every 20 minutes, until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), about 3 hours. Remove ham from oven and brush with more glaze. Let stand for 10 minutes before slicing.

- Preheat oven to 325°. Line a broiler pan with aluminum foil.
- In a saucepan, whisk together maple syrup, preserves, mustard, orange zest, and orange juice. Cook, whisking occasionally, over medium-low heat until preserves melt, 4 to 5 minutes. Remove from heat.
- Place ham, cut side down, on prepared pan, and cover loosely with foil.
- Bake for 1 hour. Uncover and brush glaze over ham. Bake, basting every 10 minutes, until a meat thermometer inserted in thickest portion of ham registers 140°, about 30 minutes longer. Let stand for 10 minutes before slicing. Garnish with blackberries and orange slices, if desired.

- Heat oil and margarine in a small skillet or wok over medium high heat. Add onion and saute until very brown, 10 to 15 minutes. (Note: This is an important step; if onion is not cooked well, sauce will taste funny.)
- Add ginger and garlic to onion and saute for an additional 2 minutes. Process onion/ginger/garlic mixture in food processor until smooth. Do not rinse food processor.
- Place onion mixture in a large saucepan. Stir in the cinnamon, black pepper, coriander, cumin, turmeric and cayenne pepper and cook over low heat until mixture is thick and has the consistency of a paste.
- Puree tomatoes, chile peppers and cilantro in food processor until smooth. Add to onion mixture and stir well over low heat, cooking off moisture from tomatoes and cilantro. Add yogurt a little bit at a time, stirring constantly to avoid curdling.
- Blend the whole mixture in food processor to puree it (for a very smooth sauce). Return to saucepan, add water and increase heat to high; bring sauce to a rolling boil. Cover saucepan and boil for 3 to 5 minutes. Reduce heat and simmer until desired consistency is reached.
- To serve with meat, cook the meat first separately, then simmer for 5 to 10 minutes in the sauce before serving over rice or with bread. To serve with vegetables, steam raw veggies first 4 to 5 minutes, then simmer for 5 to 10 minutes in the sauce before serving.

BLACKBERRY HAM GLAZE
This is a great sweet glaze for canned ham. I came up with it after being stuck in the house during a snowstorm, and having to make due with what I had in the house..I found my DH and son cutting the top off the ham after dinner, just to eat the part with the glaze on it!!!Make sure to make extra, as you can pour it over the ham during dinner...The alcohol cooks out so everyone cn enjoy it.

- Preheat oven to 350F degrees.
- Trim fat and rind from ham. Score outside of ham in a diamond pattern. Place ham on a broiler pan coated with cooking spray.
- Combine juice, blackberry preserves, and mustard in a medium bowl, stirring until well combined. Set aside half of the preserves mixture.
- Bake ham for 1-1/2 hours or until a thermometer registers 140F, basting with half of the preserves mixture every 20 minutes.
- Remove ham from oven. Place ham on a platter, cover and let stand 15 minutes before slicing.
- Place remaining preserves mixture in a large nonstick skillet over medium-low heat. Cook until reduced to 1 cup (about 15 minutes.) Serve sauce with ham.
