BEEF STIR FRY WITH HONEY AND BLACK PEPPER SAUCE



Beef Stir Fry with Honey and Black Pepper Sauce image

Recipe video above. Copycat of restaurant style Chinese Beef with Honey and Black Pepper Sauce. Very fast and easy to make - it's on the table in 15 minutes! The sauce is absolutely divine - sticky, sweet, salty and with a subtle burst of heat from the black pepper.

2 1/2 tbsp soy sauce ((Note 1))
3 tbsp honey
1 1/2 tbsp Oyster sauce ((sub Hoisin))
1 1/2 tbsp Chinese cooking wine (, Mirin or dry sherry (Note 2))
2 tbsp water
1 tsp coarsely crushed black pepper ((or 1/2 tsp normal ground black pepper))
2 tbsp peanut oil ((or vegetable or canola oil))
1 garlic clove (, finely minced)
1/2 onion (, peeled and sliced)
500g/1 lb thinly sliced tenderloin, flank, sirloin/Porterhouse/strip, (or any other cut of steak suitable for stir frying (Notes 3))

Steps:

  • Mix the Sauce ingredients in a bowl.
  • Heat the oil in a wok or large heavy based skillet over high heat until it is smoking.
  • Add the onion and garlic and cook for 1 minute or until the onion becomes translucent. Keep it moving so the garlic doesn't burn.
  • Add the beef and stir fry for 1 minute until just cooked to your liking, then remove into bowl.
  • Turn the heat down to medium high, pour in Sauce - it will start simmering very quickly! Let it cook for 1 minute or so until it becomes syrupy - the bubbles will be larger and caramel colour.
  • Add the beef and onion back into the wok, along with any juices pooled on the plate. Toss in the sauce until just warmed through - 1 minute at most. Don't overcook the beef - that would be tragic!
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice!

3 tablespoon Cornflour
2 large Bell peppers (1 red, 1 green)
1 medium Onion
4 tablespoon Soy sauce
1 tablespoon Brown Sugar
1 tablespoon Sesame oil
3 tablespoon Vegetable oil
2 cloves Garlic (minced)
1.5 teaspoon Ginger (paste)
1 teaspoon Black pepper (or to taste)
1.5 tablespoon Beef broth or Rice vinegar

Steps:

  • To make chinese pepper steak from scratch,Cut steak into thin strips, add a tablespoon of cornflour, soy sauce and salt. Mix till evenly coated and set aside. Marinate for 30 minutes if you have the time.joy.
  • Slice the bell peppers and onion in thin strips then set aside.
  • In a small bowl, add the soy sauce, beef broth, brown sugar, sesame oil, black pepper and remaining cornflour. Whisk to mix and set aside.
  • Place a wok on stove, add oil and bring to medium heat. When oil is heated, add in the marinated beef slices. Sear and brown both sides for few minutes.
  • Add in the bell peppers, onion, ginger and garlic. Stir fry for 2 minutes before adding the soy sauce mixture.
  • Taste and adjust seasoning if needed, stir till it thickens then take off the stove. Serve immediately and enjoy.

Here is an easy and delicious meal of a humble steak combined with freshly cracked black peppercorns sauce.

450 g beef top round steak
2 tablespoons black peppercorns, pounded using mortar and pestle
100 ml red wine
100 ml beef stock, from 1/2 cube
1/2 teaspoon Worcestershire sauce
1/2 teaspoon cornstarch, dissolved in 2 tsp water
2 tablespoons sour cream
2 tablespoons balsamic vinegar
2 tablespoons sunflower oil
1 tablespoon maple syrup or runny honey
2 garlic cloves, chopped
1 tablespoon peppercorn, pounded using mortar and pestle
fresh thyme leave

Steps:

  • For the marinade, mix well all ingredients. Place steaks in a resealable plastic bag, add marinade, close, shake to coat the steaks and leave to marinate for at least 2 hours.
  • Take the steaks out of the marinade and cook (without any oil) in a well-heated frying pan on medium high heat for about 2 minutes on each side. Place the cooked steaks on a plate and set aside.
  • Meanwhile, heat the saucepan used to cook the steaks. Add red wine and deglaze the pan. Simmer for a few seconds to allow the alcohol to evaporate.
  • Add remaining crushed black pepper, beef broth, liquid collected from the cooked steak, cream and Worcester sauce. Simmer for few minutes and thicken the sauce with cornstarch solution.
  • Arrange cooked steak on a plate with basmati rice. Ladle black pepper sauce over the steak and serve immediately.
  • Serve with plain Basmati rice and green salad.

Hei Jiao Niu Liu (黑椒牛柳), or Black Pepper Beef, is a fast, easy stir-fry made with beef, onions, and peppers seasoned with oyster sauce and loads of black pepper. My take on this Chinese classic features big juicy chunks of steak, which gives the dish more substance and a bold, beefy taste.

6 grams whole black peppercorns ((2 teaspoons))
350 grams beef tenderloin ((or other steak cut, cut into 3/4-inch cubes))
2 tablespoons oyster sauce
1 tablespoon Shaoxing wine
1 teaspoon soy sauce
1 teaspoon toasted sesame oil
1 teaspoon potato starch
1 tablespoon vegetable oil
140 grams onion ((~1 small onion, cut into 1/2-inch squares))
100 grams bell pepper ((1/2 red, 1/2 green))
12 grams garlic ((~2 large cloves, chopped))

Steps:

  • Put the black peppercorns in a mortar and use a pestle to crack the peppercorns coarsely. If you don't have a mortar and pestle, put the peppercorns in a freezer bag, and use a rolling pin to crush them.
  • In a bowl, whisk the oyster sauce, Shaoxing, soy sauce, sesame oil, and most of the black pepper (saving a little to garnish). Add the potato starch and mix that in until there are no lumps left. Stir the beef in, to coat evenly and let it marinate while you prepare the vegetables.
  • Once all the prep is done, heat a frying pan over medium-high heat until hot. Add the vegetable oil, and then use tongs to add the beef in a single layer. Try to leave as much of the marinade in the bowl as possible.
  • Fry the beef on one side until golden brown, and then flip each piece and fry the second side until browned.
  • Dump the onions, bell pepper, and garlic into the pan and turn the heat to high. Stir-fry, tossing the contents of the pan periodically to ensure everything cooks evenly.
  • When the onions become translucent, add the remaining marinade and toss everything together until the black pepper beef is shiny and evenly coated with sauce.
  • Serve with rice and garnish with the remaining black pepper (to taste).

40 ml oil
500 g round steaks, cut into thin strips
1 onion, sliced into wedges
300 g sugar snap peas
40 ml honey
40 ml soy sauce
40 ml oyster sauce
1 teaspoon of freshly cracked black pepper (the original recipe called for 3 but we found it too peppery)

Steps:

  • Heat a wok until very hot, then add half the oil, swirling to coat.
  • Fry the beef in batches for about 3 minutes each batch or until browned.
  • Reheat the wok, and add the rest of the oil, and stir fry the onion and peas until softened.
  • Remove.
  • Add the honey, sauces and pepper, bring to the boil and simmer for about 3 minutes to reduce and thicken a little.
  • Return the meat and vegetables to the wok, and toss for about 3 minutes to heat and combine.
  • Serve at once over rice.
