BLACK FOREST BARS

Cooking spray
1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 cup almond flour
1/2 teaspoon salt
2 sticks unsalted butter, at room temperature
2/3 cup sugar
1 cup cherry jam
3/4 cup dried cherries, chopped
2 tablespoons fresh lemon juice
1 1/2 teaspoons cornstarch
1/4 teaspoon pure almond extract
1 1/2 ounces white chocolate, chopped

Steps:

  • Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on 2 sides; coat with cooking spray. Whisk the all-purpose flour, cocoa powder, almond flour and salt in a medium bowl. Beat the butter and sugar in a large bowl with a mixer on medium speed until creamy, 2 to 3 minutes. Reduce the mixer speed to medium low; beat in the flour mixture until combined.
  • Press the dough evenly into the prepared baking dish in a thin layer with damp hands. Refrigerate until firm, about 30 minutes.
  • Preheat the oven to 350 degrees F. Bake until the chocolate layer is set, 25 to 30 minutes; let cool completely in the pan.
  • Meanwhile, combine the jam, dried cherries, lemon juice, cornstarch, almond extract and 1/4 cup water in a small saucepan. Bring to a simmer and cook, stirring occasionally, until the dried cherries soften and the mixture thickens, about 10 minutes. Spread over the chocolate layer and let cool completely.
  • Lift the bars out of the pan using the foil. Put the white chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring, until smooth; drizzle on the bars. Let stand until the chocolate sets, then cut into squares.

1 pouch (1 lb 1.5 oz) Betty Crocker™ double chocolate chunk cookie mix
1/4 cup vegetable oil
1 egg
1 can (21 oz) cherry pie filling
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
1 container (8 oz) frozen whipped topping, thawed

Steps:

  • Heat oven to 350°F. Lightly spray bottom and sides of 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, oil and egg until soft dough forms. On ungreased cookie sheet, drop 3 tablespoonfuls of dough 2 inches apart to make 3 cookies. Bake 12 to 13 minutes or until set. Cool 2 minutes; remove from cookie sheet to wire rack. Cool completely, about 15 minutes.
  • Meanwhile, press remaining cookie dough in bottom of sprayed pan. Reserve 1 cup cherry pie filling for topping; cover with plastic wrap and refrigerate. In large bowl, beat cream cheese, sugar and the remaining pie filling with electric mixer on medium speed until blended. Spread cream cheese mixture over crust in pan.
  • Bake 35 to 40 minutes or until set. Cool 30 minutes. Refrigerate about 1 hour or until chilled.
  • Spread whipped topping over cream cheese layer. Top with spoonfuls of the reserved cherry pie filling. Coarsely crumble baked cookies; sprinkle over top of bars. Refrigerate at least 1 hour for flavors to blend. To serve, cut into 5 rows by 4 rows. Store covered in refrigerator.

A delicious black forest cake with chocolate cake layers soaked in a cherry brandy syrup and covered in whipped cream, shaved chocolate, and cherries.

2 cups all-purpose flour (240g)
1 1/2 cup sugar (300g)
1 cup unsalted butter (227g, room temperature)
1 cup buttermilk (236mL)
1/2 cup cocoa powder (58g)
1/2 tsp baking powder (2g)
1/2 tsp baking soda (3g)
1 tsp salt (5g)
1 tbsp coffee (15mL)
2 eggs
2 egg yolks
1/2 cup water (120mL)
1/2 cup sugar (100g)
1/3 cup Kirsche
1 1/2 pints heavy cream (cold)
1/3 cup powdered sugar (plus more to taste.)
1 1/2 tbsp Kirsche (22mL)
2 cups cherries (plus more for decorating)
1 bittersweet chocolate

Steps:

  • Butter and flour 3 six inch cake pans. Preheat oven to 350F.
  • Sift the flour baking soda and powder, salt and cocoa powder.
  • Cream the butter and sugar together until light and fluffy. Beat the eggs and yolks in one at a time, then add in the coffee.
  • In three batches, mix in the flour mixture alternating with the buttermilk. Don't over-mix!
  • Divide batter evenly into pans and bake at 350f for about 25 - 30 minutes or until the centers are done. Allow to cool in pans for about 10 minutes and then invert onto a wire rack.
  • Add the water and sugar to a small pot then bring to a boil. Allow to boil for about a minute then remove from heat and stir in the cherry liqueur. Transfer to a bowl and allow to cool before using.
  • Add the cold cream, powdered sugar, and Kirsche to the bowl of your stand mixer fitted with a whisk attachment then beat on high until soft peaks form. I always chill my bowl and whisk for a fast whip but this is optional.
  • Melt about 1/4 cup or dark chocolate with two tablespoons of cream. Whisk together and set aside.
  • Wash, halve and pit about about 2 cups of cherries then transfer to a bowl and set aside.
  • Carefully shave the chocolate using a knife or vegetable peeler. and set aside.
  • Cover the first cake layer with whipped cream then press cherry halves all over the top. These cherry pieces are actually structural as they will hold the cake up, whipped cream is TOO soft for a three layer cake on it's own. Repeat the process with the other layers until the cake is assembled.
  • Give the cake a quick smooth and push in any errant cherries. Cover the cake with more whipped cream then smooth the top and side.
  • Gingerly press shaved chocolate onto the bottom half of the cake. You can also toss the chocolate at the cake as the frosting is quite soft and easy to disturb.
  • Pour or pipe ganache onto the cake's top then smooth out. Leave about an inch from the edge uncovered.
  • Transfer the remaining whipped cream to a piping bag fitted with a large closed star tip (849) Pipe dollops on the top then top with cherries.

1/2 cup sweetened shredded coconut
1/2 cup chopped walnuts, toasted
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed, divided
1 can (21 ounces) cherry pie filling
1-1/2 cups semisweet chocolate chips
2-1/2 cups cold milk
2 packages (3.4 ounces each) instant vanilla pudding mix
Chocolate curls, optional

Steps:

  • In a large bowl, combine flour and sugar; cut in butter until crumbly. Stir in coconut and walnuts. Press into an ungreased 13-in. x 9-in. baking dish. Bake at 350° for 15-18 minutes or until lightly browned. Cool on a wire rack., In a small bowl, beat cream cheese and confectioners' sugar until smooth. Fold in 1 cup whipped topping. Spread over crust. Top with pie filling; cover and chill., In a microwave, melt chocolate chips; stir until smooth. In a large bowl, whisk milk and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set. Whisk a small amount of pudding into melted chocolate. Return all to the pudding, whisking constantly. Pour over cherry filling. Chill for 2 hours or until set. , Just before serving, spread remaining whipped topping over dessert. Garnish with chocolate curls if desired.
