2 (15-ounce) cans black beans, no salt added, drained and rinsed
1/2 cup sour cream
1/4 cup planet oat original
1 bunch cilantro (2.5 ounces), leaves and stems
1 bunch scallions
juice of 3 limes
2 garlic cloves
1 1/4 teaspoon salt
3/4 teaspoon cumin
1/4 teaspoon chili powder
1/8 teaspoon ground black pepper
assorted veggies (carrots, celery, green beans, tomatoes, etc.)
tortilla chips

Steps:

  • Combine all ingredients in a food processor.
  • Pulse until smooth.
  • Season with additional salt and black pepper to taste, if needed.
  • Pour dip into a serving bowl.
  • Serve with assorted veggies and tortilla chips.
  • Recipe note: dip can also be chilled, then served.

Delicious, healthy and easy-to-make black bean dip.

¼ cup extra virgin olive oil
2 small yellow onions, chopped
4 cloves garlic, peeled and chopped into large chunks
2 jalapeño peppers, seeded and chopped*
2 (15.5 ounce) cans black beans, rinsed and drained
1½ teaspoons salt
½ teaspoon ground cumin
2 tablespoons fresh lime juice, from one lime, plus more if desired
3 tablespoons water
¼ cup fresh chopped cilantro, plus more for garnish (optional)

Steps:

  • Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
  • Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
  • *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

Steps:

  • Blitz all ingredients in a food processor until smooth, seasoning with salt and pepper to taste.

1 pound skirt steak, cut into 1/2-inch-thick slices
4 teaspoons cornstarch
1/2 cup low-sodium chicken broth
2 tablespoons minced fresh ginger (from a 2-inch piece)
2 tablespoons black-bean garlic sauce, such as Kikkoman or Lee Kum Kee
1 teaspoon sugar
2 teaspoons toasted sesame oil
1/4 cup vegetable oil
4 cups small broccoli florets (from 1 head)
3 scallions, white and light-green parts thinly sliced (1/2 cup), plus darker greens, sliced, for serving
Cooked rice, for serving

Steps:

  • Pat meat dry, then toss with 3 teaspoons cornstarch. Stir together broth, ginger, black-bean sauce, sugar, sesame oil, and remaining 1 teaspoon cornstarch in a bowl. Measure 2 tablespoons water in a separate small bowl and set aside.
  • Heat a large, heavy skillet (preferably cast iron) or wok over high for 3 minutes. Swirl in 2 tablespoons vegetable oil. Working in batches to avoid crowding pan, brown meat, about 1 minute per side. Transfer to a plate.
  • Swirl in remaining vegetable oil and add broccoli. Cook, stirring occasionally, until broccoli begins to brown, about 3 minutes. Add reserved water and toss until broccoli is bright green and tender, 1 to 2 minutes more.
  • Add white and light-green parts of scallion to skillet along with meat and any accumulated juices. Stir in black-bean-sauce mixture and toss until evenly coated and sauce has thickened, about 30 seconds. Serve with rice, sprinkled with scallion greens.

2 garlic cloves
1 teaspoon ground cumin

  • Rinse black beans and drain. Chop garlic. In a nonstick skillet cook garlic and cumin in oil over moderate heat, stirring, until fragrant. Add black beans, juice or water, and salt and cook, stirring, until beans are heated through. Stir in cilantro.

1 head savoy cabbage, cored and cut into 1-inch squares (about 1 1/2 pounds)
4 teaspoons canola oil
2 tablespoons shao hsing rice wine or 2 tablespoons dry sherry
4 teaspoons black bean garlic sauce
1 bunch scallion, minced
2 teaspoons distilled white vinegar
2 teaspoons toasted sesame oil
5 dashes hot sauce (to taste)

Steps:

  • Preheat oven to 500°F
  • Toss cabbage and canola oil in a large roasting pan and spread out in an even layer.
  • Roast until beginning to wilt and brown, about 15 minutes.
  • Combine rice wine (or sherry) and black bean sauce in a small bowl; drizzle over the cabbage and toss.
  • Continue roasting until tender, about 5 minutes more.
  • Toss with scallions, vinegar, sesame oil and hot sauce until combined.

I adapted this recipe on Lee Kum Kee's website. It was very tasty, as well as quick and easy - anyone who likes Chinese food would love it! It's not spicy at all. I would recommend adding more sugar next time and/or adding some chili sauce or peppers.

16 ounces eggplants, cut into 1/2 " x 2-inch in length pieces
16 ounces ground pork
1 red bell pepper
2 teaspoons cornstarch
2 teaspoons sugar
2 ounces water
2 tablespoons cooking oil (or cooking spray)
4 tablespoons dry sherry (I used chicken broth. You might also use sake)
2 teaspoons minced ginger
4 tablespoons black bean garlic sauce

Steps:

  • Combine water, cornstarch, sugar, sherry/broth and black bean garlic sauce in a small bowl. Mix well and set aside.
  • In a heated pan with oil, brown the pork until well done. Drain. Add in ginger and eggplant and cook for another 4-5 minutes.
  • Add sauce mixture and cook until sauce thickens.
  • Serve with rice.
