6 tablespoons unsalted butter melted, and 1/2 cup (1 stick), room temperature, plus more for pan
1 3/4 cups all-purpose flour (spooned and leveled), plus more for pan
1/2 cup packed light-brown sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup confectioners' sugar
1/2 teaspoon pure vanilla extract
2 large eggs
2 containers (5 ounces each) blackberries

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter and flour paper, tapping out excess.
  • Make topping: In a medium bowl, whisk together melted butter, brown sugar, and 1/4 teaspoon salt; add 1 cup flour, and mix with a fork until large moist crumbs form. Refrigerate topping until ready to use.
  • In a medium bowl, whisk together remaining 3/4 cup flour, baking powder, and remaining 1/4 teaspoon salt; set aside. In a large bowl, using an electric mixer, beat room-temperature butter, confectioners' sugar, and vanilla until light and fluffy; add eggs, one at a time, beating well after each addition. Reduce speed to low; mix in flour mixture. Spread batter evenly in pan; sprinkle with blackberries, then chilled topping.
  • Bake until golden and a toothpick inserted in center comes out with moist crumbs attached, 40 to 45 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 squares.

¼ cup white sugar
⅓ cup quick-cooking oats
¼ cup brown sugar
1 ½ teaspoons ground cinnamon
1 cup all-purpose flour
¾ cup white sugar
1 teaspoon salt
1 teaspoon baking powder
¼ cup milk, or as needed
¼ cup butter, cut into small chunks

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish.
  • Stir blackberries and 1/4 cup white sugar together in a bowl.
  • Mix oats, brown sugar, and cinnamon together in a separate bowl.
  • Mix flour, 3/4 cup white sugar, salt, and baking powder together in a third bowl. Add milk to flour mixture; mix well. Pour batter into prepared baking dish. Top with blackberry mixture; sprinkle oat mixture over blackberries. Top oat mixture with butter chunks.
  • Bake in the preheated oven until bubbling, about 30 minutes.

1/4 cup sugar
1/4 cup brown sugar (, packed)
1/2 teaspoon baking powder
1/8 teaspoon salt
1/2 cup unsalted butter
1 large egg yolk
2 cups fresh blackberries
1 tablespoon lemon juice
1/4 cup sugar
1 tablespoons cornstarch

Steps:

  • Preheat the oven to 375 degrees and spray an 8x8 pan with baking spray.
  • Add flour, sugar, brown sugar, baking powder, salt, butter and egg to a food processor and pulse until a crumbly dough starts coming together.
  • Add half the dough to your baking pan and press down in an even layer gently.
  • In a large bowl mix the blackberries, lemon juice, 1/4 cup sugar and cornstarch.
  • Pour mixture over the crust.
  • Crumble the remaining flour mixture over the top of the blackberries.
  • Bake for 40-45 minutes until golden brown.

1 (10 ounce) package frozen blackberries, unthawed
1/2 cup oats
1/4 cup brown sugar
1 tablespoon butter, softened
1/4 chopped pecans, toasted

Steps:

  • Preheat oven to 350*.
  • To prepare batter, process oats in a food processor until finely ground(about 1 min). Lightly spoon flour into a dry measuring cup; level with a knife. (too much flour will make this cake dry)
  • Add flour, sugar, baking powder and salt to food processor; blend well. Add butter; pulse 5 times or until combined. Spoon mixture into a large bowl.
  • Combine milk, eggs, and vanilla in a small bowl, stirring just until blended. Add to oat mixture, stirring to combine. Gently stir in blackberries.

  • You will need a 9 inch (23 cm) pan. Lightly grease the sides, dust with flour and set aside.Start by preparing the fruit filling mixture. In a pan combine the blackberries with the prunes and 2 tablespoons of sugar and cook over a medium heat squashing the fruit with a fork until the mixture thickens. This will take about 6 minutes. Set aside to cool while you prepare the pastry.
  • In a large bowl combine the flour, baking powder and salt and stir with a whisk. Add the egg yolks, vanilla, 120 g of sugar and cubed butter. Stir with a spoon to combine then knead to make a smooth pastry dough (I find it easier to knead on top of a flat surface rather than in a bowl).
  • Cut the pastry dough in half then cut one half into 2 equal parts. Place one of these small parts on top of a flat surface, add the cocoa powder and knead it in.   • Press the larger pastry dough into the bottom of the pan spreading as evenly as you can. Cover with the fruit mixture (once cooled) and even out using a large spoon.
