BLACKBERRY FRITTERS
I based this recipe on my corn fritters, using berries instead of corn, and they turned out beautifully! They have the texture of a funnel cake, with the extra flavor of fresh fruit. I feel as though I'm at a carnival when I eat these little jewels. -Lisa Renshaw, Kansas City, MO

Steps:
- In a large bowl, whisk flour, sugar, baking powder and salt. In another bowl, whisk eggs and soda until blended. Add to dry ingredients, stirring just until moistened. Fold in blackberries., In an electric skillet or deep fryer, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry 2-3 minutes or until golden brown, turning occasionally. Drain on paper towels. Dust with confectioners' sugar.

Steps:
- Sift together flour, baking powder, sugar and salt together.
- Make a well in the center of the dry ingredients and pour in milk.
- Add lightly beaten egg yolks.
- Blend together till batter is smooth (add a little more milk if needed to make the batter smooth).
- Fold in fresh blueberries.
- Fold in stiffly beaten egg whites.
- Chill, covered, for 30 minutes.
- Form into fritters by making balls with two spoons dipped into hot water, and deep-fry (375 F) until golden brown.
- Serve with blueberry syrup.

- Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
- Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!

- Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5 minutes.
- Add the remaining 7 Tablespoons of sugar, eggs, butter, vanilla extract, salt, nutmeg, and 1 cup flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If needed, add more flour, 1 Tablespoon at a time, until the dough pulls away from the sides of the bowl. Don’t add too much flour, though. You want a slightly sticky dough. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
- Keep the dough in the mixer and beat for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes.
- Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size.
