Steps:
- 1. GRAHAM CRACKER CRUST: Combine all 4 crust ingredients and press into 8 or 9 inch pie plate
- 2. MAKE CUSTARD: Stir the scaled milk slowly into the beaten eggs then stir in the sugar mixture and cook in double boiler over hot water stirring occasionally for about 20 minutes or until custard coats the spoon
- 3. REMOVE one cup of hot custard and set aside for the top layer
- 4. To remaining hot custard still in the pan add 1 1/2 squares of dark baking chocolate (can use sweetened or milk chocolate if prefer) -- beat until well blended, then let cool
- 5. Add 1/2 tsp vanilla and pour choc custard into the pie shell
- 6. SECOND OR TOP LAYER OF CUSTARD: add dissolved gelatine to 1C of plain custard that was set aside before -- then add 1T of rum extract and mix well
- 7. In a separate bowl, beat the egg whites until stiff, adding the salt, cream of tartar, and sugar, one teaspoon full at a time until all is incorporated.
- 8. Fold the egg-white mixture into the custard-with-rum mixture and pour it on top of the chocolate layer and place in refrigerator to cool
- 9. After the pie has set up, cover the top with whipped cream and shaved chocolate just before serving.
CHOCOLATE-PECAN-RUM PIE
Steps:
- Grease a nine-inch pie pan.
- In a mixing bowl, combine the flour, two teaspoons sugar, the cinnamon and allspice. Cut in the shortening until the mixture resembles coarse meal. Gradually sprinkle in the ice water while lightly kneading the dough by hand until it holds together. Gather into a ball, wrap in waxed paper and refrigerate for one hour.
- Preheat the oven to 375 degrees. Roll out the dough to one-eighth-inch thickness. Line the prepared pan, trimming the extra dough at the top. Spread the pecans and chocolate chips on the bottom.
- In a mixing bowl, combine the melted butter, remaining sugar, eggs, corn syrup, vanilla extract, lemon zest and nutmeg. Pour into the pan.
- Bake for 15 minutes, lower the oven temperature to 350 degrees and bake for 30 minutes, or until the top begins to brown and the center is almost set. Remove, sprinkle with rum and cool. Serve at room temperature with some whipped cream, if desired.

CHOCOLATE PECAN PIE WITH RUM
The filling in this chocolate pecan pie gets a little extra kick from a shot of rum. The result is a perfectly rich and chocolatey dessert, filled with crunchy pecans.

- In a medium-size bowl, whisk together flour, sugar, and salt with a fork. Add butter and use a pastry blender (or two forks) to cut the butter into the flour mixture until incorporated and crumbles are no larger than small peas.
- Add buttermilk 1 tablespoon at a time, mixing with a fork until the dough becomes moistened and shaggy and starts to come together. Don't add more buttermilk than you need to. Use your hands to knead the dough and form into a ball. Flatten it slightly into a disc, wrap in saran wrap, then chill for at least an hour.
- Once chilled, turn the dough out onto a lightly floured surface and use a rolling pin to roll it out into a circle 12 inches in diameter. Transfer the dough to a 9-inch pie plate, trim off the excess, tuck the edges under, then flute the edges. Put the crust back in the fridge while you make the filling.
- Preheat the oven to 350 degrees Fahrenheit. In a small saucepan over low heat, melt the chocolate and butter together, stirring frequently. Let cool slightly.
- In a large bowl, whisk together the eggs, brown sugar, corn syrup, vanilla, rum, and salt. Whisk in the chocolate mixture until smooth. Fold in the 1 1/2 cups chopped pecans.
- Pour filling into the prepared pie crust, then arrange the pecan halves on top in concentric circles.
- Bake the pie for 40-45 minutes. I recommend tenting a piece of foil over the pie halfway through, then removing it for the last 5 minutes or so to prevent over-browning. Pie may rise up in the middle while baking and will still be slightly jiggly in the center when done - this is okay, it will flatten and set as it cools.
- Place on a wire rack to cool completely. Cover leftovers tightly with foil and store in the refrigerator.

- Preheat oven to 350 degrees.
- Lightly beat together eggs, corn syrup, sugar, butter, 3 Tbs. rum, vanilla and salt. Do not over beat. Stir in pecan halves and half of the chocolate morsels (1/2 cup).
- Pour into unbaked pie shell. Cover edges w/foil. Bake 25min. Remove foil.
- Bake 20-25 minutes more (till knife comes out clean). Cool, then chill.
- For chocolate rum mousse melt remaining 1/2 cup chocolate morsels over hot (not boiling) water stir until smooth.
- Whip 1 cup heavy cream and 1 Tbs. rum until soft peaks form.
- Gently fold in melted morsels. I add a spoonful at a time of the whipped cream into the chocolate (since the chocolate is never the right consistency for me) then fold it all together.

- Combine the cream cheese, sugar and 1 tsp vanilla in a bowl.
- Mix until smooth.
- Spread on the bottom of the unbaked pie shell (in a pie pan).
- Press the pecans into the cream cheese mixture.
- In another bowl beat the eggs, corn syrup sugar& the remaining1 tsp vanilla.
- Beat until everything is well mixed and pour into the pie shell.
- Bake 30-35 minutes in a 400F degrees oven or until the crust is browned and the top is puffy and golden.
- Cool& Chill.
- Spread the chocolate mousse (Instructions follow) over top.
- Chill until set, about 4 hours.
- At serving time garnish with swirls of whipped cream, sprinkle on pecans and chocolate curls.

- In a medium bowl beat egg yolks and water until thick and lemony.
- Blend in the chocolate.
- In another bowl, beat the whipping cream until it forms soft peaks.
- Beat in 2 tbsp icing sugar.
- Fold into the chocolate mixture.
- Beat the egg whites until soft peaks form.
- Beat in the remaining 2 tbsp icing sugar.
- Fold into the chocolate mixture.
- Spoon over the cold pecan pie.
- Chill & set.
