A rich and slightly sweet BBQ sauce made with a lot of fresh blackberries!

2 cups fresh blackberries
1 cup chicken stock
1/2 cup ketchup
1/4 cup brown sugar
2 tablespoons apple cider vinegar
1/2 lemon, juice only
2 teaspoons chili powder
1/8 teaspoon cinnamon
1/4 teaspoon dried mustard
1 pinch salt

Steps:

  • Add blackberries and chicken stock to a medium pot over high heat and bring to a simmer. Cook until blackberries start to break down, about 6-7 minutes.
  • Mash blackberries well in the pan. Then let the blackberry mixture cool a bit and add to a blender. Blend well.
  • Press blackberries through a mesh strainer to remove seeds. Add sauce back to pot and bring back to a simmer over medium heat.
  • Add other ingredients to the pot and continue to simmer until sauce is really thick and coats the back of a spoon.
  • Season BBQ sauce with salt and brush it on chicken or pork. Works great on the grill or roasted.

1 (46 fluid ounce) bottle ketchup
2 cups blackberry jelly
2 cups white sugar
1 cup raspberry balsamic vinegar
1 cup light corn syrup
1 (6 ounce) can tomato paste
½ cup frozen limeade concentrate
½ cup cider vinegar
2 tablespoons finely ground sea salt
2 tablespoons bourbon whiskey
1 tablespoon garlic powder
2 teaspoons liquid smoke flavoring
1 tablespoon ground ginger
1 tablespoon ground dried chipotle pepper
1 tablespoon red pepper flakes
1 tablespoon finely ground black pepper
1 teaspoon teriyaki sauce
1 teaspoon hot pepper sauce
3 habanero peppers

Steps:

  • Combine blackberries, ketchup, blackberry jelly, sugar, raspberry balsamic vinegar, corn syrup, tomato paste, limeade concentrate, cider vinegar, salt, bourbon, garlic powder, liquid smoke, ginger, ground chipotle pepper, red pepper flakes, black pepper, teriyaki sauce, and hot pepper sauce in a large pot and bring to a simmer over medium-high heat.
  • Reduce heat to medium-low and simmer blackberry mixture for 10 minutes. Add whole habanero peppers and continue to simmer until sauce is thickened, about 20 minutes more. Remove and discard habanero peppers.
  • Pour barbecue sauce into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.

I found this recipe on PepperFool.com and tried it when I had some extra habanero peppers and a craving for something spicy. I use it to baste chicken, pork or beef on the barbecue, or on burgers, although it is a bit spicy. I'm going to try it next with dark rum instead of water for some extra flavour. Remember to wear gloves when handling the habanero peppers, the smell and burning stay on your fingers for a LONG time!!

1 small onion, minced

1 cup water
1/2 cup cider vinegar
1 tablespoon garlic powder

  • Brown onions and peppers on oil.

Steps:

  • Add all the ingredients for the sauce into a saucepan and cook for 2 hours over medium-low heat. Remove the sauce from the heat and place into a food processor or blender and puree. Strain the sauce and set aside.
  • Preheat grill over medium-high heat.
  • Place the ribs onto the grill and brush with sauce. This will glaze the ribs while they cook.
  • The blueberries add a subtle sweetness to the sauce to play off the heat of the chiles and the acid of the vinegar.

1 tablespoon ground coriander
1 tablespoon smoked paprika
1 tablespoon kosher salt
8 skin-on, bone-in chicken thighs
Olive oil
1/2 recipe Blackberry BBQ Sauce
3 pints fresh blackberries
12 ounces dark beer
1 cup balsamic vinegar
1 cup red wine vinegar
1/2 cup packed light brown sugar
1 onion, sliced
1 clove garlic, minced
1 habanero pepper, slit
1 tablespoon ground chipotle chile powder
1 tablespoon finely ground coffee
1 tablespoon ground coriander
1 tablespoon ground cumin

Steps:

  • In a small bowl, combine the coriander, paprika and salt. Pat the chicken thighs dry with paper towels, season on both sides with the spice mixture and place in a gallon-size zip-top bag. Refrigerate for several hours but preferably overnight.
  • Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
  • Brush the chicken thighs with olive oil and place them skin-side down on the hot side of the grill. Cover and cook for 2 minutes. Uncover and move the chicken to the low side of the grill, skin-side up. Cover and cook until the thighs reach an internal temperature of 160 degrees F, 15 to 20 minutes. Pour half the Blackberry BBQ Sauce into a medium bowl and use it to baste the chicken occasionally during the final 10 minutes of cooking.
  • Remove the chicken from the grill. Serve with the remaining sauce on the side.
  • In a large saucepan, combine the blackberries, beer, vinegars, sugar, onion, garlic, habanero, chipotle powder, coffee, coriander and cumin. Cook over medium-low heat, stirring occasionally, for 2 hours. Carefully puree the sauce in a blender or food processor, then strain.

  • Replace the used wood chip packet. Keeping the ribs bone side down, rotate them on the grill over the indirect heat. Sprinkle with more dry rub and spray with apple juice. Cover and grill for 2 1/2 hours, rotating the ribs, sprinkling with the dry rub and spraying with apple juice every hour, until very tender. Replace the second wood chip packet after 1 hour.
