JULIA CHILD'S BERRY CLAFOUTIS

This recipe is for a delicately sweet dessert whose elegance should not distract from its ease (it can be made while the rest of dinner is in the oven). Make sure you have fresh berries, and serve the result warm. We call for blueberries or blackberries here, but feel free to try it with whatever seasonal fruit catches your eye.

Butter for pan
1 and 1/4 cups whole or 2 percent milk
2/3 cup granulated sugar, divided
3 eggs
1 tablespoon vanilla extract
1/8 teaspoon salt
1 cup flour
1 pint (2 generous cups) blackberries or blueberries, rinsed and well drained
Powdered sugar in a shaker

Steps:

  • Heat oven to 350 degrees. Lightly butter a medium-size flameproof baking dish at least 1 1/2 inches deep.
  • Place the milk, 1/3 cup granulated sugar, eggs, vanilla, salt and flour in a blender. Blend at top speed until smooth and frothy, about 1 minute.
  • Pour a 1/4-inch layer of batter in the baking dish. Turn on a stove burner to low and set dish on top for a minute or two, until a film of batter has set in the bottom of the dish. Remove from heat.
  • Spread berries over the batter and sprinkle on the remaining 1/3 cup granulated sugar. Pour on the rest of the batter and smooth with the back of a spoon. Place in the center of the oven and bake about 50 minutes, until top is puffed and browned and a tester plunged into its center comes out clean.
  • Sprinkle with powdered sugar just before serving. (Clafoutis need not be served hot, but should still be warm. It will sink slightly as it cools.)

400g mixed blackberries, blueberries and raspberries
50g ground almond
2 tbsp plain flour
100g golden caster sugar
2 eggs
2 egg yolks
250ml double cream

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Oil or butter a 23cm flan dish or tin (not loose-bottomed) and scatter the berries over the base.
  • Whizz all the batter ingredients in a blender until smooth, pour it over the fruits and bake for 20-25 mins until risen and golden brown. Serve warm.

1 ¼ cups milk
⅔ cup white sugar
½ cup all-purpose flour
3 large eggs
1 tablespoon vanilla extract
1 pinch salt

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Generously butter a 2 1/2-quart baking dish.
  • Pour blueberries into prepared baking dish.
  • Blend milk, sugar, flour, eggs, vanilla extract, and salt in a blender until batter is smooth. Pour batter over blueberries and gently shake to remove any air bubbles.
  • Bake in the preheated oven until puffed and center is set, 25 to 30 minutes. Cool until clafoutis deflates and is just warm.

This classic recipe, from Julia Child, can be seen on Epicurious.com. It is so simple, yet so perfect - dense, slightly sweet vanilla custard, topped with fresh berries and a sprinkling of confectioners' sugar. So satisfying. Feel free to adapt to your own tastes - you could use any type of berries and even substitute 1 1/2 teaspoon almond extract for the 1 T vanilla, or add a Tablespoon or two of lemon juice to add a bit of lemon flavor. Don't worry about a crack or two on the surface, it's a rustic dessert, and doesn't mean you did anything wrong!

1 1/4 c milk (Whole or 2%)
1/3 c Granulated Sugar
3 eggs
1 T Natural Vanilla Extract
1/8 t Salt
1/2 c AP flour, sifted
3 c blackberries or blueberries, rinsed, well-drained
1 -2 T Confectioners' sugar for dusting

Steps:

  • Preheat oven to 350F. Lightly butter a medium-sized (1.8L or more) heatproof ceramic dish or enameled cast-iron pan.
  • In a blender, mix the following ingredients on High speed for about 1 minute, until smooth and frothy: milk, half of the sugar, eggs, vanilla, salt and flour.
  • Pour a 1/4″ layer of batter into a baking dish. Place over a low burner on the stove, or in the preheated oven for a few minutes until a firm of batter has set in the bottom of the dish. Remove from heat.
  • Spread the berries over the layer of batter and sprinkle on the remaining sugar. Slowly pour the rest of the custard batter over the fruit. Place in the center of the preheated oven. Bake about 50 mins until top is golden and slightly puffy, and the clafoutis does not "jiggle".
  • Serve while still warm, sprinkled with confectioners' sugar.

3 large eggs
3/4 cup all-purpose flour

  • Preheat oven to 400°. Place butter in a 12-in. cast-iron or other ovenproof skillet. Place skillet in oven until butter is melted, 1-2 minutes. Carefully tilt pan to coat bottom and sides with butter. Spread blueberries in bottom of pan. In a large bowl, whisk eggs, flour, milk, sugar, vanilla and cinnamon. Pour egg mixture over blueberries., Bake until center is puffed and edges are browned, 30-35 minutes. Sprinkle with additional cinnamon if desired. Let stand 15 minutes before cutting.

Try a twist on clafoutis, a French baked dessert with a creamy base and sharp cherries. We've added a boozy punch with kirsch and served it with ice cream

150g caster sugar
50ml kirsch
225g cherries, pitted and kept whole
¼ tsp almond extract (optional)
2 large eggs and 2 egg yolks (freeze the whites for another recipe)
200ml double cream
45g plain flour
butter, for the dishes
1 tbsp icing sugar
vanilla ice cream, to serve

Steps:

  • Simmer 50g of the caster sugar and the kirsch together in a pan over a medium heat until the sugar has dissolved. Stir in the cherries and simmer for 1-2 mins until softened slightly and you have a syrup. Pour into a bowl and set aside to cool.
  • Whisk the almond extract, if using, with the eggs, yolks and remaining 100g caster sugar in a bowl until smooth. Whisk in the cream and flour to combine. Leave for 10 mins to rest. After that, it should be the consistency of pancake batter.
  • Heat the oven to 180C/160C fan/ gas 4. Butter six shallow ceramic dishes (ours were 125ml, 10cm round and 2.5cm deep.) Divide the cherries between the dishes, pour over the batter, then drizzle the cherry juices over the top.
  • Put on a baking sheet and bake for 25 mins until golden brown. (They will deflate once out of the oven.) Dust the icing sugar over the top and serve warm with the ice cream.
