BLACKBERRY SALAD
This was a delicious salad! I made it to take advantage of the ripe blackberries that were in season. I wish I had taken better notes as I was cooking, but this is what I remember (it was too good not to save at least an approximation here):

Steps:
- Toss the spinach and scallions.
- Top with pecans that have been toasted in the microwave for a minute or two and the fresh blackberries.
- For the dressing: Place 1/2 cup blackberries in a small pan over medium heat and bring to a simmer with a little sugar to taste. Remove from the heat and strain out the seeds if desired.
- Add the vinegar, lemon juice, garlic, salt, and pepper.
- Slowly whisk in the olive oil to emulsify.
- Drizzle the dressing over slices of goat cheese arranged on a plate. Serve the cheese and extra dressing along side the salad.

AVOCADO WITH BALSAMIC DRESSING
My husband taught me this quick recipe. I don't know where he got the idea, but it's very delicious. Avocado and balsamic vinegar are the new Hollywood couple. Step aside mayo!

- Take one ripe but firm avocado and cut it in half lengthwise. Remove pit.
- *Drizzle the vinegar on the two avocado halves, adding the majority of the balsamic in the little "wells" but drizzle some of the vinegar onto the rest of the avocado halves to avoid oxidation.
- Next add the grapeseed oil or olive oil, in the same manner as the vinegar.
- NOTE: *It is important to add the vinegar as soon as the avocados are cut so that the avocados don't turn brown.
- Enjoy!

- In a small bowl or large measuring cup, briskly whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until blended.
- Place the chicken breasts in a shallow dish or large ziptop bag and pour half of the balsamic mixture over the top. Cover the dish (or seal the bag) and refrigerate for at least 30 minutes or up to 2 hours. Reserve the other half of the (unused) balsamic mixture for serving.
- Spray an indoor grill pan or a regular nonstick pan with nonstick spray and heat to medium high. Remove the chicken breasts from the marinade, shaking off any excess. Discard the used marinade. Once the grill pan is hot, place the chicken breasts the pan and cook for 3 minutes. Flip, then cook for 3 minutes on the other side. Flip the chicken back to the first side, then reduce the heat to medium. Continue cooking the chicken for an additional 9 to 10 minutes, turning once or twice, until it is cooked through and reaches an internal temperature of 165 degrees F. The actual cooking time may vary depending upon the thickness of your chicken. Remove to a plate, cover with foil to keep warm, and let rest for 5 minutes. Cut into bite-size pieces or longer slices as you prefer.
