HOME-MADE CHERRY VANILLA YOGURT MUFFINS



Home-made Cherry Vanilla Yogurt Muffins image

These delicious home-made muffins are made with yummy ingredients like vanilla yogurt. applesauce and cherries galore. Home-Made Cherry Vanilla Yogurt Muffins, please! How does that sound? It's a dessert in a muffin if you ask me!

Number Of Ingredients 10

1 3/4 cup all purpose flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1 large egg
3/4 cup Vanilla Greek yogurt
1/2 cup sugar of choice ()
1/2 cup ½ cup canola oil (or oil of choice, for lower calories, use 1/2 cup unsweetened applesauce)
1/3 cup milk of choice
2 - 3 teaspoons vanilla extract
1 1/2 cups sour or sweet cherries, pitted and coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Line your muffin pan with liners or spray with baking spray. I used silicone muffin pans and sprayed it with olive oil spray. Set aside.
  • In one bowl, add flour, salt, baking powder together and mix with a whisk.
  • In another bowl, lightly beat egg and add in yogurt, sugar, oil or applesauce, vanilla and milk and mix until well blended.
  • Add dry mixture to wet mixture until just blended. (Don't over mix - you will get tough muffins!)
  • Toss fresh or frozen cherries with 1 tablespoon flour & 1 tablespoon sugar before adding to muffin mixture and fold about 3-4 times and then scoop muffin mixture into prepared muffin cups. Will rise 1/2 inch or more.
  • Bake for 20 to 25 minutes or until tops become golden brown.
  • Recipe makes 12-14 regular muffins.

Number Of Ingredients 14

All-Purpose Flour
Brown sugar
Sea salt
Instant Coffee or Brewed
Vanilla
Eggs
Evaporated Milk or Fresh
Butter or margarine
Baking powder
Nutmeg
Cocoa powder
Cherry filling
Whipped cream
Chocolate

Steps:

  • Preheat 350ºF for 20 to 25 min, or if knife is clean. Cream butter, sugar and vanilla together in a large bowl, mix eggs together a small bowl first then add milk. Mix together coffee to warm water, add to bowl with wet ingredients. After sift together all the dry ingredients to the bowl, mix until combined. Grease a muffin pan, or line with muffin cups, then add batter. Bake in a pre-heated 350ºF oven for 20 to 25 minutes or until batter comes out clean. ( depending on your oven ) When baked let rest for 10 minutes then release unto a cooling rack. When muffins are cool remove from pan and place on plate, cut a hole in the middle of each muffin about 1 inch round. Then add cherry filling in each muffin hole, and top with spray whipped cream, then top with grated chocolate or chocolate chips. Bonita's Tip: Shifting flour will make the flour a cake like texture. If you are using salted butter you can leave out the sea salt. You can use freshly whipped cream and put in a decorating holder to add to muffin tops.

3/4 cup butter, softened
3/4 cup sugar
1 egg
1/2 cup plain yogurt
1/2 teaspoon almond extract
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup red candied cherries, chopped

Steps:

  • In a small bowl, cream butter and sugar. Beat in the egg, yogurt and extract. Combine the flour, baking soda and salt; stir into creamed mixture just until moistened. Fold in cherries., Fill greased or paper-lined miniature muffin cups two-thirds full. Bake at 350° for 15-17 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

1 (8 ounce) container blueberry flavored yogurt
1 egg

2 cups blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • Stir together flour, sugar, baking soda and baking powder. In a separate bowl, combine yogurt, egg, vanilla, butter and blueberries. Stir mixtures together just until combined; batter will be very thick. Scoop into prepared muffin cups.
  • Bake in preheated oven for 25 minutes.

1 ½ cups all-purpose flour
¾ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
⅓ cup vegetable oil
⅓ cup milk
1 egg
½ teaspoon almond extract
1 cup fresh pitted and quartered sweet cherries
1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
  • Mix flour, 3/4 cup sugar, baking powder, and salt together in a bowl.
  • Whisk oil, milk, egg, and almond extract together in a small bowl. Pour into flour mixture; stir gently until incorporated. Fold cherries into the batter.
  • Spoon batter into the muffin cups, filling each 2/3 of the way full. Sprinkle 1 tablespoon sugar on top.
  • Bake muffins in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Transfer to a wire rack to cool.

1/2 cup margarine, softened
3/4 cup sugar
2 eggs
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon almond extract
2 cups flour
1 cup plain yogurt
cherry pie filling

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl beat margarine until creamy.
  • Beat in sugar.
  • When pale and fluffy, add eggs.
  • Mix in baking powder,baking sada and almond extract.
  • Fold in 1 c flour.
  • Mix well by hand.
  • Stir in yogurt and 1c floru.
  • In greased muffin tin spoon heaping tbl batter.
  • To each muffin add 1tsp pie filling.
  • Cover with another heaping tbl batter.
  • Bake @ 350 degrees 25 minutes.

1 package white cake mix (regular size)
1-1/4 cups water
4 large egg whites, room temperature
1/3 cup canola oil
1-1/2 cups fat-free cherry yogurt, divided
1 carton (8 ounces) frozen fat-free whipped topping, thawed

Steps:

  • In a large bowl, combine the cake mix, water, egg whites and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fold in 3/4 cup yogurt. , Pour into a 13x9-in. baking dish coated with cooking spray. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., Place remaining yogurt in a small bowl; fold in whipped topping. Spread over cake. Store in the refrigerator.
