BLACK-EYED PEA DIP

Steps:
- Melt butter in a medium to large skillet over medium heat. Add onion and sauté until soft and translucent. Add garlic and continue to sauté for about 1 minute more. Stir in all other ingredients. Continue to cook and stir until cheese melts and mixture becomes smooth, about 5 minutes.
- Transfer dip to a serving dish or small crockpot to keep the dip warm. Garnish with fresh cilantro, diced tomato and green onion, if you'd like. Serve with tortilla chips and enjoy!

SOUTHWEST BLACK-EYED PEA DIP RECIPE
This cheesy appetizer will be the talk of any game day gathering. We took the ingredients in Texas caviar (a classic chilled Southern dip made with black-eyed peas) and turned them into a warm and gooey multi-layered dip topped with diced tomatoes, zesty cilantro, and spicy jalapeños. Best of all, Creamy Southwest Black-Eyed Pea Dip can be made in advance. Prepare the dip through Step 2 (omit preheating the oven) and chill the dish, covered, overnight. Let the dip stand at room temperature 30 minutes before baking and add 10 minutes to the covered bake time. Top the dip as directed in Step 4. Serve with cold beer and plenty of your favorite tortilla or pita chips for dipping. Before you know it, this dip will become your new signature dish for game day parties or any get-together with family and friends!

- Preheat oven to 375°F. Process cream cheese, 1 cup black-eyed peas, 1⁄2 tablespoon lime juice, hot sauce, and 1⁄4 teaspoon salt in a food processor until creamy and smooth (about 1 minute). Place mixture in a large bowl.
- Stir remaining black-eyed peas, diced ham, scallions, bell pepper, and 4 ounces Monterey Jack cheese (1 cup) into cream cheese mixture. Spread mixture into a lightly greased 2-quart baking dish. Sprinkle with remaining 4 ounces cheese.
- Bake, covered with aluminum foil, in preheated oven 20 minutes. Remove foil, and bake for 10 to 15 more minutes or until hot and bubbly. Let stand 10 minutes.
- Stir together tomatoes, cilantro, olive oil, jalapeño, remaining 1 tablespoon lime juice, and remaining 1⁄4 teaspoon salt in a small bowl. Top black-eyed pea dip with tomato mixture using a slotted spoon. Serve with tortilla chips.
NEW YEAR'S BLACK-EYE PEA DIP
This recipe is easy and great for parties, especially for the New Year's. This dip tastes good hot or cold. If you want a spicy dip, use 1 can black-eyed peas and 2 cans jalapeno black-eyed peas. To keep warm, put dip in slow cooker. Eat with tortilla chips or corn chips.

- Place peas in heavy medium saucepan. Add enough water to saucepan to cover peas by 2 inches. Let stand 30 minutes. Drain. Add water to cover peas by 2 inches. Generously salt water. Stir in 1 garlic clove. Boil until peas are very tender, adding more water to pan if necessary, about 1 hour.
- Using slotted spoon, transfer peas to processor. Process until smooth. Add remaining garlic clove and next 3 ingredients. Pulse until smooth. Season to taste with salt and pepper. Transfer dip to 8-inch-diameter pie plate or quiche dish. (Can be prepared 2 days ahead. Cover and refrigerate.)
- Preheat oven to 400°F. Top dip with cheddar. Bake until dip is heated through and cheese bubbles, about 20 minutes. Sprinkle dip with green onions and serve with tortilla chips.
