My grandmother in Alabama made these years ago as an inexpensive subsitute for pork sausage. My Mom still makes these for me. There was never a real recipe, so the last time she made them, she measured her ingredients as best she could to come up with this. OK, so they don't REALLY taste like sausage, but the sage does give them a hint of sausage flavor. I like these with biscuits but also like them as stand alone snacks or with a plate of veggies and corn bread. This can be made with leftover peas or canned peas.

1 cup black-eyed peas, cooked and mashed
1/4 cup flour
1 egg, lightly beaten
1/4 teaspoon sage
2 tablespoons oil

Steps:

  • Mix peas, flour, egg, and sage.
  • Shape into 8 patties.
  • Heat oil in skillet over medium heat.
  • Cook patties in oil over medium heat until lightly brown on both sides, 4 to 5 minutes per side.

I had never heard of it, and I've been unable to find anything else quite like it. You can fix this as a side dish to a meal, or make it into muffins for snacks. Either way, you'll be pleasantly surprised.

1 pound bulk spicy breakfast sausage
1 onion, chopped
1 cup white cornmeal
½ cup all-purpose flour
1 teaspoon salt
½ teaspoon baking soda
1 cup buttermilk
½ cup vegetable oil
2 eggs, lightly beaten
1 (15 ounce) can black-eyed peas, drained
1 (8 ounce) package shredded Cheddar cheese
¾ cup cream-style corn
1 (4.5 ounce) can chopped green chile peppers
¼ cup chopped pickled jalapeno peppers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
  • Cook sausage and onion in a large skillet over medium heat, stirring until sausage is crumbly and no longer pink, about 5 minutes. Drain on paper towels.
  • Mix cornmeal, flour, salt, and baking soda together in a large bowl.
  • Whisk buttermilk, oil, and eggs together in a small bowl. Add to the cornmeal mixture, stirring just until moistened. Stir in sausage mixture, black-eyed peas, Cheddar cheese, corn, green chile peppers, and pickled jalapeno peppers. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

What would the new year be without Black Eyed Peas? It's a traditional dish served in the South on New Year's Day, consisting of a savory black-eyed pea mixture served over rice. To jazz it up, I added Andouille Sausage and Louisiana Skillet Cornbread for a true southern dish.

1 pound 16 ounces dried black-eyed peas, soaked overnight and rinsed well
1 pound 16 ounces Andouille Sausage, sliced into 1/4-inch slices
1 large onion chopped ((about 1-1/2 cups))
2 stalks celery chopped ((about 1/2 cup))
1/2 bell pepper seeded and chopped ((about 1/2 cup))
2 teaspoons Cajun Seasoning (See Note 1)
4 cloves garlic minced
1 quart (4 cups) low sodium chicken broth
10 ounce can Rotel Original Tomatoes and Chilies
1 teaspoon dried thyme
1 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
2 Tablespoons finely chopped chives or green onions for garnish (optional)
3 cups steamed white rice

Steps:

  • Cook sausage over medium heat in a large Dutch oven until browned, about 10 minutes.
  • Add onion, celery, bell pepper, and Cajun seasoning. Cook for 5 minutes, stirring often to loosen any browned bits on bottom of Dutch oven. Add minced garlic; cook for 30 seconds until fragrant. Add Rotel Tomatoes and Chilies. Add black eyed peas, thyme, salt, pepper, and chicken broth. Stir to combine all ingredients.
  • Cover and simmer over medium low heat for one hour or until peas are tender and creamy. Adjust seasonings; if desired, garnish with chopped chives or green onions. Serve over rice. Yield: 6 servings.

1 small onion, chopped
2 cans (15 ounces each) black-eyed peas, rinsed and drained

1 cup beef broth
1/4 teaspoon garlic powder
1/4 teaspoon Cajun seasoning

1 small onion, chopped
2 cups white cornmeal
1 cup all-purpose flour

1/2 cup vegetable oil
2 large eggs
1 cup grated sharp cheddar cheese
1 (15 ounce) can black-eyed peas, drained
1/2 cup canned diced green chiles (or jalapenos)

Steps:

  • Preheat oven to 375°; grease a large baking dish with butter and set aside.
  • In a skillet, break up the sausage, add in the onion, and cook over medium heat, stirring, until the meat is browned, about 10 minutes.
  • Drain the sausage and onion on paper towels.
  • In a big bowl, whisk the cornmeal, flour, salt, pepper, and baking soda together.
  • In another bowl, whisk the buttermilk, oil, and eggs together; add to the dry mixture, and stir just until the dry mixture is moistened (do not overmix, the batter should be slight lumpy).

1 pound smoked sausage
1 cup chopped yellow onion (1 medium)
1/2 teaspoon salt
1/4 teaspoon cayenne
4 cloves of garlic
5 sprigs of fresh thyme
4 bay leaves
3 teaspoons finely chopped parsley
8 cups chicken stock
1 pound black-eyed peas
1 tablespoon minced garlic
6 cornbread muffins
1 tablespoon chopped green onions

Steps:

  • In a large pot, over medium heat, render the sausage for 5 minutes. Stir in the onions, salt, cayenne, garlic, bay leaves, thyme and parsley. Saute for 5 minutes, or until the onions are wilted. Stir in the chicken stock, peas and garlic. Bring the liquid up to a simmer and cook for 1 1/2 hours, or until the peas are tender. Spoon the peas and sausage in the center of a shallow bowl. Garnish with green onions. Serve with cornbread muffins.
