BLACKBERRY BBQ SAUCE
A rich and slightly sweet BBQ sauce made with a lot of fresh blackberries!

Steps:
- Add blackberries and chicken stock to a medium pot over high heat and bring to a simmer. Cook until blackberries start to break down, about 6-7 minutes.
- Mash blackberries well in the pan. Then let the blackberry mixture cool a bit and add to a blender. Blend well.
- Press blackberries through a mesh strainer to remove seeds. Add sauce back to pot and bring back to a simmer over medium heat.
- Add other ingredients to the pot and continue to simmer until sauce is really thick and coats the back of a spoon.
- Season BBQ sauce with salt and brush it on chicken or pork. Works great on the grill or roasted.

GRILLED CHICKEN THIGHS WITH BLACKBERRY BBQ SAUCE

- In a small bowl, combine the coriander, paprika and salt. Pat the chicken thighs dry with paper towels, season on both sides with the spice mixture and place in a gallon-size zip-top bag. Refrigerate for several hours but preferably overnight.
- Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
- Brush the chicken thighs with olive oil and place them skin-side down on the hot side of the grill. Cover and cook for 2 minutes. Uncover and move the chicken to the low side of the grill, skin-side up. Cover and cook until the thighs reach an internal temperature of 160 degrees F, 15 to 20 minutes. Pour half the Blackberry BBQ Sauce into a medium bowl and use it to baste the chicken occasionally during the final 10 minutes of cooking.
- Remove the chicken from the grill. Serve with the remaining sauce on the side.
- In a large saucepan, combine the blackberries, beer, vinegars, sugar, onion, garlic, habanero, chipotle powder, coffee, coriander and cumin. Cook over medium-low heat, stirring occasionally, for 2 hours. Carefully puree the sauce in a blender or food processor, then strain.

- In a medium sized sauce pan combine 2 1/2 cups of the blackberries with all remaining ingredients except the water.
- Using a hand held blender, blend all ingredients to desired consistency. Heat to medium heat, stirring occasionally.
- Stir in the water and the remaining whole berries. Increase heat to a low boil, stirring constantly.
- Reduce heat to a simmer and cook for 30 minutes or to desired thickness. Stir frequently to prevent sticking.
- Remove from heat and cool. Pour into a clean quart jar and seal. Refrigerate.

CHIPOTLE BLACKBERRY BBQ SAUCE

- Step 1 In a medium sized heavy bottom pot combine all the ingredients and bring to a boil over medium high heat. Simmer for 20 minutes. Turn heat to low and use a potato masher to mash all ingredients together. Simmer for another 5 minutes. Season with salt and pepper.
- Step 2 Pour everything through a fine mesh strainer into another bowl and use a spatula to mash everything up and push the sauce through the strainer.
- Step 3 Store in an airtight container up to 2 weeks in the refrigerator. Serve as you like.

This is came together when I was making blackberry jam. A total experiment that worked. I make my own jelly for this recipe. I used to use jam but I didnt like the seeds in my teeth! if you use jelly people wont know the secret ingredient. you may add a dash of hot sauce to fire it up if you enjoy heat. to some this sauce is sweet to others they love it. - Pat the ribs dry with paper towels and arrange on a large rimmed baking sheet. Season with salt, then rub all over with 3 tablespoons of the dry rub. Cover and refrigerate for up to 4 hours. Bring to room temperature 30 minutes before grilling.
- Meanwhile, in a medium saucepan, bring the rice vinegar, cider vinegar, Worcestershire, blackberries and 2 teaspoons of the dry rub to a boil over moderate heat, whisking, until the berries begin to break down, about 5 minutes. Remove from the heat. Strain the sauce through a fine-mesh sieve set over a medium bowl, pressing on the solids; discard the solids. Whisk in the brown sugar, tomato paste, blackberry preserves and habanero until smooth.
- Set up a gas grill for indirect grilling and heat to 250°. Wrap 3 cups of the wood chips in an 18-inch-long piece of heavy-duty foil and poke several holes in the top of the packet. Repeat with the remaining wood chips and more foil, making a total of 3 packets. Pour the apple juice into a small spray bottle. Carefully set 1 wood chip packet directly on the flames; close the grill. When the chips start smoking (about 10 minutes), set the ribs on the grate, bone side down, over indirect heat. Cover and smoke for 1 hour, maintaining 250°.
- Replace the used wood chip packet. Keeping the ribs bone side down, rotate them on the grill over the indirect heat. Sprinkle with more dry rub and spray with apple juice. Cover and grill for 2 1/2 hours, rotating the ribs, sprinkling with the dry rub and spraying with apple juice every hour, until very tender. Replace the second wood chip packet after 1 hour.

- Light a grill. In a large bowl, toss the blackberries with the pimentón . Spread the berries in a perforated grill pan or in a foil pan with holes poked in it. Grill over moderately high heat, tossing, until the berries just start to burst, 3 to 5 minutes.
- In a saucepan, heat the 3 tablespoons of vegetable oil. Add the garlic and cook over moderately low heat, stirring, until just golden. Add the chopped onion and cook over moderate heat, stirring, until softened and just starting to brown, about 7 minutes. Stir in the tomato paste and cook until glossy, about 2 minutes. Add the blackberries, vinegar, brown sugar, soy sauce, chipotles, mustard and cumin and bring just to a boil. Reserve the remaining sauce for grilled chicken or pork.
- Light the grill and oil the grate. Season the ribs with salt and pepper and brush with the blackberry sauce. Grill over high heat, turning once, until nicely charred, 3 minutes. Continue to grill for 2 minutes more, turning and basting with more sauce, until glazed. Garnish the ribs with radishes and chopped oregano; serve hot.
