This easy recipe is a great way to use up a pick-your-own glut of blackcurrants and makes a refreshing summer drink

Number Of Ingredients 3

300g golden caster sugar
zest and juice 2 lemons
450g blackcurrants

Steps:

  • Put the sugar in a large saucepan with 300ml water. Bring to a simmer then add the lemon zest and juice followed by the blackcurrants. Cook the mixture over a medium heat until the blackcurrants start to soften and burst.
  • Pour the mixture through a sieve lined with muslin into a clean, heatproof jug then transfer to sterilised bottles. Keeps in the fridge for up to 1 month.
  • Serve approx. 25ml of cordial per 100ml sparkling or still water, or dilute to taste.

4 1/2 cups blackberries or 4 1/2 cups berries, of your choice
3 cups mineral water
3 whole cloves
2 peppercorns
3 cardamom pods, lightly crushed
2 cinnamon sticks, broken into 2-inch pieces
1 bay leaf
1 cup light brown sugar
1 1/4 cups cognac or 1 1/4 cups other brandy

Steps:

  • Combine the blackberries with water and spices in a medium saucepan, and bring just to boil. Reduce heat and cook on low for 30 minutes. Gently crush the berries against the side of the saucepan while it simmers. Without mashing the berries in the strainer, strain the berries through a fine sieve into a pyrex bowl. Add brown sugar and stir until dissolved. Set aside to cool.
  • Stir in Cognac or Brandy and pour into bottles. Tightly seal the bottles and store in a cool dark place for about 2 weeks.

1-quart vodka
2 cups of sugar

Steps:

  • Combine 2 1/2 pounds washed and stemmed blueberries and 1-quart good-quality vodka in a large, sterilized glass container. Seal and set in a dark, cool place for 1 week.
  • After one week, pour through a sieve, reserving blueberries, and transfer blueberry-infused vodka into a clean, sterilized glass container and seal.
  • Add 2 cups sugar to reserved blueberries, mix well, and transfer to a separate clean, sterilized glass container and seal. Place both containers in a dark, cool place for one month.
  • After one month, thoroughly combine blueberry mixture with vodka, strain and pour into a clean, sterilized glass container. Seal and allow to age in a cool, dark place for several months.
  • When serving the cordial, the blueberries can be discarded or served over ice cream or pound cake the same day.

2 cups sugar
1 teaspoon whole cloves
1 1/2 cups vodka
1 teaspoon whole allspice

Steps:

  • 1. In a large bowl, crush berries. 2. Stir in sugar, vodka, and spices. Dissolve sugar. 3. Pour into 2 qt. jar. Cover and age at room temperature for 2 to 4 weeks, shaking har gently every few days. 4. After the aging time, strain cordial through cheesecloth twice, discarding pulp and spices. 5. Pour cordial into small decorative bottles. Seal. 6. Depending of season, serve at room temperature, heated gently, or icy cold from refrigerator.

Pour cordial into sterilized pint canning jars, screw on lids and store in cool, dark place for at least two weeks before serving.

1 quart blackberries
1 quart vodka

Steps:

  • Pour the sugar into a 1 quart jar. Fill the remaining space with berries, but do not pack down. Fill the jar with vodka so that the berries are completely covered. Seal the jar. Let the jar stand for 2 months, shaking the jar every week. The sugar should dissolve, and the vodka will become colored.
  • Strain the liquid through a metal sieve, and then through a coffee filter to remove the fruit. Pour into pretty bottles. Drink as a cordial, or use it to flavor lemonade or iced tea.

After trying lemoncello, and learning how simple it is to make, in the middle of berry season here, this was inevitable. Blackberries, vodka and simple syrup combined to produce an absolutely delicious nectar. I used what I had on hand, which was 80 proof vodka, and it does freeze. For this reason I suggest using 100 proof vodka. Other than that nothing could be simpler.

1/2 gallon fresh clean blackberry
1 (750 ml) bottle 100 proof vodka
2 cups water
2 cups sugar

Steps:

  • Fill quart jars with blackberries. Pour vodka in to cover berries. Put on the lids and put jars in a cool, dark place and forget about them for 2 to 4 weeks. Then, pour contents through a strainer and reserve liquid. In a heavy saucepan combine sugar and water and bring to boil, long enough to dissolve sugar. When this syrup cools a bit, add to blackberry liquid and stir. Pour liquid into container of choice and put in freezer. When chilled, it's good as is or, as we tried it, in a juice glass with ginger ale. It's indescribably good.

  • Place the blackberries and lime zest in a medium saucepan with 100ml water and cook over a very low heat for 10-12 minutes, stirring regularly, until the fruit collapses. Strain through a fine-mesh sieve into a jug (see Kitchen Secret), pushing gently to extract all the juice. Transfer the juice to a medium saucepan and add the sugar – you should have about 500ml juice, but if you have significantly more or less, bear in mind that you'll need 350g sugar for every 500ml of juice, so just adjust the quantities accordingly. Discard any seedy pulp left in the sieve (or keep it and sweeten it up with a little honey before stirring through a bowl of yogurt for breakfast).
  • Gently stir the blackberry juice and sugar mixture over a low heat until the sugar has completely dissolved, then increase the heat and bring just to the boil. Once it boils, immediately remove from the heat, then stir in the lime juice and pour the cordial in sterilised bottles.
  • To serve, dilute 1 part cordial with 5 parts chilled water in a jug. Pour over crushed ice with a slice of lime.

  • Dewberry cordial. Two quarts dewberry juice, one-pound loaf sugar, four grated nutmegs, quarter ounce ground cloves, quarter ounce ground allspice, quarter ounce ground cinnamon.
  • Fruit cordial. Half pint black cherries, quarter pound ginger sliced, half ounce cinnamon, the same of cloves. Put these into a jug with proof spirit. Cork it, and let it stand till autumn.
  • Ginger and currant cordial. To one pound of picked currants, red or black, add one quart of whiskey, one ounce of bruised ginger; put in a stone jar and let it stand for twenty-four or thirty-six hours; strain through a flannel bag, and add half a pound of sugar; when it is all melted, bottle.
