I have been looking for a good Russian Black Bread recipe. This one is the closest I have come. The vinegar adds a bit of a bite, but believe me, with cheese it is marvelous.

1 ½ cups water
2 tablespoons cider vinegar
2 ½ cups bread flour
1 cup rye flour
1 teaspoon salt
2 tablespoons margarine
2 tablespoons dark corn syrup
1 tablespoon brown sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon instant coffee granules
1 tablespoon caraway seed
¼ teaspoon fennel seed
2 teaspoons active dry yeast

Steps:

  • Place ingredients into the bread machine in order suggested by the manufacturer.
  • Use the whole wheat, regular crust setting.
  • After the baking cycle ends, remove bread from pan, place on a cake rack, and allow to cool for 1 hour before slicing.

1 1/2 cup bread flour
1 cup rye flour
1 cup whole wheat flour
1 1/2 teaspoon salt
1 1/2 tablespoon oil
1/3 cup molasses
3 tablespoons cocoa powder
1 tablespoon caraway seeds
2 teaspoons yeast
1 teaspoon instant espresso powder, optional

Steps:

  • Use Light Crust setting on bread machine. Cool 1 hour before slicing. You can add espresso powder for flavor. Bread may also be done on dough cycle, then finished in the oven.

This comes straight out of my favorite bread book for my bread machine, Bread Machine Magic by Linda Rehberg and Lois Conway. We love this with my pork and sauerkraut and also with sliecs of pickled balogna and grainy mustard.

1 1/8 c water
1 1/2 c bread flour

1 1/2 Tbsp vegetable oil
1/3 c molasses
3 Tbsp cocoa powder
1 Tbsp caraway seeds
2 tsp active dry yeast

Steps:

  • 1. Place all ingredients in bread pan in the order given.
  • 2. Select Light crust if you have that option, and hit start.
  • 3. After baking, for my machine 2 1/2 hours, remove from pan, put on wire rack and allow to cool for 1 hour before slicing.

1 1/8 cups warm water
1/3 cup molasses
1 1/2 tablespoons canola oil
1 1/2 cups bread flour
1 cup rye flour
1 cup whole wheat flour
1 1/2 teaspoons salt
3 tablespoons cocoa powder
1 1/2 tablespoons caraway seeds
2 teaspoons active dry yeast

Steps:

  • Place all ingredients into your bread maker according to manufacture.
  • Select type to a light crust.
  • Press start.
  • Remembering to check while starting to knead.
  • If mixture is too dry add a tablespoon warm water at a time.
  • If mixture is too wet add flour again a little at a time.
  • Mixture should go into a ball form, and just soft and slightly sticky to the finger touch.
  • This goes for all types of breads when kneading.
  • This recipe makes a one and half pound loaf size.

  • In a large bowl or a large measuring cup, combine the water, yeast, salt, molasses, instant coffee, cocoa powder, caraway seeds until everything is evenly mixed.
  • In another large bowl, combine the whole wheat, rye and all purpose flours. Mix to combine. Pour in the liquid ingredients into the dry ingredients and use a wooden spoon to mix all the ingredients until they come together.
  • You can use your hands to mix the dough or use a standing mixer fitted with a dough hook attachment. You don’t need to knead the dough very long at all, just enough so that the flour is all well incorporated into the dough. The dough will stick slightly to your hands; that is normal. Don’t add too much flour, or the bread will be very dense. After the dough rises and then chills, it will be much easier to handle and won’t stick to your hands as much.
  • Cover the bowl with plastic wrap or a clean towel. Set aside to rise at room temperature for 2 hours.
