RICE CON QUESO
The exact recipe from Frances Moore Lappe's "Diet for a Small Planet". Great for a buffet dinner. Prep time does not include cooking the rice or beans.

Steps:
- Preheat oven to 350 Fahrenheit.
- Mix together cooked rice, cooked beans, garlic, onion, and chiles. In a casserole, spread alternating layers of the rice-beans mixture, ricotta cheese, and jack cheese, ending with a layer of rice and beans.
- Bake for 30 minutes. During the last few minutes of baking, sprinkle cheddar cheese over the top. Garnish before serving.

- First, to roast the jalapeños, place under the broiler for 10 minutes until blackened, turning once. Leaving on the darkened skin, dice the chiles.
- Preheat the oven to 375° F. In a large oven-proof skillet, such as a cast iron skillet, heat the oil on medium low and add the Mexican chorizo and onion. While stirring occasionally to break up any large chunks of chorizo, cook until the chorizo and onions are cooked through, about 5-8 minutes. Remove the skillet from the heat and if you like, drain off any excess grease.
- Stir into the skillet the diced jalapeños, black-eyed peas, and collard greens. Evenly distribute on top the cubed cream cheese and shredded Muenster then pour in the half-and-half. Bake uncovered until the cheese is bubbling, about 15-20 minutes. Remove from the oven and gently stir to combine everything. If you’d like a little tang, you can squeeze in some lime juice. Garnish with chopped cilantro and add salt to taste. Serve warm tortilla chips.To keep the dip warm, you can place on a chafing dish, in a slow cooker or in a fondue pot.

- To make the Texas caviar, stir together the black-eyed peas, tomatoes, jalapeños, red bell pepper, red onion, garlic, cilantro, salt, black pepper, cumin, olive oil, and lime juice until well combined. Taste and adjust seasonings. Refrigerate until ready to use. (This can be made a day ahead.)
- To make the queso, in a medium saucepan, melt the butter over medium-low heat. Add the onion and jalapeños and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook for 30 seconds more.
- Whisk together the cornstarch, half and half, and water until well combined, then pour into the pot. Turn the heat up a smudge to medium and while constantly stirring, bring to a simmer (don't let it come to a raging boil!) and cook until the mixture begins to thicken, which should happen in a couple of minutes.
- Turn the heat down to low and add the cheese, a handful at a time, and stir until each handful of cheese has melted and the queso is smooth. Repeat until all the cheese has been added.
