Steps:
- Sift your flour to have it ready. Set aside for now.
- Chop the black walnuts if needed.
- Place the butter in a large mixing bowl.
- Add the lard or shortening.
- Use a mixer to cream butter and shortening together for 3 minutes.
- Gradually add in the light brown sugar, mixing until smooth.
- Gradually add the granulated sugar, mixing until light and fluffy.
- Add eggs, one at a time, mix just until combined. Scrape down bowl as needed.
- Add flour, alternating with milk, beginning and ending with flour.
- Add butter nut flavoring, mix just until combined.
- Add the walnut pieces.
- Fold nuts into mixture by hand until combined.
- Grease and flour 3 - 8 inch cake pans.
- Divide batter between the 3 pans.
- Bake at 350F degrees for 20 - 30 minutes, or until cake tests done using a wooden toothpick.
- Remove from oven, place pans on wire rack and let cool for 10 minutes.
- Remove layers from pans, place layers on wire rack to cool completely.
- Black Walnut Butter Cream Frosting Instructions:
- Place the cream cheese, butter and flavoring in a large mixing bowl.
- Cream the ingredients together until smooth.
- Gradually add the confectioners' sugar. Stir slowly to avoid making a mess.
- Spread frosting between layers of cake, on sides, and on top.
- Enjoy!
MAPLE WALNUT FROSTING
This is a good cake frosting, and is especially good when the maple syrup can be purchased in March. You can use the artificial for those of you who do not live in the north, or cannot obtain it. This recipe will fill and frost a 9 inch cake.

- Place egg whites, brown sugar, maple syrup, water, and cream of tartar in the top of a double boiler over boiling water. Beat with a mixer until frosting has a good spreading consistency, and will stand in peaks. Remove from heat.
- Fill and frost cake. Sprinkle the top with chopped nuts.

- Combine egg whites, sugar, water, and cream of tartar in in the top of a double boiler over simmering water. Beat at low speed until mixture reaches 140 degrees F (60 degrees C). Do not stop beating while checking temperature, otherwise egg whites will overcook. Beat on high speed until mixture reaches 160 degrees F (71 degrees C), 2 to 4 minutes.
- Remove bowl from heat and stir in vanilla and black walnut extracts. Beat egg whites to cool on high speed, 3 to 5 minutes.
- Place a large dollop of the beaten egg white mixture in a separate bowl. Add butter and beat until well combined. Continue beating in dollops of egg white mixture until all egg white is incorporated and frosting is smooth and fluffy. Use to frost any cake; garnish with black walnuts.

- Make the cake: Preheat oven to 350 degrees. Lightly coat two 9-inch round cake pans (2 inches deep) with cooking spray. Line bottoms with parchment paper; lightly coat parchment with cooking spray. Flour parchment and sides (tapping out excess); set aside.
- In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, using an electric mixer, beat butter and brown sugar on high until light and fluffy, 5 minutes. Beat in eggs, one at a time, scraping down bowl as needed. With mixer on medium-high, add maple syrup in a slow, steady stream. Add flour mixture in 2 additions, alternating with milk, beating well after each addition and scraping down bowl as needed. Fold in walnuts.
- Divide batter between pans; firmly tap pans on a flat surface several times to remove air bubbles. Bake until a toothpick inserted in center of a cake comes out clean, 30 to 35 minutes. Let cakes cool in pans on wire racks, 15 minutes, then invert onto racks; peel off parchment. Invert cakes again and let cool completely on racks. With a serrated knife, trim domed top from each cake to make a flat surface.
- Make frosting: In a large bowl, using an electric mixer, beat cream cheese, butter, and brown sugar on high until light and fluffy, 5 minutes. Gradually add confectioners' sugar, 1/2 cup at a time, beating well after each addition.
- Assemble cake: Place one layer, top side up, on a cake stand or serving plate. Spread top evenly with 1 1/2 cups frosting. Top with second layer, top side down. Spread remaining frosting over top and around sides of cake.

- Cream butter and shortening.
- Add sugar and cream together.
- Add eggs 1 at a time, beating well after each.
- Add sour cream and mix together.

- 1. Please NOTE: BLACK WALNUTS has a unique and different flavor from English Walnuts) a bit pricey but worth it. I ended up ordering my Black Walnuts from Amazon & Nuts.com.
- 2. This is what they look like before you crack them. Add softened butter and Powdered sugar to a large bowl. Beat till it comes together.
- 3. Add softened cream cheese and beat again to blend.
- 4. Add the coffee granules, coffee flavor, Frangelico Liqueur, & Black Walnut Flavor, then beat again to blend together.
- 5. Add Fancy Nut filling, and beat to blend together till blended.
- 6. Add evaporated milk 1 tablespoon at a time till desired spreading consistency is reached.
- 7. Add Chopped Black Walnuts and stir till blended into frosting.
- 8. Frost cake as desired. Garnish if desired. Refrigerate any left overs, and save for another use, or freeze till needed.
