Time 1h45m

Yield 8

Number Of Ingredients 11

⅔ cup shortening, chilled
2 cups all-purpose flour
1 teaspoon salt
5 tablespoons cold water
¾ cup white sugar
⅓ cup all-purpose flour
½ teaspoon ground cinnamon
4 cups fresh blueberries
1 ½ cups fresh blackberries
1 tablespoon lemon juice
2 tablespoons butter

Roll out the top crust and set aside.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix sugar, 1/3 cup flour, and cinnamon. Stir in berries to coat. Pour the filling into the pastry-lined pan. Sprinkle with lemon juice and dot with butter. Cover with top crust; cut slits in the top to vent the steam. Seal the crust and flute the edges.
  • Cover the edges of the crust with foil to prevent over-browning. Bake in the preheated oven until the crust is golden brown and the juices are bubbling, about 45 minutes. Remove foil during the last 12 minutes of baking.

BLACKBERRY BLUEBERRY PIE

Blackberry Blueberry Pie image

This summer fruit pie is filled with blackberries and blueberries and wrapped in a flaky all-butter pie crust.

Provided by Annalise

Categories     Dessert

Time 1h45m

Number Of Ingredients 8

1 Double pie crust recipe
1/2 cup granulated sugar ((100 grams))
3 tablespoons cornstarch
Zest of 1 lemon
2 ½ cups blueberries ((425 grams))
2 ½ cups blackberries ((275 grams))
1 large egg + 1 teaspoon water (, for egg wash)
Coarse sugar (, for sprinkling (optional))

Steps:

  • Preheat oven to 400 degrees F. Line a sheet pan with parchment paper.
  • On a lightly floured surface, roll one disk of pie crust out into a rough 13-inch circle. Transfer to a 9 or 10-inch pie dish. Roll the second disk or pie crust out and have it ready.
  • In a large bowl, combine the sugar, cornstarch, and lemon zest. Add the blueberries and blackberries and gently mix until they are coated with the sugar mixture.
  • Dump berry mixture into crust-lined pie dish. Place the other pie crust on top, or form a lattice, and press the bottom and top crusts together to seal. Tuck the ends into the pie dish and crimp crust edges as desired. With a sharp knife, cut slits into the top of the pie for vents (if making a lattice pie, skip this step).
  • Brush with egg wash and sprinkle with coarse sugar.
  • Place pie on the prepared sheet pan and bake until pie crust is golden and juices are visibly bubbling through the vents or lattice, about 1 hour. If top crust browns too quickly, cover with foil.
  • Let cool completely before serving, for best results. If desired, you can reheat the pie in a 350 degree oven for 30 minutes. Serve with whipped cream or vanilla ice cream, if desired.

BLACK AND BLUE SHEPHERD'S PIE

Black and Blue Shepherd's Pie image

This I got from Rachael Ray. I modified it to fit my own tastes so feel free to modify for your own also.

Provided by Shawn C

Categories     One Dish Meal

Time 50m

Yield 5 serving(s)

Number Of Ingredients 15

2 lbs potatoes, peeled and cut into chunks
salt & pepper
1/2 tablespoon extra virgin olive oil
6 slices apple-smoked bacon, thick sliced chopped up
2 lbs ground sirloin
1 onion, chopped
1 lb button mushroom, quartered
6 tablespoons butter
4 tablespoons all-purpose flour
3 cups beef stock
3 tablespoons Worcestershire sauce
3 tablespoons sour cream
1/2 lb blue cheese (buy the triangle and crumble by hand)
4 tablespoons chives
1 teaspoon paprika

Steps:

  • Place potatoes in a pot and cover with cold salted water.
  • Bring to boil cook 15-20 minutes while cooking meat mixture.
  • Use a very deep heavy pan/skillet such as cast iron. Also must be oven proof. Heat pan to a medium high, add oil and bacon cook until done.
  • Drain bacon on paper towels.
  • Add sirloin to the pan and cook 5 minutes.
  • Add in the mushrooms and onions and cook until meat is done and onions and mushrooms are tender.
  • Season with salt and pepper to taste, and add any seasonings you like at this time.
  • While meat cooks heat a small sauce pot over medium heat and melt 4T butter, whisk the flour into butter.
  • Cook 2 minutes then whisk beef stock into flour, add Worcestershire and season to taste. Let thicken on low heat until meat is done.
  • Pour gravy into meat pan and mix thoroughly, taste and season if necessary.
  • Drain potatoes well and let dry in hot pot they cooked in while you prepare to make them. I prefer using a ricer to eliminate all lumps, but if you don't have one then mash well with what you have (fork masher, etc.).
  • Stir in the sour cream, 2 Tbsp butter until well mixed. Taste for seasoning needs.
  • Then fold in crumbled blue cheese and chives.
  • Spread potatoes on top of the meat mixture.
  • Sprinkle top with paprika for color and broil for a few minutes until golden brown on top.
  • Crumble reserved bacon over top. Serve immediately.

  • Heat oven to 450°F. In large bowl, mix berries, sugar, tapioca, salt and lemon juice. Let stand 15 minutes.
  • Meanwhile, unroll 1 pie crust on work surface. Sprinkle both sides lightly with flour; place in ungreased 9-inch glass pie plate. Press firmly against side and bottom. Spoon berry mixture into crust-lined plate. Dot with butter. To make lattice top, cut second crust into 1-inch-wide strips with pastry cutter. Place half of the strips across filling in pie plate. Weave remaining strips with first strips to form lattice. Trim ends of strips even with edge of bottom crust. Seal and flute. Brush with egg white; sprinkle with coarse sugar.
  • Place pie on middle oven rack; place sheet of foil on rack below pie in case of spillover. Bake 15 minutes, reduce oven temperature to 350°F. Cover crust edge with strips of foil to prevent excessive browning; bake 40 to 50 minutes or until golden brown. Cool at least 2 hours before serving.

  • Combine flour, butter, oats, brown sugar, and 1 teaspoon salt in a medium bowl. Pinch and smear butter between your fingers until mixture is sandy and butter is evenly incorporated. Chill until ready to use.
  • Preheat oven to 375°F with oven rack in lower third of oven. Unwrap chilled dough disk, and place on a lightly floured work surface. (If dough has been chilled more than 8 hours, let stand at room temperature 10 to 15 minutes.) Roll into a 12-inch round. Transfer to a 9-inch pie pan with a lip; use your fingertips to relax dough into shape of pan. Trim dough, leaving a 1-inch overhang around edge of dish. Fold edge of dough under itself. Use your thumb and forefinger to crimp edge of dough, pressing crimp into pan and ensuring dough extends to outer edge of dish. (This anchors the pie crust, which results in a proud crown of crust after baking.) Freeze crimped dough, uncovered, until very cold, about 20 minutes.
  • Line crust with heavy-duty aluminum foil, leaving 1 1/2 inches of overhang. Trace fingertips over foil overhang, gently pressing into crimp. Fill foil-lined crust with pie weights or dried beans. Bake in preheated oven until crust is light golden around edges, 20 to 25 minutes. Remove pie weights and foil; prick bottom of crust all over with a fork. Return to oven, and bake at 375°F until bottom of crust is lightly browned, 6 to 8 minutes. Transfer to a wire rack to cool completely, about 30 minutes. While crust cools, reduce oven temperature to 350°F.
  • Toss together berries, granulated sugar, cornstarch, lemon juice, and remaining 1/4 teaspoon salt in a large bowl until berries are coated. Squeeze about 1 handful of berries, breaking them open. Stir in juices and smashed fruit. (This helps to create a sauce by introducing a small amount of berry juices to filling before baking.)

  • Make the Crust: Finely crush the oreos using a food processor, and then stir in the melted butter. Press this mixture into a 9 inch pie plate and pop in the fridge while you make the filling.
  • Make the Chocolate Filling: Add the finely chopped chocolate to a medium, heat-proof bowl. Heat 1/2 cup heavy cream in a small saucepan until just simmering. Pour over the chocolate, and let sit 5 minutes. Stir the mixture well until you have a creamy, smooth chocolate ganache. Set aside. Add the 1 cup of cold heavy cream to a large mixing bowl with the vanilla and powdered sugar. Beat on high speed just until stiff peaks form. Add the chocolate ganache and gently fold in until everything is incorporated and you have a smooth chocolate mousse. Spread this into the chilled crust. Chill in the fridge, covered, for at least 6 hours, or overnight.
  • Make the Boozy Cherry Sauce: Stir together the water and corn starch until the starch is fully dissolved. Add this to a medium sauce pan with the rest of the cherry sauce ingredients. Bring the mixture to a simmer, stirring constantly, then cook for 7 minutes, stirring the whole time. Turn the heat off and set the sauce aside to cool.
  • Make the Whipped Cream: When ready to serve the pie, make the whipped cream. Beat all whipped cream ingredients in a large bowl with electric mixer on high speed. Stop just as soon as stiff peaks form - don't over mix the whipped cream! See note below if you want to stabilize your whipped cream - I usually do this.

BLACKBERRY PIE - WITH FRESH OR FROZEN BERRIES
2019-05-05 Some blackberry pie recipes use flour to thicken the filling, and others (like this recipe) use cornstarch. Some even use tapioca – but I never have that in the cupboard. I like to use cornstarch to thicken my fruit pies because it has 2x the power of flour. So – you get better thickening with the same amount. Meaning that your pie filling won’t taste like flour.
