BLACK PEPPER PARMESAN POPCORN RECIPE

Spice things up a bit with this homemade stovetop black pepper parmesan popcorn. It only requires a few ingredients and less than 10 minute to make!!

3 tbsp vegetable oil (OR canola oil OR coconut oil)
1/2 cup popcorn kernels
3 tbsp butter (melted)
1/4 tsp garlic powder
1/4 tsp salt (optional*)
1/2 tsp black pepper
1/4 cup parmesan cheese

Steps:

  • Set a large Dutch-oven or large pot over medium-high heat, add the oil. Place 3 popcorn kernels in the oil. When the first kernel pops, add the remaining kernels and cover. Remove from the heat for 15-20 seconds, then return to the heat and shake every 1-2 minutes. After about 3-4 minutes all of the kernels should pop. Remove the lid and pour the popcorn into a large bowl.
  • In a small mixing bowl, combine the melted butter, garlic, salt, and pepper. Drizzle over the popcorn and stir to combine. Sprinkle in the parmesan cheese, tossing as you go. Enjoy immediately.

1/2 cup popcorn
1/4 cup vegetable oil (I like olive oil or corn oil)
2 tablespoons hot melted butter
1 -2 teaspoon coarse black pepper
3/4 cup grated parmigiano-reggiano cheese

Steps:

  • Combine the popcorn and oil in a large kettle or pot with a tight fitting lid and place over medium high heat. when the corn begins to pop, shake the pot constantly. When the popping slows, remove the pot from the heat and pour the butter over the top. Combine the spices and toss with the popped corn. This is also good with a little nutritional yeast added. Yum!

3 cups popped popcorn, recipe follows
1/4 cup basil infused olive oil
2 tablespoons grey salt
Freshly ground black pepper
1/2 cup freshly grated Parmesan
1/4 cup olive oil
1 1/2 cups popcorn

Steps:

  • Drizzle basil infused oil over the popcorn. Grind grey salt in a spice grinder (a coffee grinder also works well for this purpose) until fine ¿ it will stick to the popcorn more evenly if the crystals are smaller. Add black pepper, then grate parmesan over the popcorn.;
  • Preheat a large cast iron Dutch oven on a stovetop over high heat. Add olive oil, then popcorn. As soon as it begins to pop, cover and turn down to medium heat until sound of popping stops, about 3 to 4 minutes.

SAVORY PARMESAN POPCORN

1/2 cup grated Parmesan
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/2 teaspoon fine sea salt
1/4 teaspoon ground turmeric
1/2 cup popping corn
3 tablespoons unsalted butter, melted
1 tablespoon olive oil

Steps:

  • Combine the Parmesan, garlic salt, paprika, pepper, salt and turmeric in a small bowl. Combine the popping corn and melted butter in a large pot. Cover and cook over medium heat, shaking the pot with increasing frequency as the popping increases. Continue until the popping is reduced to a couple of seconds between pops, then remove from the heat and transfer the popcorn to a large brown bag. Drizzle the popcorn with the olive oil and sprinkle about 3 tablespoons of the seasoning into the bag. Shake up the popcorn. Sprinkle with additional seasoning to taste and serve warm.

VEGAN 'CHEESY' POPCORN

Using more oil than popcorn kernels - a technique developed by Jessica Koslow, the chef and owner of Sqirl in Los Angeles - gives you an ultracrunchy popcorn with rich flavor. Ms. Koslow prefers grapeseed oil for its high smoke point and clean taste. But to mix things up, you can combine grapeseed oil with a more flavorful oil such as virgin coconut, olive oil, butter, duck fat, or bacon grease. Use 1/4 cup of each. After popping, you can toss the kernels with just salt (they won't need any more fat by way of butter) or a flavorful spice mix. Here, they're tossed with nutritional yeast, which gives them a Parmesan-like umami flavor, along with a little rosemary or kelp powder for depth.
