EASY MUSHROOM SOUP



Easy Mushroom Soup image

This simple, delicious recipe is made without cream or milk. A mix of butter and flour thicken chicken stock to create a velvety soup without being too heavy. The combination of crimini and white button mushrooms add earthy notes that work well with the rich broth.

3 tablespoons unsalted butter
2 garlic cloves, minced
1 shallot, finely chopped
4 ounces crimini mushrooms, chopped
4 ounces white button mushrooms, chopped
2 tablespoons all-purpose flour
3 cups chicken stock
¼ teaspoon fine sea salt, or to taste
¼ teaspoon ground black pepper, or to taste
Sliced sautéed mushrooms for garnish, optional
Chopped parsley for garnish, optional

Steps:

  • Melt 2 tablespoons of the butter in a large pot such as a Dutch oven over medium-high heat. Add the garlic and shallot, cook for 1 minute, until they begin to soften. Add the mushrooms and cook for about 3 minutes, until tender and browned. Transfer all the contents of the pot to a bowl.
  • Add the remaining 1 tablespoon of butter to the pot. Once melted, sprinkle in the flour and whisk it quickly into a paste. Reduce the heat to medium. Add the stock a little at a time, whisking out the clumps between each addition.
  • Increase the heat back to medium-high and allow the soup to simmer well for 3 minutes. Add the mushrooms back to the pot and continue to cook for 2 more minutes. The stock will thicken slightly to be somewhat creamy.
  • Let cook for 3 to 4 minutes, then ladle into bowls. Garnish with mushrooms and parsley, if desired.

I had the idea for the recipe while reading Dr. Neil Fuhrman's book 'Eat to Live,' where he suggested making your own tomato paste with tomatoes, garlic, and onions; I figured that'd make an excellent soup base! 7 tomatoes, or more to taste
1 sweet onion, chopped
5 cloves garlic, minced
2 tablespoons dried basil
1 tablespoon chives
1 pinch grated orange zest
1 pinch grated lemon zest
2 potatoes, diced, or more to taste
4 crimini mushrooms, or more to taste
1 ½ cups cooked black beans, or to taste
2 teaspoons salt

Steps:

  • Puree tomatoes in a food processor.
  • Pour pureed tomatoes into a large pot and place over medium heat. Stir onion, garlic, basil, chives, orange zest, and lemon zest into the tomatoes; cook at a simmer until slightly frothy, 7 to 10 minutes.
  • Stir potatoes, mushrooms, black beans, and salt into the tomato mixture; continue simmering until the potatoes are tender, at least 30 minutes.

Chicken With Black Mushroom Soup image

10 Chinese dried black mushrooms
Water to soak mushrooms
1 whole chicken, preferably with feet, weighing 4 to 4 1/2 pounds
6 cups boiling water
1/4 cup rice wine or sake
4 slices fresh ginger, smashed lightly with a flat edge of a knife
1 teaspoon salt

Steps:

  • In a bowl, cover mushrooms with water and soak for 20 minutes.
  • Using a heavy knife, cut the chicken through the bones into 12 to 14 serving-size pieces. Place the chicken in a pot with water to cover.
  • Heat until boiling, and cook for 2 minutes. Drain into a colander and run under cold water.
  • Remove mushrooms from water, discard stems, and cut large caps into halves.
  • Combine the chicken, mushrooms, boiling water, rice wine, ginger and salt in a heavy pot that will fit inside a bigger pot.
  • Put several inches of water in the bigger pot, and boil. In the bottom of the bigger pot, place a rack, and put the pot holding the chicken on it.
  • Cover both the pot with the soup and the bigger pot and cook over medium heat for one and a half hours. Replenish the bigger pot with more boiling water as it runs low.
  • When the soup is cooked, skim the fat, remove ginger, and add salt to taste.

1 ounce dried cloud ear mushrooms
2 cups boiling water
cooking spray
1/4 cup chopped onion
1/4 cup sliced green onion
5 cups chicken broth
3 cups sliced cremini mushrooms
salt and pepper

Steps:

  • Place dried mushrooms in a bowl; pour boiling water over. Let stand until mushrooms are softened, about 15 minutes.
  • Drain, reserving liquid. Slice mushrooms, discarding tough stems from the shiitakes.
  • Spray a large saucepan with cooking spray; heat over medium heat until hot. Saute onions until tender, about 5 minutes.
  • Add sliced dried mushrooms, reserved liquid and broth; heat to boiling.
  • Reduce heat and simmer, covered for 20 minutes, adding cremini mushrooms in the last 10 minutes.
  • Season to taste with salt and pepper.

Simple, hearty, and fast weeknight dinner... and yeah, that good. Served with a bit of rice, sour cream, fresh herbs and veggies, and a touch of chipotles in adobo. This is a heart and belly warming meal for any wet or cold days!

1/2 lb mushrooms, sliced
2 tsp olive oil
1/4 cup onion, finely diced
2 cloves garlic, chopped
1/2 each red pepper, finely diced ((or a combination of red and green pepper))
1 1/2 cups mushroom stock
1/4 tsp cumin
1/4 tsp salt ((or to taste, depends on how much salt is in your stock and your beans))
2 cups cooked black beans ((a rinsed can of black beans makes this super fast))
2 cups cooked rice
1/2 each red pepper, finely diced ((or a combination of red and green pepper))
1/2 cup cilantro, chopped
1 each lime
1/2 cup sour cream ((Optional but highly recommended!))
1 tbsp chipotles in adobo ((Optional, basically however much you want to add to yours, my daughters abstain but that's their loss!))

Steps:

  • Slice your mushrooms. Dice your onions, bell peppers, and garlic, etc.
  • Heat a medium sized pot/pan over medium heat. Add olive oil and swirl to coat.
  • Add mushrooms to pan and sauté for 3 - 4 minutes, should be starting to release their delicious liquids.
  • Add onion and garlic, and sauté another 2 - 3 minutes (careful not to burn the garlic!)
  • Toss in red and green pepper and sauté 1 - 2 minutes.
  • Pour in stock, cumin and salt. Bring to a boil and reduce to simmer. Let simmer a couple minutes then add the black beans and let simmer a couple more minutes (about 5 - 6 minutes total).
  • Taste and adjust seasonings as necessary.
  • Scoop about a 1/2 cup of rice to each bowl, ladle delicious soup over top, add a dollop of sour cream, sprinkle with the fresh cilantro and peppers, squeeze a bit of lime over top, and (optionally) your chipotles in adobo! Enjoy!

An ultra-creamy mushroom soup without cream! Loaded with mushrooms, garlic, and fresh herbs it's a comforting and hearty soup without the extra calories and fat!

2 tbsp olive oil
1 small yellow onion (diced)
2 cloves garlic (crushed)
1 tbsp fresh thyme (chopped)
1 lb mushrooms (sliced)
2 tbsp all-purpose flour
4 cups vegetable stock (low-sodium)
¾ cup low-fat milk
½ tsp salt
¼ tsp black pepper
2 tbsp fresh parsley (chopped for serving)

Steps:

  • Heat oil in a large pot, sauté the diced onion for 3-4 minutes. Add the crushed garlic and chopped thyme. Stir for an additional 3 minutes.
  • Add the sliced mushrooms and sauté for 5-8 minutes until softened and cooked through.
  • Add the flour, stir and cook for 3-4 minutes.
  • Pour in the vegetable stock, stir and bring to a boil. Reduce heat to a simmer and cook for 10 minutes.
  • Remove ½ of the soup and blend in a blender until smooth. Return the blended soup to the pot, add the milk and seasonings, stir through and bring to a simmer.
  • Taste the soup for seasoning. Add more salt if needed. Top with one tablespoon of chopped parsley.
  • Serve with a sprinkling of cracked pepper.

  • Cook the rice according to the package directions. Remove from the heat and set it aside to cool.
  • Soak the dried mushrooms in 1 cup of hot water for 20 to 30 minutes, until soft. Strain the soaking liquid through a coffee filter to remove any grit and reserve the liquid, along with the reconstituted mushrooms, until needed.

Using an immersion blender, puree the soup until completely smooth (or use a standing blender, working in batches and return the pureed soup to the pot). Stir in the mascarpone and the cooked rice.
