13 oz AP flour
6 oz unsalted butter (room temperature)
16 oz granulated sugar
4 oz black cocoa powder (we used Guittard 100% Cocoa Noir)
2 ounces melted chocolate
4 large eggs (room temperature)
1 tsp salt
2 tsp baking powder
1 teaspoons baking soda
4 oz strong coffee (hot)
8 oz buttermilk (warm (110ºF))
4 ounces vegetable oil
1 tbsp vanilla extract
8 ounces unsalted butter (room temperature)
8 ounces vegetable shortening
24 ounces sifted powdered sugar
2 Tablespoon clear vanilla extract
1/2 teaspoon salt
4 Tablespoons milk (or water)
2 teaspoons food coloring (optional)

Steps:

  • NOTE: If you use a cocoa powder that is different than listed, your cake will not be as dark. You can supplement the color with 1 tsp of super black food coloring
  • Adjust an oven rack to the middle position and preheat to 350ºF/176ºC.
  • Grease three 8" cake pans with cake goop.
  • Whisk together melted chocolate, cocoa powder, hot coffee, vanilla, and oil until combined (it will look lumpy). Then mix in the warm buttermilk and whisk until combined. Then set aside.
  • Add butter to stand mixer and beat at medium-high speed until smooth and shiny, about 30 seconds. Gradually sprinkle in the sugar, beat until mixture is fluffy and almost white, about 3-5 minutes. Add the eggs 1 at a time, mixing in fully before adding the next egg.
  • Whisk the flour, baking powder, baking soda, and salt in a medium bowl.
  • With the mixer at the lowest speed, add about a third of the dry ingredients to the batter, followed immediately by about a third of the chocolate mixture, mix until ingredients are almost incorporated into the batter. Repeat the process 2 more times. When the batter appears blended, stop the mixer and scrape the sides of the bowl with a rubber spatula. Return the mixer to low speed, beat until the batter looks like satin, about 15 seconds longer.
  • Divide the batter evenly between the prepared pans. Smooth the tops with a rubber spatula. Bake cakes until they feel firm in the center and a toothpick comes out clean or with just a few crumbs on it, about 30-35 minutes.Transfer pans to a wire rack and let cool for 10 minutes. Invert cakes onto the rack and pop cakes out of pans. Cool completely before frosting.
  • Cream your butter until smooth with the whisk attachment (by hand or in the stand mixer is fine)
  • Add the vegetable shortening to the butter and cream until smooth
  • While mixing on low, start adding in your powdered sugar one cup at a time until it's all combined with the butter mixture
  • Add in your salt, vanilla and milk and whip on medium for 10-15 minutes until very light and fluffy
  • If your frosting is too thick, you can add in 1-2 more Tablespoons of water or milk to thin it down to your desired consistency.
  • You can now add in your desired food coloring if you prefer your frosting to be colored. I used electric pink, electric green and electric pink food coloring from americolor.com. Remember, the frosting color will deepen after 24 hours.

2 tsp instant espresso of coffee (5g)
1 cup buttermilk (240g)
1/2 cup vegetable oil (110g)

1 cup black cocoa powder, sifted (100g)

Steps:

  • Preheat the oven to 350 F/ 175 C. Line and grease three, eight-inch cake pans, or four, seven-inch pans.
  • Combine 2 cups all-purpose flour, 2 cups sugar, 3/4 cup black cocoa powder, 2 tsp baking powder, 1 1/2 tsp baking soda, and 1 tsp of salt in a large bowl. Whisk together until combined.
  • In a separate, medium-sized bowl, add 1 cup of hot water and 2 tsp instant espresso or coffee. Stir until dissolved.
  • Add in 1 cup buttermilk, 1/2 cup oil, 2 eggs and 2 tsp vanilla extract into the instant espresso mixture. Give the mixture a quick stir to combine the ingredients.
  • Pour the wet ingredients into the dry ingredients. Mix by hand until fully incorporated. The batter will be on the thin side, but that's the consistency you're after!
  • Divide the batter evenly between the cake pans, and bake for about 24-27 minutes. I like to use a kitchen scale to weigh the pans. It makes sure each pan has the exact same amount of batter and helps the cake layers bake up to be the same height.
  • Remove the cake layers from the oven and let them cool in the pans for about 10 minutes. Gently run an offset spatula around the rim of the cake pans to loosen them, then flip them into wire racks to finish cooling.
  • Once cooled, use a serrated knife to level the top of each cake layer. If you make these in advance, wrap and freeze them at this point.
  • Beat the butter on a medium speed for 30 seconds with a paddle attachment until smooth.
  • Add in the sifted black cocoa, vanilla extract, and salt, and mix on low until the ingredients are fully incorporated.
  • Slowly mix in the powdered sugar. Halfway through, add in the heavy cream to make the frosting easier to mix.
  • Mix in the cooled, melted dark chocolate on a low speed until the ingredients are fully incorporated and the desired consistency is reached.
  • If you want the buttercream to be a darker shade of black, min in a squirt of black gel food coloring. Then cover with plastic wrap to prevent crusting and set aside.
  • Stack and frost cake layers on a greaseproof cake board, using a dab of frosting to help stick the first cake layer to the board.
  • Add an even layer of buttercream between each cake layer with a large offset spatula.
  • Add a thin coat of frosting around the cake, fully covering the cake layers.
  • Smooth using a bench scraper, then chill the cake in the fridge (30 minutes) or freezer (10 minutes) until the frosting is firm to the touch.
  • Add a second, thicker layer of frosting to the cake, and smooth using a bench scraper. Then decorate as desired and enjoy!

Steps:

Steps:

  • Preheat oven to 350°F (180°C). Spray 3 (9-inch) round cake pans with baking spray with flour.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine flour, sugars, cocoa, baking soda, baking powder, and salt. In a medium bowl, whisk together coffee, oil, and eggs. Add coffee mixture to flour mixture, and beat at medium speed until smooth. Stir in sour cream and vanilla until combined. Pour batter into prepared pans.

  • Pipe a ring of Sweet Cream Cheese Frosting around inside edge of bottom cake layer to create a border. Fill center with ⅛ cup (30 grams) Caramel. Repeat with remaining cake layers and Caramel. Spread a thin layer of frosting on top and sides of cake. Spread remaining frosting on top of cake, and swirl with a spatula. Top with reserved cake crumbs. Store cake, covered, in refrigerator.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat cream cheese and butter at medium speed until creamy. Reduce mixer speed to low. Add confectioners' sugar, 1 cup (120 grams) at a time, beating until smooth. Beat in cream, 1 tablespoon (15 grams) at a time, until frosting reaches a spreadable consistency. Beat in vanilla. Refrigerate leftover frosting for up to 2 weeks, or freeze for up to 3 months.
  • In a large heavy saucepan, place sugar, ¼ cup (60 grams) water, and corn syrup; swirl to combine. Cook over medium-high heat, without stirring, until mixture is amber colored, 10 to 14 minutes. Remove from heat. Add butter, stirring until melted (mixture will foam).
  • In a microwave-safe bowl, heat cream on high until warm, 30 to 40 seconds. Slowly add cream to caramel mixture, whisking until smooth. (Mixture will foam). Stir in salt. Let cool completely. Store Caramel in an airtight container in refrigerator until ready to use; it is much easier to work with cold.
  • Store remaining Caramel in an airtight container in refrigerator for up to 2 months.

1 cup hot strong brewed coffee
1 pinch cayenne
1/2 cup vegetable oil

Butter for greasing the pans
Two parchment circles, cut the size of the bottom of your cake pans
Cocoa for dusting the pans
1 cup dark cocoa (we used Hershey's Special Dark Cocoa to get that deep dark color)
4 ½ cups confectioners' sugar
1 ½ sticks butter, softened
½ cup buttermilk
2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, dissolve cocoa powder and cayenne with hot brewed coffee and set aside.
  • In the bowl of a stand mixer with paddle attachment, cream oil and sugar until well combined.
  • Add eggs and beat until light and creamy, about 1-2 minutes. This process beats air into the mixture. Scrape paddle and bowl and beat once.
  • Slowly add in coffee/cocoa mixture, buttermilk and vanilla and beat until batter is smooth. Scrape paddle and bowl and beat once.
  • In a separate bowl, sift flour, salt, baking soda and baking powder. Add dry ingredients to wet and beat on low speed to incorporate. Scrape down bowl and mix just until all ingredients are combined, do not over mix once flour is in.
  • Butter the bottom and sides of two 9-inch cake pans and place a round parchment circle in each. Butter the top of the parchment then sprinkle the whole inside of the parchment and pan with cocoa powder, shaking out excess. Pour batter evenly between two pans and place in center of oven. (note, aluminum baking pans are by far, the best for baking cakes. Non-stick and dark colored pans can change the cake by browning it more than it needs to)
  • Bake 30-35 minutes or until a tooth pick inserted into the center comes out clean. Depending on your oven, you may need to rotate cake pans half way through. During our baking, one cake was done in 30 minutes and the second in 32 minutes. Do not over bake.
  • Cool pans on wire racks for ten minutes then carefully invert out of pan onto rack to cool further.
  • Sift cocoa powder with confectioner's sugar in a large bowl. In the bowl of a stand mixer or hand mixer, cream butter until smooth. Add sugar and cocoa powder mixture along with buttermilk and vanilla and beat until smooth and creamy. Add additional buttermilk or whole milk if frosting is too thick.
  • Place a small dollop of frosting on a cake dish to hold the cake from sliding and place one cake on the frosting. Frost the top of that layer. Place the second cake on the first and frost the entire cake, top and sides.

4 ounces semisweet chocolate, finely chopped
3 cups all-purpose flour (see Cook's Note)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1 3/4 cups granulated sugar
2 sticks (1 cup) unsalted butter, at room temperature
1/4 cup canola oil
1 tablespoon pure vanilla extract
3 large eggs, at room temperature
1 1/2 cups whole milk
1 stick (8 tablespoons) unsalted butter, at room temperature
2/3 cup cocoa powder
1/4 cup heavy cream, plus more if needed (see Cook's Note)
2 teaspoons pure vanilla extract
1/2 teaspoon kosher salt
2 3/4 cups confectioners' sugar, plus more if needed (see Cook's Note)

Steps:

  • For the cake: Position an oven rack in the middle of the oven and preheat to 350 degrees F. Spray a 9-by-13-inch baking pan with cooking spray and line the bottom with parchment.
  • Place the chocolate in a medium microwave-safe bowl and microwave in 20-second intervals, stirring in between, until the chocolate is fully melted. Set aside.
  • Whisk together the flour, baking powder, baking soda and salt in a medium bowl and set aside.
  • Beat the granulated sugar, butter and oil in a large bowl with an electric mixer on medium-high speed until fluffy and pale, about 4 minutes. Reduce the mixer speed to low and add the vanilla and then the eggs one at a time, scraping down the sides of the bowl with a rubber spatula and mixing well after each addition. Add one-third of the flour mixture and beat on low speed until just combined. Add half of the milk and beat until combined. Repeat alternating additions of the flour mixture and milk, scraping down the sides of the bowl after each and beating until the last addition of flour is fully incorporated.
  • Transfer one-quarter of the batter to the bowl with the melted chocolate and stir until the chocolate is evenly incorporated.
  • Pour half of the remaining vanilla batter into the prepared cake pan and smooth out to the edges with an offset spatula. Scoop large spoonfuls of the chocolate batter on top of the vanilla batter and then pour the remaining vanilla batter on top. Using a skewer or butter knife, carefully swirl the chocolate batter into the vanilla batter to create a marbled effect.
  • Bake, rotating the pan halfway through, until a toothpick inserted into the center of the cake comes out clean, about 35 minutes. The top of the cake should be springy to the touch and the vanilla spots should be lightly golden. Cool the cake in the pan for 10 minutes, then use a paring knife to loosen the sides of the cake from the pan and invert onto a wire rack to cool completely before frosting.
  • For the frosting: Beat the butter in a medium bowl with an electric mixer on medium-high speed until smooth and creamy, about 3 minutes. Add the cocoa powder, cream, vanilla, salt and 1 1/2 cups of the confectioners' sugar and mix on low speed until fully incorporated. With the mixer still on low, gradually add the remaining confectioners' sugar and mix well. Increase the mixer speed to medium high and beat until the frosting is light and fluffy, about 2 minutes; the frosting will lighten in color as air is incorporated. (See Cook's Note.)
  • Using an offset spatula, spread the frosting in a thick, swooping layer all over the top of the cooled cake.

  • Make the cake: Preheat oven to 300°F. and grease two 9- or 10-inch by 2-inch round cake pans with unsalted butter or nonstick spray. Line bottoms with rounds of parchment paper. Finely chop chocolate and in a bowl combine with hot coffee. Let mixture stand, stirring occasionally, until chocolate is melted and mixture is smooth.
  • Into a large bowl sift together sugar, flour, cocoa powder, baking soda, baking powder, and salt. In another large bowl with an electric mixer, beat eggs until thickened slightly and lemon colored (about 3 minutes with a standing mixer or 5 minutes with a hand-held mixer). Slowly add oil, buttermilk, vanilla, and melted chocolate mixture to eggs, beating until combined well. Add sugar mixture and beat on medium speed until just combined. Divide batter between pans (being sure not to fill pans higher than 2/3 full—they will overflow if you do; it’s not worth it) and bake in the middle of oven until a tester inserted in center comes out clean, 1 hour to 1 hour and 10 minutes.
  • Meanwhile, make the icing: Because several commenters have had trouble, with the icing, I am suggesting you use a double boiler. Once it has melted, stir in the confectioners’ sugar, whisking until smooth. Stir in the eggs a little at a time, whisking vigorously after each addition — a flat-bottomed whisk is good for this. (I use a whisk until the ingredients are blended and then switch to a heat-proof spatula.) Cook over low to medium-low until thick. Stir in the butter one tablespoon at a time. Set aside to cool.   • Cool layers completely in pans on racks. Run a thin knife around edges of pans and invert layers onto racks. Remove parchment paper. Cake layers may be made 1 day ahead and kept, wrapped well in plastic wrap, at room temperature.
