WALNUT BALLS
This is an old, old recipe that has been in the family for years. The origin is unknown. Recipe uses very little sugar in it and is rolled in superfine sugar to sweeten.

Steps:
- Preheat oven to 350 degrees F (180 degrees C).
- Cream the sugar and butter. Add flour, nuts, salt and vanilla. Mix well. Batter will be very crumbly.
- Shape into 1 inch balls. Bake for 15 minutes, remove from oven and allow to cool for 3 minutes. Roll in super fine sugar. When cool, roll again, if desired.

- In a large bowl, combine the first 7 ingredients. Stir in the crackers, walnuts and cheese. Coat hands with cooking spray; shape mixture into 1-in. balls. Place in a 13x9-in. baking dish coated with cooking spray., In a small saucepan, combine sauce ingredients. Bring to a boil. Pour over walnut balls. Bake, uncovered, at 350° for 25 minutes or until a thermometer reads 160°.

OLD-FASHIONED BLACK WALNUT COOKIES RECIPE
These old-fashioned black walnut cookies are made with butter and brown sugar. The cookies are dipped in granulated sugar before baking.

- Gather the ingredients. Heat the oven to 375 F.
- Grease a large baking sheet or line with parchment paper.
- In a mixing bowl with an electric mixer, cream the brown sugar and butter until light. Add egg and vanilla; beat well.
- In another bowl, combine the dry ingredients-flour, baking soda, and salt-and mix to blend well.
- Add the flour mixture to the creamed mixture along with the black walnuts; mix well.
- Shape the dough into small balls about the size of walnuts.
- Dip the cookie balls in sugar. Place them on the prepared cookie sheet and press with the bottom of a glass to flatten slightly.
- Bake the cookies in the preheated oven for 12 to 15 minutes.

OLD-FASHIONED WALNUT BALLS RECIPE

- Gather the ingredients.
- Preheat oven to 375 F. Cream butter, sugar, and vanilla in a stand mixer or with an electric hand beater at medium speed until fluffy; the butter should approximately double in size and turn pale yellow.
- Sift flour and salt together.
- Add it in two or three batches to the creamed mixture; mix gently to incorporate it between each addition. Stir in walnuts.
- Pinch a walnut-size chunk of dough off, roll it into a ball, and place it on an ungreased cookie sheet. Repeat with remaining dough, leaving about 1 inch of space between each ball.
- Bake cookies for 12 to 15 minutes. Transfer walnut balls from cookie sheet to a wire rack using a spatula. Cool for 10 to 15 minutes.
- Roll cooled cookies in sifted confectioners sugar.

- Blend together butter, flour, white sugar, salt, and vanilla. Add black walnuts and mix well.

- Using a good quality chefs knife carefully chop walnuts until 2 cups is achieved. Finely chopped walnuts can also be purchased at the grocery store.
- Preheat oven to 375℉.
- Using a stand mixer or hand held mixer cream together butter, sugar and vanilla until light and fluffy.
- In a separate sized mixing bowl measure and sift flour and salt. Mix well into butter mixture until a soft dough forms. Stir in walnuts.
- Using a teaspoon break apart pieces of dough and then form by rolling between clean hands.
- Bake on ungreased cookie sheet for 12- 15 mins or until lightly golden brown. Using a spatula, remove from cookie sheet and let cool slightly. The cooling helps to prevent crumbling when rolling in powdered sugar.
- Place powdered sugar onto a plate and while cookies are still warm roll in sugar. If desired, roll a second time for an additional coating.

BLACK WALNUT CHOCOLATE PIXIES
I found this cookie recipe in Lost Recipes magazine. The cookies are alittle crunchy on the outside and soft inside. Very good.

- 1. Microwave chocolate and butter in large bowl, stirring often, until melted and smooth, 1 to 3 minutes; let cool slightly. In separate bowl, whisk flour, walnuts, baking powder, and salt together.
- 2. Slowly whisk granulated sugar into cooled chocolate mixture until combined. whisk in eggs, one at a time until combined. Fold in flour mixture until just combined. Cover and refrigerate until firm, about 2 hours.
- 3. Adjust oven racks to upper-middle and lower-middle positions and heat oven to 300 degrees. Meanwhile, line two rimmed baking sheets with parchment paper. Spread confections' sugar in shallow dish. Working with 1 tablespoon of dough at a time, roll dough into balls, then roll balls in confectioners' sugar to coat.
- 4. Transfer balls to prepared sheets, spaced about 2 inches apart. Bake cookies until edges are set but centers are still soft and puffy, 18 to 20 minutes, swiching and rotating baking sheets halfway through baking. Let cookies cool on sheets for 10 minutes, then transfer to wire rack and let cool completely before serving. Repeat with remaining dough using cooled, freshly lined baking sheets.
- 5. The recipe was alittle vague but after reading it a few times I took it to mean that you bake it 9-10 minutes on lower rack and then switch it to upper rack to finish baking for 9-10 minutes. It turned out well any way.
