THE ULTIMATE BLACKBERRY BRANDY RECIPE
Blackberry brandy is a delicious taste of summer that you can enjoy year round. It tastes delicious as a cocktail, a small shot or even drizzled over vanilla ice cream. Of course, it also makes a delicious gift!

- Add fresh blackberries to a one gallon mason jar (we love this Smiths version with a spigot)
- Add the sugar to your mason jar. Take a wooden spoon and gently crush the blackberries to release their flavor. Don't go overboard.
- Add your brandy to the mason jar and stir it up.
- Wait. This is the hardest step to making blackberry brandy. You want to store your jar in a cool dry place whether it is your bar, cupboard or inside your fridge. You can perform weekly taste tests until you have the flavor just right.
- Once you have reached your desired flavor, strain the liquid brand from the solid blackberries and you are ready to sip, serve and gift your homemade spirit.

BLACKBERRY BRANDY RIBS
Steps:
- Remove silverskin from bone side of rib rack. This is the opaque membrane that covers the bones. If you use pliers or even your fingers to grab a corner at the end of the rack, you can pull this skin right off. Leaving it on will cause the ribs to curl because it contracts during cooking.
- Mix brown sugar and creole seasoning. Rub into rib meat very well.
- Place ribs in a zipper storage/freezer bag and refrigerate overnight.
- In a small saucepan, combine all glaze ingredients. Cook over medium heat until sauce begins to boil. Boil 1 minute; remove from heat and set aside to cool.
- Light one side of a gas grill and preheat grill to medium heat (about 300 degrees F).
- Place ribs on UNLIT side of grill. Close grill lid and cook for about 3 hours. Make sure the temperature is between 200-300 degrees F.
- Brush the ribs with the glaze. Crisp ribs over direct heat--you want the sauce to bubble. Watch carefully that they don't burn. About 1 minute per side should be sufficient.

- May also be cooked in a 300 degree oven for the same length of time.

BLACKBERRY BRANDY
Last summer was a wonderful year for blackberries (probably due to the rainy summer!) and the brambles at my local secret location produced a bumper crop. I found this recipe when doing a general trawl of the internet for blackberry recipes; it was on the BBC Food website (shown as a variation under a recipe for Sloe Gin!). As we had picked so many blackberries I thought I'd give blackberry brandy a go. I was so pleased that I did as the finished result was absolutely wonderful. There are a few recipes posted on Recipezaar that use blackberry brandy, so you can enjoy this brandy in one of these or simply drink it on its own (slowly and savouring every drop!), as we do. Although I used fresh blackberries, I reckon that frozen ones will work just as well. Cooking time is steeping time!

- Divide the blackberries between 3 sterilised 500ml 'Kilner' jars (or alternatively use other sterilised jars/containers that you can seal tightly, or place blackberries into one very large container).
- Pour in the sugar, dividing it equally between the jars; divide and pour in the brandy.
- Seal the jars tightly and shake them well.
- Store in a cool, dark cupboard and shake every other day for a week, then shake once a week for two months; the brandy be then be ready to drink, but will keep improving if you can manage to leave it for longer!
- When the brandy has steeped for at least two months, strain it off into a 1 litre bottle (you can reserve the fruit for a very boozy dessert; a few berries are great served with vanilla ice cream); it is now ready to serve.

BLACKBERRY BBQ RIBS
Blackberries were on sale and so after looking at a lot of BBQ recipes, I put together this recipe! I threw in a pack of blackberries - not sure if it was six or eight ounces, but it was somewhere in there :) Also, I use organic, low salt and low sugar ketchup... you might want to lower the soy sauce if you ketchup is salty.

Steps:
- Cut the ribs into individual ribs.
- Melt the butter in the olive oil, in a frying pan, over medium high. Once the oil is hot, add the pork ribs and sear. You don't want them cooked, but you want the sides brown to hold in the juices and give texture to the meat. You will probably need to do this in batches, so add the butter and oil a bit at a time until all the ribs are cooked.
- Mix all the other ingredients in the blender and puree until smooth.
- Place ribs into crock pot as they sear. Pour sauce over ribs.
- Cook on high for five hours, turn to low and cook another 3-4 hours.
- Enjoy! This is really nice with steamed veggies, with a touch of lemon juice.

- Cooking the ribs: Lightly coat each side of the ribs with the dry rub. Place a metal baking rack in the bottom of a large roasting pan. Arrange ribs bone to bone. Cover with the marinade. Cover the roasting pan with the aluminum foil. Bake in a preheated 350 degree oven for 3½ hours or until a bone comes out clean. Cool in the liquid. Blackberry Berry BBQ Sauce Combine all ingredients except the cornstarch slurry into a saucepot and bring to a boil. Reduce to a simmer and cook for 45 minutes. Add the slurry, turn the heat to medium high and continue to cook for 5 minutes until the sauce coats the back of a spoon. Remove from heat and cool. To serve: Place ribs curved side up on a preheated medium grill, heat through on one side then flip to heat the other side, brush generously with the BBQ sauce and heat until the edges of the bones begin to bubble.
