This is a wonderful salsa!! It is full of black beans, corn, tomatoes, and onion. I can never make enough when I have a party!! Chill 24 hours before serving if you have time!! Serve with tortilla chips.

3 (15 ounce) cans black beans, drained and rinsed
1 (11 ounce) can Mexican-style corn, drained
2 (10 ounce) cans diced tomatoes with green chile peppers, partially drained
2 tomatoes, diced
2 bunches green onions, chopped
cilantro leaves, for garnish

Steps:

  • In a large bowl, mix together black beans, Mexican-style corn, diced tomatoes with green chile peppers, tomatoes and green onion stalks. Garnish with desired amount of cilantro leaves. Chill in the refrigerator at least 8 hours, or overnight, before serving.

2 plum tomatoes, chopped
1 medium red onion, finely chopped
4 green onions, finely chopped
1/3 cup minced fresh cilantro

1 teaspoon grated orange zest

Steps:

1/2 pound dried black beans
1 medium onion, roughly chopped
3 fresh garlic cloves, pressed
1/2 teaspoon dried oregano leaves
1/2 teaspoon ground cumin
Pinch red pepper flakes
2 teaspoons sugar
2 tablespoons white wine vinegar
Salt and freshly ground black pepper
Chopped scallions, for garnish

Steps:

  • The night before, soak the black beans in a large pot of water. The next day, rinse the beans, cover with 3 cups of fresh water and bring to a boil over high heat. Reduce the heat and simmer covered for 30 minutes, skimming off any foam. Stir in the onion and simmer 30 minutes more. Add the garlic, oregano, cumin, and red pepper flakes, and simmer uncovered for 30 minutes, stirring occasionally. Stir in sugar and vinegar, and taste before seasoning with salt and pepper. Turn out into a large serving bowl and garnish with chopped scallions.

1 tablespoon olive oil
3 cups onion, chopped
8 cloves garlic, chopped, divided
1 carrot, diced
3 teaspoons ground cumin
2 teaspoons salt
1 red bell pepper, diced
2 (15 ounce) cans black beans, drained and rinsed
½ cup water
1 cup orange juice
1 pinch cayenne pepper, or to taste

Steps:

  • Heat olive oil in a large saucepan over medium heat. Add onion, half of the garlic, and carrot. Season with cumin and salt. Cook, stirring, until onion and carrot are tender. Stir in remaining garlic, and red pepper; continue cooking until tender.
  • Add beans, water, and orange juice to the pan, and season with cayenne pepper. Transfer a portion of the mixture to a blender or food processor, and puree until smooth. Puree part or all of the soup, depending on how you like the texture. Return puree to the pan, and simmer for 10 more minutes to blend flavors before serving.

An easy, hearty, Mexican black bean soup, "sopa de frijol negro," garnished with tortilla strips, fresh avocado, and queso fresco.

3 cups cooked black beans
2 tomatoes (Roma)
1 medium onion
4 cloves of garlic
1 serrano chile (optional)
1 teaspoon Mexican oregano
1/8 teaspoon cumin
tortilla strips
6 tablespoons Mexican cream
1 avocado (cut into 1/4 inch cubes)
6 ounces queso fresco (a young white Mexican cheese)

Steps:

  • Roast the tomatoes, onion, and garlic until they are blackened. You can do this under the broiler or in a pan on the stove.
  • Blend the roasted vegetables, cumin, and oregano until smooth. (Add a little water if necessary to blend)
  • Next, blend the black beans with the vegetable mixture until very smooth. (Add 1 cup of water to blend, add more if necessary)
  • Place the blended soup in a pan on the stove.
  • Simmer the soup for one hour. (Add water if necessary so that it doesn't become too thick.)
  • Salt to taste.
  • To serve, divide the soup into 6 bowls.
  • Garnish each bowl of soup with the tortilla strips, 1 tablespoon of Mexican cream, 1 ounce of cubed queso fresco cheese, and the cubed avocado.

2 teaspoons extra virgin olive oil, such as Kirkland's
1 large shallot, finely chopped
1 teaspoon cumin
Pink Himalayan sea salt, to taste
1 box (15 ounces) frozen pureed butternut squash, thawed
1 can (15 ounces) BPA-free canned black beans, rinsed and drained
1/2 cup canned Organic Coconut Milk, like our favorite from ARROYD
3 cups organic vegetable broth
1/4 cup chopped cilantro, plus more for garnish
2 tablespoons fresh lime juice

Steps:

  • Heat the oil in a heavy medium-sized saucepan over medium heat. Add the shallots and saute 2 to 3 minutes. Add the cumin and season with salt to taste.
  • Add the frozen butternut squash and saute until softened, about 2 minutes. Add the beans, coconut milk, and broth. Bring soup to a boil, stirring constantly.
  • Reduce heat to medium-low and simmer for about 3 minutes to let flavors blend. Add in cilantro and lime juice. Season with salt to taste. Use a hand held stick blender to process until smooth and creamy. Serve warm.

2 lbs Black Beans (Home cooked or canned (rinsed and drained))
1 lb Calabaza Squash (Roasted and chopped)
2 tbsp Olive Oil (Extra-virgin)
1 Vidalia Onion (Large and chopped)
5 Garlic Cloves (Minced)
2 stalks Celery (Chopped)
1 Jalapeño (Seeded and chopped)
4 tbsp Red Bell Pepper (Chopped)
4 tbsp Fresh Cilantro (Chopped)
1/2 tsp Himalayan Salt (Adjust to taste)

Steps:

  • Preheat oven to 400F
  • Remove seeds and strings from the core of the Calabaza
  • Place Calabaza on middle rack without a pan, so it roasts fast and evenly for 20 minutes
  • Poke Calabaza with a long-tined fork after 10 minutes (halfway) to check for doneness
  • When the fork goes through with not too much resistance (usually after 20 minutes of roasting), remove Calabaza and let it cool off a little before peeling and dicing it.
  • Place a saucepan on medium-high heat and add the olive oil when warm
  • Add in onions and garlic. Saute for 3-5 minutes
  • Add celery, peppers, and calabaza. Stir and saute for a couple of minutes
  • Add the Black Beans
  • Add a pinch of salt and half the fresh cilantro (reserve the other half for garnish)
  • Cover with a lid and let simmer for 25 minutes
  • Remove from the heat and transfer to a serving bowl

optional garnishes, (including diced avocado, cilantro, parsley, crushed tortilla chips, etc.)

Steps:

  • Combine all ingredients. I like to pulverize (leaving some texture) with a hand blender, but it's not required. Heat on the stove, or the soup can be eaten cold if you prefer. The recipe is easily customizable - feel free to add diced roasted sweet potato, corn, etc. Leftovers can be frozen.

2 cups cooked black beans
1 tablespoon vegetarian or chicken bouillon base
1 bay leaf
One 14-ounce can diced tomatoes

Steps:

  • Cook the celery, carrots and onions in the olive oil in a large saucepan over medium heat until soft, about 5 minutes. Add the oregano, cumin, red pepper flakes, celery seeds and garlic and cook until fragrant. Add the black beans, bouillon, bay leaf and tomatoes, and enough water to cover by an inch or two (about 3 cups). Simmer for at least 30 minutes, up to 2 hours, adding water if needed. Season and serve.
