My family loves this recipe, it's the best chocolate cake ever!

2 cups white sugar
1 ¾ cups all-purpose flour, unsifted
¾ cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk
½ cup vegetable oil
½ cup strong black coffee
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • Combine sugar, flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
  • Mix buttermilk, oil, coffee, eggs, and vanilla extract together in a bowl. Pour over sugar mixture in the large bowl; beat with an electric mixer on medium speed until batter is smooth and thin, about 2 minutes. Pour batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35 minutes.

2 ounces almond milk (unsweetened)
1 cup coffee ice cubes (or regular ice)
1/2 teaspoon cinnamon (or your favorite spice)

Steps:

  • Brew your coffee and let it cool for 5 minutes.
  • Fill a cup with ice. We like to use coffee ice to avoid watering down the drink, but regular ice is delicious as well!
  • Pour the coffee over the ice and stir to help it cool.
  • Add an ounce or two of almond milk. Then sprinkle on a little cinnamon (or your favorite spices) and enjoy your healthy iced coffee!

Black Magic Coffee, Sugar Free-Fat Free image

This is my own creation. I made it for a regular coffee mug but for a "Grande" simply double everything and use a tall latte mug. If you want to go all out for guests or your sweetie leave room at the top of the mug for a wallop (forget the dollop!) of whipped cream and sprinkle it with shaved bittersweet chocolate and finely crushed hazelnuts. Time for making this is after the coffee is brewed.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans or one 9x13 inch pan.
  • In large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Make a well in the center.
  • Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin. Pour into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until toothpick inserted into center of cake comes out clean. Cool for 10 minutes, then remove from pans and finish cooling on a wire rack. Fill and frost as desired.

1/4 cup Splenda granular, sugar substitute
1/2 cup sugar-free whipped topping or 1/2 cup fat-free half-and-half
chocolate syrup (optional)

Steps:

  • Dissolve Splenda in coffee and pour into an 8 x 8 inch pan. Add a little chocolate for a mocha flavor.
  • Add whipped topping and whisk.
  • Freeze 2 hours.
  • Scrape with a fork until fluffy. Freeze one more hour and scrape again. Repeat as necessary to keep it fluffy.
  • Store in freezer until ready to serve. Fluff with a fork again before serving.
  • Serve with more whipped topping if desired and a little chocolate sauce drizzled on top.
