A very simple, all-day, slow cooker simmer for delicious black beans with a kick. This is a great base recipe with lots of room for interpretation.

2 (8 ounce) packages dry black beans
6 cups water
1 large onion, quartered
4 cloves garlic, crushed
½ tablespoon salt
1 pork bone
1 jalapeno pepper, minced, or more to taste
1 bay leaf

Steps:

  • Pour beans into a bowl and remove any debris. Rinse generously with water and strain.
  • Combine black beans, water, onion, garlic, salt, pork bone, jalapeno pepper, and bay leaf in a slow cooker.
  • Cover and cook on High, stirring at least once after 1 hour, until cooked down and beans are tender, 6 to 8 hours.

This is a classic southern US dish of black eyed peas and ham served over rice or even as a side dish. To dress this up, I added what I had in my fridge, bell peppers, celery, and bacon, delicious! I cooked the beans from dry the day before, and cooked chicken the day before as well for the broth.

3-4 c cooked ham, bite size pieces
1 onion, diced
3 can(s) or 6 cups cooked, black eyed peas, drained
2 3/4 c chicken broth or stock
3 clove garlic, minced
1/2 tsp cayenne pepper
salt and pepper as desired
cooked rice, for serving, if desired
300 g smoked bacon, chopped, optional
1 red bell pepper, diced, optional
1 green bell pepper, diced, optional
1 stalk(s) celery, diced, optional

Steps:

  • 1. Drain the beans and add to your slow cooker. I used cooked dry beans.
  • 2. Add remaining ingredients to your slow cooker. I added red and green bell peppers, celery, and bacon as variants as well as homemade chicken broth.
  • 3. Give the pot a stir then cover and set to Low setting for 4 to 6 hours but anything past 8 hours and the beans will be really soft.
  • 4. Stir the pot once an hour. Here it is at 4 hours, and it is perfect.
  • 5. Serve over rice for a main dish or serve as is without rice as a side dish. Enjoy.

This is a traditional Southern dish for bringing good luck into the New Year, consisting of black-eyed peas and rice. Eating Hoppin' John on New Year's Day is thought to bring a prosperous year filled with luck. The peas are symbolic of pennies or coins, and a coin is sometimes added to the pot or left under the dinner bowls. Greens along with this dish are supposed to also add to the wealth since they are the color of money. Eating this the day after represents frugality and savings. You are supposed to leave 3 peas to assure that the New Year will be filled with Luck, Fortune and Romance. Serve hot with corn bread.

1 cup dried black-eyed peas, sorted and rinsed
1 cube vegetable bouillon
¼ cup hot water
1 onion, chopped
1 clove garlic, minced
1 smoked ham hock
2 bunches collard greens, chopped
1 tablespoon dried oregano
1 tablespoon red pepper flakes
2 cups vegetable broth
5 cups water, or as needed to cover
1 cup long-grain white rice
salt and ground black pepper to taste

Steps:

  • Cover black-eyed peas with water in a large soup pot, bring to a boil, and boil for 2 minutes. Reduce heat to low and simmer peas for 1 hour. Drain.
  • Dissolve vegetable bouillon cube in 1/4 cup hot water in a small bowl; pour bouillon into slow cooker. Stir black-eyed peas, onion, garlic, ham hock, collard greens, oregano, red pepper flakes, and vegetable broth into the cooker. Add 5 cups of water or as needed to cover. Cook 5 hours on High. Stir rice into stew and cook 1 more hour.
  • Remove meat from ham hock, chop meat, and return to stew. Season with salt and black pepper.

8 oz chopped pancetta or cooked bacon
1 cup black rice, rinsed
1 15 oz. can black beans, rinsed
I roasted head of garlic
sea salt and freshly ground pepper to taste
2 cups boiling water

Steps:

  • Slow cooking method: Pour boiling water into slow cooker. Add black rice, black beans, pancetta, and garlic. Cook on high for about 3 to 3 1/2 hours until rice is cooked. Add salt & pepper to taste. Cooking in saucepan: Saute pancetta in saucepan until lightly browned. Add boiling water, rice , beans and roasted garlic. Cook until rice is done and flavors blended. Add salt and pepper to taste.

1 medium yellow onion, diced
1 rib celery, diced
1 medium red bell pepper, diced
2 cloves garlic, minced
1 smoked ham hock
32 ounces low-sodium chicken stock
1 bay leaf
1 to 1 1/2 cups long-grained white rice
Hot pepper sauce to taste, for garnish

Steps:

  • In a large (6 quart) slow cooker crock, combine the soaked beans, onion, celery, bell pepper, garlic, and ham hock.
  • Pour the chicken stock into the slow cooker crock and stir to combine the ingredients. Add the bay leaf and push it into the liquid until it's submerged.
  • Cover the slow cooker and cook on low for 7 to 8 hours, until beans are tender. Discard the bay leaf and the ham hock. The stew can also be cooked on high for 4 to 5 hours.
  • Before serving, prepare the rice as you would normally.
  • To serve, spoon some cooked white rice into a bowl and ladle Hoppin' John over the rice. Pass hot pepper sauce at the table for everyone to season to their liking.
