1 cup dried black-eyed peas
1 tablespoon olive oil
1 cup lean diced ham
1 onion, chopped
½ cup chopped green bell pepper
1 clove garlic, minced
2 cups water
2 bay leaves
2 pinches paprika, or more to taste
salt and ground black pepper to taste
3 cups cooked rice

Steps:

  • Place black-eyed peas into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
  • Heat olive oil in a pot over medium heat; cook and stir ham until browned, about 5 minutes. Add onion, green bell pepper, and garlic; saute until onion is tender, about 10 minutes. Add black-eyed peas, water, bay leaves, paprika, salt, and black pepper; cover pot with a lid and simmer until peas are tender, 40 to 50 minutes.
  • Remove bay leaves from black-eyed peas mixture and stir in rice. Simmer until all the liquid is evaporated, 5 to 10 more minutes.

½ cup chopped fresh cilantro
1 cup chopped roma (plum) tomatoes
1 (11 ounce) can shoepeg corn, drained
1 (15 ounce) can black-eyed peas, rinsed and drained
¼ cup red wine vinegar
¼ cup olive oil
1 teaspoon ground cumin
½ teaspoon minced garlic
salt and black pepper to taste

Steps:

  • Lightly mix together avocados, green onion, cilantro, tomatoes, corn, and black-eyed peas in a salad bowl until well combined.
  • Whisk together red wine vinegar, olive oil, cumin, and minced garlic in a bowl, and pour over the salad. Season to taste with salt and pepper, and lightly toss the salad again. Chill for 1 hour before serving, to blend the flavors.

¼ cup Olive oil
1½ teaspoons Honey (or Brown sugar for the vegan option)

2 teaspoons Cumin seeds (crushed)
1 teaspoon Chili flakes ((adjust to taste))
2 tablespoon Fresh Lemon juice

Steps:

  • In a medium serving bowl, combine all of the salsa ingredients.

This is a nice southern dish that you can use as a side dish or as main course. Smoked sausage or bacon can be used in place of the hamhocks if you so desire. Serve the beans and meat over rice. This is known as Southern Caviar and is eaten on New Year's Day. The black-eyed peas represent luck and the cabbage represents money. You can use fresh, frozen, or canned black-eyed peas in place of the dried beans, which shortens the cooking time for a quicker version of this recipe.

1 (1 lb) bag black-eyed peas
1 medium onion, chopped
2 garlic cloves
2 ham hocks or 1 ham bone, with meat still on it
1 teaspoon pepper
salt
1 stalk celery, chopped
1 teaspoon dried parsley
2 tablespoons olive oil or 2 tablespoons vegetable oil

Steps:

  • Wash the peas; place in large pot. Cover with water. Bring to boil. Once it reaches a boil, remove from heat, cover and let sit for 1 hour. After the 1 hour is up, drain the peas and set aside.
  • Add oil to pot; sauté the ham hock, onion, and celery until tender.
  • Add the garlic and sauté 2 minutes more.
  • Add peas cover with water about 1 to 11/2 inch over peas.
  • Add pepper, parsley, and about 1 teaspoon of salt to start with.
  • Bring to boil; stir, reduce heat and simmer about 2 hours, or until peas are tender. Keep checking every once in a while to see if more water is needed, and taste to see if more salt is needed.
  • Stir occasionally.
  • Water will turn into a gravy; serve over rice.

1 large onion, chopped
1 green bell pepper, chopped
1 celery rib, chopped

2 cups dried black-eyed peas, picked over and rinsed

15 ounces diced tomatoes
1 teaspoon dried oregano
1 teaspoon salt (or to taste)
1/8 teaspoon cayenne (or more to taste)
1 tablespoon hot sauce (or to taste)
1/2 teaspoon black pepper
1/2 teaspoon liquid smoke flavoring

Steps:

  • Soak the peas overnight in cold water. Drain.
  • Heat the oil in a heavy pot. Add onion, pepper, and celery, sweat over low heat until softened.
  • Stir in garlic, continue stirring until garlic releases it's aroma.
  • Add all remaining ingredients except liquid smoke to the pot, along with enough additional water to cover the peas by one inch. Cook until peas are completely tender, about 1 1/2 to 2 hours, adding more water as necessary. When they're tender, add the Liquid Smoke, cook for 5 more minutes, and serve over rice.

2 (30 ounce) cans black-eyed peas
1 (15 ounce) can coconut milk (I use lite)
1 1/2 cups rice (Jasmine is the best for this)
1 -1 3/4 cup water
1 teaspoon salt
2 ripe avocados, cut into large dice
2 large tomatoes or 4 small tomatoes, cut into large dice
1/2 small red onions or 1/2 small white onion, chopped
1/3 cup cilantro, chopped
1 lime (optional)
salt and pepper, to taste
1 1/2 cups cheddar cheese, grated

Steps:

  • Heat oil in a pan, add rice and toast over medium heat, stirring, until the rice begins to turn a light golden brown.
  • Add coconut milk, water and salt. You want twice the amount of liquid to rice. (2:1 ratio)
  • Cover and cook until rice is done, about 20 minutes.
  • Heat black eyed peas in a separate saucepan.
  • Combine vegetables and cilantro to create a coarse salsa.
  • Add lime juice, if using, and season with salt and pepper.
  • Scoop some rice onto your plate, top with the black eyed peas, grated cheese and salsa.
  • Dig in.

My friends and I love to share different recipes. My friend made these after watching "The Neely's on Foodnetwork" make theirs. Although we really dont cook with a lot of pork we decided to alter their recipe to fit our tastes. So this is a great recipe when ur trying to use up that extra turkey meat. This recipe does have alot of turkey in it so u can either omit a leg or add more beans.

1/2 red pepper
1/2 green pepper
1 onion
1 1/2 lbs black-eyed peas (overnight soaked,rinsed, and drained)
2 turkey legs (cooked, remove bones)
2 turkey wings, 9remove bones (cooked)
4 slices turkey bacon, cut in 1/2 slices
basil
sage
rosemary
thyme
2 teaspoons red pepper flakes
6 cups stock (chicken, turkey, or vegetable)
2 tablespoons butter

Steps:

  • In a large pot heat butter until it melts. Add bacon and brown. Add onion until translucent. Add legs and wings. Make sure the meat gets shredded. Add all seasonings. Cook for about 2 minutes until seasoning is coated to the meat. Add the stock and simmer for about 30 minutes until it comes to a boil. Add the peas, red and green peppers. Simmer on low, covered for about an hour and a half. I serve over rice.
