THE BLACK- EYED PEAS BAKED SQUASH
This is one of the many recipes from my grandmothers cookbook. She passed away in May of 2005 and I am recording her wonderful recipes for my family and the many generations that will follow. I hope you enjoy her recipes as much as we do. I have not made each one yet-so cooking time and servings may vary. Steps:
- Cut squash and onion in pieces, boil together, then reduce heat until tender.
- Drain & mash squash some.
- Combine squash,onion, eggs, bread bits, butter,sugar, salt .
- Put into a 3 quart dish that has been oiled.
- Bake at 350 until lightly browned.
- Sometimes I toss in some velveeta - when the kids were small they liked it with the cheese.

Steps:
- Preheat oven to 350 degrees.
- Bring a large saucepan of water to boil.
- Add Squash. Return to a boil, reduce heat and cook until tender.
- Drain and mash.
- Stir in eggs, crumbs, butter, sugar, salt, onion and pepper.
- Spoon mixture into greased casserole dish.
- Sprinkle a light layer of bread crumbs on top.
- Bake 30 to 40 minutes or until lightly browned.

SQUASH CASSEROLE(LIKE BLACK EYED PEA RESTAURANT)
Even if you don't like yellow squash, you've got to try this. It almost tastes like fresh sweet corn! This is a copycat recipe of the Black Eyed Pea Restaurant's squash casserole. They are well known for their southern country veggies!

Steps:
- 1. Cut tips off squash and cut each squash into 3 or 4 pieces. Drop squash and chopped onion into a large saucepan with enough boiling water to cover. Return to boil, reduce heat and cook until tender. Drain well in colander and mash, allowing excess liquid to drain.
- 2. Combine with beaten eggs, 1-cup breadcrumbs, butter, sugar, salt, onion, and pepper. Turn into a greased 3-quart casserole.
- 3. Toss remaining bread crumbs with melted butter and sprinkle over top of casserole. Bake at 350 degrees for 30 minutes, until lightly browned.
