ROASTED GARLIC STUFFED STEAK WITH GARLIC MASHERS AND BALSAMIC CREAM SAUCE(VERY EASY)

- Marinate the steaks overnight in olive oil, sea salt and fresh cracked pepper.
- You can utilize any fresh herbs you have in your garden or local market such as rosemary.
- Take the steaks out and let them rest about an hour before you start to work with them.
- In the meantime, fire up the oven to 350 degrees F.
- Take your garlic bulbs and slice them in half diagonally.
- Season with olive oil and sea salt.
- Roast on a pan in the oven for about 15 minutes or until the garlic is nice and golden brown and your house smells heavenly.
- Take out and set aside.
- Heat your saute pan with some olive oil and throw in about 6 cloves of fresh chopped garlic when hot.
- Add spinach and saute until spinach is just wilted.
- Season with salt and pepper.
- Chop up the sun-dried tomatoes and toss with the spinach.
- When the spinach has cooled, throw in the brie and the roasted garlic.
- You can easily pull the roasted garlic from the'husk' by using a toothpick to pull it out.
- Mix together very well!
- Season with salt and pepper.
- You can also throw in a teaspoon or so of fresh rosemary at this point.
- Set aside.
- Take your steaks and cut a slit into the side of them, just as you would with stuffing pork chops.
- Carefully stuff the steaks with your roasted garlic stuffing.
- Throw those guys on the BBQ for about 3-4 minutes per side pending your guests preference.
- I serve these steaks over garlic mashers which I usually just throw in an extra bulb of garlic to roast when making the stuffing and mash it all up with some fresh potatoes, butter and cream.
- A little parsley to garnish.
- For the sauce, take 4 tablespoons of butter and melt in a saucepan over low heat.
- Add about 6 cloves of fresh chopped garlic, 1/4 cup of cream and 4 tablespoons of good quality balsamic vinegar.
- Throw in a sprig of fresh rosemary and reduce the sauce by about 1/3.
- Take out the rosemary.
- To plate, place lean against a heap of the garlic mashers and drizzle the sauce around the plate and over the potatoes.
- Garnish with fresh rosemary.
- It is excellent to have a nice fresh loaf of bread to serve with this.
- I also BBQ up some fresh local corn on the grill to accompany this meal.
- It is a fairly easy and gourmet meal to prepare.
- You can even make the stuffing the night before.
- Enjoy!

MURPHY STEAKS
This is a very simple, quick, delicious recipe for garlic-stuffed steaks. We use a lot of garlic! Serve with baked potatoes and a green salad.

- Separate garlic bulb into cloves, and peel. Cut into lengthwise strips.
- Using a sharp knife, punch holes into steak. Stuff holes with garlic strips. Cover, and refrigerate for at least 4 hours.
- Preheat grill for hot heat.
- Lightly oil grate. Place stuffed steaks on hot grill, garlic side up. Cook for 4 to 5 minutes, turn, and season with salt and pepper. Continue cooking until done, another 4 to 5 minutes.

- Preheat grill to medium direct heat.
- Saute garlic in olive oil until hot but not browned. Remove from heat and stir in parsley, green onions, breadcrumbs and basil. Set aside.
- With a sharp knife cut the steak horizontally to form a pocket. Fill with garlic mixture. Stick toothpicks through the cut side to seal the hole. Brush the steak with the rest of the olive oil. Sprinkle with pepper.
- Grill the steak, covered, 5 to 8 minutes per side or to desired doneness. Cut into servings.

I moved from the Midwest to California just as I started to get interested in the culinary arts. Ironically, I moved to Gilroy California: home of the Garlic Festival! Ever since, I have been incorporating garlic into nearly every dish! The following recipe I created one year when we had a bunch of hungry pilots who flew in just for the Garlic Festival. I thought I would make it an especially memorable culinary experience for them!

OLIVE-STUFFED SKIRT STEAKS WITH BLACK BEAN SAUCE

- Mix the garlic paste in a bowl with the ground annato seeds. Blend in 2 tablespoons of the olive oil until smooth paste is formed. Add the 1/2 teaspoon of salt. Spread the paste evenly over the skirt steaks, making sure that all sides are painted. Marinate the steaks and refrigerate for at least 8 hours.
- Place the remaining tablespoon of olive oil in a very large, heavy saucepan or heavy dutch oven. Over medium high heat, add the minced onion and the chopped green pepper. Saute for about 5 minutes, stirring, or until the onions and peppers are just starting to brown. Turn heat to low. Add the ground cumin and stir well. Saute for 1 minute. Turn heat to high and add the black turtle beans. Stir well. Add 3 cups of water and bring to the boil as quickly as possible. Reduce heat to a very slow simmer and cook, partially covered, until the black beans are just tender. This will take no more than an hour and 15 minutes. Strain the beans, reserving both the beans and the bean stock. Season the bean stock with salt and pepper; you should have about 1 cup.
- When ready to serve, prepare a hot charcoal fire. Place the skirt steaks on the fire and cook, turning once, until crusty on the outside, rare on the inside (about 6 minutes). Alternatively, you could sear the steaks in a heavy, cast-iron skillet that has been heated for 10 minutes over very high heat. When steaks are done, using a very sharp knife, cut each steak horizontally, leaving the steaks attached along one long side (this is like butterflying them).
- Stuff the steaks: Lay out 2 tablespoons of finely chopped parsley along one flap of each steak. Pit and halve the olives and lay out 4 olives over the parsley on each steak. Sprinkle with the dried oregano. Finally, divide the shredded lettuce among the four steaks, placing the shreds over the olives and parsley. Cover the stuffing with the upper flap of skirt steak.
- With a cheese cutter, cut the Monterey Jack into 24 thin strips, each one about 1 1/2" by 4". Overlap 6 slices of the cheese over each stuffed skirt steak, placing the long side of the cheese perpendicular to the long side of the steak. Place each steak on an oven-proof dinner plate and place the plates under a broiler for about 30 seconds, or until the cheese has melted.
- Finish the sauce: In a clean saucepan, melt the butter over medium-high heat. Add the flour and cook for 2 minutes, stirring, until the roux has begun to darken. Add 1 cup of the reserved bean stock, stirring well to blend. Bring to the boil and add 2 tablespoons of the reserved black beans (serve the rest of the beans as a side dish, or reserve for another use). Season well with salt and pepper.
- Divide the sauce among the four dinner plates; each plate should have sauce on two sides of the steak. Garnish the melted cheese and the sauce with a little finely chopped parsley.
CROCK POT STUFFED STEAK
This is a tried and true recipe for my family. I've been making this for many years. I got the recipe from my mother-in-law. You could also use flank steak in place of the round steak for this recipe.

- Pound the salt, garlic powder and black pepper into the steak.
- Lay the stuffing on top of the steak and roll up jelly-roll style.
- Place toothpicks in steak to hold in place.
- Place the steak in the crock pot.
- Mix the cream of mushroom soup, dry onion soup mix and water in bowl until smooth.
- Pour over the steak in the crock pot.
- Cook on low for about 6 hours.
- Thicken the broth for gravy if you like.
- Serve with mashed potatoes, if desired.
- Slice the steak into serving pieces.

- In a sm. skillet, heat oil & butter. Add scallions & sauté till soft. Stir in black garlic & panko breadcrumbs; remove from heat & let cool. Lay steaks on cutting board facing left to right with fat cap to the back. With sharp knife, make a sm. incision on the side & slice left to right making a pocket while making sure not to cut through the top or the back. Spoon stuffing into pocket, then press down on steak to make flat again. Grill over med-high heat to desired temp.
