Canola oil spray
Three 1-ounce slices Canadian bacon
2 tablespoons red wine vinegar
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1 large carrot, grated
One 15-ounce can no-salt-added black-eyed peas, rinsed and drained
1 bunch scallions, thinly sliced
1 bunch watercress, trimmed and separated into sprigs

Steps:

  • Spray a large nonstick skillet with canola oil spray and heat over medium-high heat. Add the bacon and cook until very lightly browned, about 3 minutes per side. Cool slightly and cut into thin strips.
  • Whisk together the vinegar, olive oil and salt and pepper to taste in a large bowl. Add the carrots, peas and scallions and toss. Add the watercress and toss again. Transfer to a large platter and top with the bacon.

1 small red bell pepper, finely chopped
1 jalapeno, finely chopped
2 tablespoons chopped green onions

1/4 cup unseasoned rice wine vinegar
1/4 cup canola oil
1/2 teaspoon sugar
Salt and freshly ground black pepper
Two 15-ounce cans black-eyed peas, drained

Steps:

  • Combine the first 6 ingredients in a bowl.
  • In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.

1 (2 ounce) jar diced pimentos, drained

¼ cup red wine vinegar
¼ cup olive oil
2 tablespoons balsamic vinegar

1 tablespoon olive oil, approximately, as needed to brush on peppers
1 red bell pepper, halved, stemmed and seeds removed
1 yellow bell pepper, halved, stemmed and seeds removed
1/3 cup red wine vinegar
1 large clove garlic, lightly crushed with the side of a knife blade and quartered
1 cup olive oil, preferably extra-virgin
2 (16-ounce) cans black eyed peas, drained
2 tablespoons sliced scallions, white and tender green parts only (from about 6 scallions)
2 tablespoons chopped fresh parsley leaves, from about 1-ounce parsley, stems removed

Steps:

  • Preheat oven to 450 degrees F.
  • Brush olive oil on the peppers, and place them cut side down on a piece of heavy duty aluminum foil (with the edges turned up to avoid drips.) Roast until charred, them remove them to a resealable plastic bag or tightly covered pan to sweat and cool down.
  • Make the vinaigrette just before use. Through the feed opening of a running blender, add vinegar and garlic. With the blender still running, pour olive oil in a slow thin stream. (Alternatively, you can prepare the vinaigrette by whisking the ingredients into a bowl in the same order, in which case, the garlic should be minced first.)
  • Return to the bell peppers and peel off the blackened skin. Slice the flesh of the peppers brunoise (julienne, then crosswise) and place in a mixing bowl. Fold in the drained black-eyed peas, scallions, and parsley. Stir in enough of the vinaigrette to coat. Serve family style.

1/2 pound dried black-eyed peas, or 2 cans black-eyed peas, drained and rinsed (about 3 cups)
4 cups low-sodium chicken broth or water (if using dried peas)
3/4 cup lowfat buttermilk
3 tablespoons mayonnaise
1 1/2 teaspoons spicy brown mustard
1/4 cup apple cider vinegar
1/8 teaspoon hot sauce (recommended: Tabasco)
1/2 teaspoon salt, plus more
1/8 teaspoon fresh ground pepper
1/4 cup red onion, diced (about 1 cup)
3/4 cup thinly sliced celery (2 stalks)
2 tablespoons chopped fresh chives
4 cups baby spinach (about 2/3 of a 6-ounce bag), sliced into thick ribbons

Steps:

  • In a large bowl, cover peas with 4 inches of water and soak a minimum of 6 hours, or overnight. Drain and rinse thoroughly.
  • Place peas in a 4-quart saucepan with chicken broth or water and bring to a boil. Reduce heat and simmer peas between 45 to 55 minutes, or until peas are cooked but not mushy. Drain excess liquid and let peas cool to room temperature.
  • Combine buttermilk, mayonnaise, mustard, vinegar, hot sauce salt and pepper in a bowl, and whisk to incorporate.
  • In a salad bowl, combine beans, red onion, celery and chives. Pour dressing over bean mixture and gently stir to incorporate, being careful not to break up too many of the beans. Add spinach and toss to coat. Season with additional salt, pepper and hot sauce, to taste. Serve immediately.

I like to serve this salad with vinaigrette, as here, or lightly moistened with a dollop of homemade mayonnaise (page 282). (I seem to have some sort of primal need to combine tomatoes with mayonnaise.) The truth is, this salad really reminds me of how a plate of food looks toward the end of a summer meal when all the vegetables and flavors swim and mingle together. This salad can be served as is, in lettuce cups, or as a side dish for grilled or fried chicken. Regardless of how you serve it, all of the vegetables should be chopped approximately the same size so each bite is evenly mixed.

Yield serves 4 to 6

Number Of Ingredients 11

3 ears fresh sweet corn, shucked and silks removed
2 cups freshly shelled black-eyed peas (about 1 3/4 pounds unshelled) or frozen black-eyed peas, thawed
2 tomatoes, cored, seeded, and chopped
1 onion, preferably Vidalia, finely chopped
1/2 stalk celery, very finely chopped
1 clove garlic, very finely chopped
1 small bunch basil, stemmed and leaves very thinly sliced into chiffonade (see page 197)
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1/4 cup canola oil
Coarse salt and freshly ground black pepper

Steps:

  • Prepare an ice-water bath by filling a large bowl with ice and water. Line a plate with paper towels.
  • To cook the corn, bring a large pot of salted water to a rolling boil over high heat. Add the corn and cook until tender, 2 to 3 minutes. Remove with tongs to the ice water to cool, then transfer to the towel-lined plate to drain.
  • To cook the black-eyed peas, add them to the pot and simmer until tender but not mushy, about 20 minutes. (Taste one and see how tender it is; the cooking time will depend on their freshness.)
  • Meanwhile, cut the corn kernels from the cobs and place in a large bowl. Add the tomatoes, onion, and garlic. When the peas are tender, drain them in a colander, then shock under cold running water to stop the cooking. Once the peas are completely cool, drain very well, shaking to remove all the moisture, and add to the corn mixture, along with the basil. Set aside.
  • To make the dressing, whisk together the vinegar and mustard in a bowl. Add the oil in a slow steady stream, whisking constantly, until the dressing is creamy and emulsified. Season the dressing with salt and pepper.
  • To serve, drizzle over a little of the salad dressing. Toss to coat, adding more if needed. Taste and adjust for seasoning with salt and pepper. Serve immediately.

MAKE-AHEAD BLACK-EYED PEA SALAD

  • Place peas into a large container and cover with several inches of cool water; let soak, 8 hours to overnight. Drain.

  • Mix oil, vinegar, sugar, garlic, hot sauce, salt, and pepper in a small bowl. Add to pea mixture and toss to coat.
  • Cover and marinate in the refrigerator for 8 hours, or overnight. Add parsley and basil just before serving.

  • Add collards and cook until they begin wilt. Add kabocha, mix well and partially cover. Cook for 5 to 7 minutes or until the kabocha begins to soften.
