LIME CHICKEN WITH BLACKBERRY SALSA
I invented this recipe in a hurry one night and was over-the-top thrilled with how it came out! I've since served it to company; it always gets rave reviews. I love that it's so easy, and so healthy for my family, too. You can use grilled chicken instead of baked, if you like, and the spice level is up to you! If you like more kick in your food, use the whole 2T of red pepper flakes. Otherwise, start with 1T and adjust to taste. -Joni Hilton, Rocklin, California

- Finely grate zest from limes. Cut limes crosswise in half; squeeze juice from limes. Place peels, lime juice, oil, pepper flakes and salt in a large dish or bowl. Add chicken and turn to coat. Refrigerate 4 hours or overnight. , In a bowl, combine blackberries, tomatoes, green onions, cilantro and salt., Drain chicken, discarding marinade. Grill, covered, over medium heat or broil 4 in. from heat 4-5 minutes on each side or until a thermometer reads 165°. Serve with salsa.

CANNING CHERRY SALSA
An excellent fruit salsa made from Washington state Bing cherries.

Steps:
- First, prepare jars and lids for canning.
- Next, pit cherries.
- Coarsely chop pitted cherries, cilantro, red onions, jalapenos, and garlic.
- Place all ingredients into a copper jam pot, stainless steel pot or enamel dutch oven. Bring to a boil over high heat, stirring often. Reduce to simmering, and simmer for an additional 5 minutes, stirring often.
- Ladle cherry salsa into warmed pint mason jars leaving a 1/2-inch headspace. Remove air bubbles, add additional salsa if needed.
- Wipe the rim of jars with a clean dish towel, add warmed lids and rings to finger tight.
- Process pints in a water bath or steam canner for 15 minutes (for the altitude of 0 - 1000 feet), add additional time based on your altitude (see chart in the article).

BLUEBERRY SALSA
If the blueberries are not quite in season I like to do half blueberries and half raspberries, they sweeten it up a lot. It is great with chips or as a topping for pork and turkey london broil.
