TORTILLA-BLACK BEAN CASSEROLE

This low-fat Tex-Mex recipe calls for bottled picante sauce, which is a less chunky salsa. For a twist, substitute salsa verde, a green salsa made with tomatillos and chile peppers.

2 cups chopped onion
1 ½ cups chopped green sweet pepper
1 14.5 ounce can tomatoes, cut up
¾ cup bottled picante sauce or green salsa
2 teaspoons ground cumin
2 cloves garlic, minced
2 15 ounce cans black beans and/or red kidney beans, rinsed and drained
12 6 inches corn tortillas
2 cups shredded reduced-fat Monterey Jack cheese
1 cup chopped cherry or grape tomatoes
Chopped fresh cilantro, sliced green onions, and/or sliced pitted ripe olives
½ cup light sour cream or plain low-fat Greek yogurt (optional)

Steps:

  • In a large skillet combine onion, sweet pepper, undrained tomatoes, picante sauce, cumin, and garlic. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes. Stir in beans.
  • Spread one-third of the bean mixture over the bottom of a 3-quart rectangular baking dish. Top with six of the tortillas, overlapping as necessary, and 1 cup of the cheese. Add another one-third of the bean mixture; top with remaining 6 tortillas and remaining bean mixture. Sprinkle with remaining cheese.
  • Bake, covered, in a 350° oven for 30 to 35 minutes or until heated through. Let stand 10 minutes. Before serving, if desired, top with tomatoes and cilantro, green onions and/or olives. If you like, serve with sour cream.

3/4 pound cremini or button mushrooms, trimmed and quartered
1 garlic clove, minced

1 1/2 cups reserved cooked black beans from Spicy Black Bean Soup, or 1 can (15.5 ounces) black beans, rinsed and drained
8 corn tortillas, warmed and halved
2 cups salsa
1 1/4 cups shredded Monterey Jack cheese (4 ounces)

Steps:

  • Preheat oven to 400 degrees. In a large skillet, heat oil over medium-high. Add mushrooms and cook, stirring often, until browned, 7 minutes. Add garlic and cayenne; season with salt and pepper. Add black beans and stir to combine. Cook until beans are warmed through, 2 minutes. Remove from heat.
  • Arrange 5 tortilla halves in a 2-quart baking dish. Top with half the bean mixture and 1/2 cup salsa, then sprinkle with one-third the cheese. Repeat with another layer of tortilla halves, bean mixture, salsa, and cheese. Top with remaining tortilla halves, salsa, and cheese.
  • Cover with foil and bake until center is hot and cheese melts, 10 minutes. Uncover and bake until cheese is bubbling, 5 minutes.

1 (8 ounce) can tomato sauce
1 (16 ounce) can black beans, rinsed and drained
1 tablespoon chopped cilantro
salt and pepper
12 soft corn tortillas
8 ounces low-fat cheddar cheese, shredded, reserve 2 tablespoons (I used fat free)

Steps:

  • Preheat oven to 350* F.
  • Spray a large skillet with cooking spray.
  • Add garlic, onions, tomato, green onion, cumin, and chili powder.
  • Cook on medium heat until onion is tender.
  • Add tomato sauce and cook 5 minutes more.
  • Stir in beans, cilantro, salt and pepper.
  • Spray a 9 inch square baking dish with cooking spray.
  • Layer 4 tortillas, 1/3 cheese, and 1/3 of the bean mixture; repeat 2 more times.
  • Top with reserved 2 tablespoons of cheese.
  • Bake 20 minutes, covered, then 10 minutes uncovered or until bubbly.

2 tablespoons extra-virgin olive oil (plus extra for drizzling)
1 medium onion (trimmed, peeled, and chopped)
3 large cloves garlic (peeled, smashed, and finely chopped)
3 scallions (sliced, white and light green parts only)
1 teaspoon cumin
2 cans black beans (15 ounces each, drained and rinsed)
1 cup tomato sauce
1/4 cup tomato salsa (mild, medium, or hot, depending on preference)
12 corn tortillas (soft)
1 1/2 cups cheddar cheese (shredded)
1/2 cup mozzarella cheese (shredded)
Garnish: guacamole
Garnish: salsa
Garnish: sour cream
Garnish: hot sauce

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Oil a 9- or 10-inch casserole dish and set aside.
  • Warm the olive oil in a chef's pan or large, deep skillet set over medium-high heat.
  • Add the onion and sauté until soft and translucent, about 5 to 8 minutes.
  • Add the garlic, scallions, and cumin, and sauté about a minute more, or until fragrant.
  • Stir in the black beans, tomato sauce, and salsa, lower the heat, and simmer, stirring frequently, for about 5 minutes. Remove from the heat.
  • Cover the bottom of the baking dish with 4 tortillas, overlapping or trimming to fit if necessary (if you are using a rectangular or oblong dish, you may want to cut a couple of the tortillas in half to get a better fit; don't worry if the tortillas don't cover the entire dish.)
  • Toss the cheeses together in a small bowl.
  • Sprinkle the tortillas with 1/3 of the cheese.
  • Top with 1/2 of the tomato-bean mixture, smoothing the top with a spatula.
  • Arrange 4 more tortillas over the beans, top with 1/3 of the cheese, and the rest of the beans.
  • Top the casserole with the rest of the tortillas.
  • Sprinkle evenly with the rest of the cheese, drizzle with a little olive oil, and bake, covered, for 20 minutes.
  • Remove the foil and bake for 10 to 15 minutes more, or until golden and bubbly.
  • Remove from the oven and allow the casserole to rest for 5 minutes before serving.
  • Top as desired with guacamole , salsa, sour cream, and hot sauce.
  • Serve and enjoy.

1 medium green pepper, chopped
1 medium onion, chopped
1 teaspoon ground cumin
1/4 teaspoon pepper

2 cans (15 ounces each) black beans, rinsed and drained
1 can (14-1/2 ounces) vegetable broth
1 package (10 ounces) frozen corn, thawed
4 green onions, sliced
4 flour tortillas (8 inches)
1 cup shredded reduced-fat cheddar cheese, divided

Steps:

  • Preheat oven to 400°. In a large skillet, heat oil over medium-high heat. Add green pepper, onion, cumin and pepper; cook and stir until vegetables are tender. Add garlic; cook 1 minute longer., Stir in beans and broth. Bring to a boil; cook until liquid is reduced to about 1/3 cup, stirring occasionally. Stir in corn and green onions; remove from heat. , Place 1 tortilla in a 9-in. springform pan coated with cooking spray. Layer with 1-1/2 cups bean mixture and 1/4 cup cheese. Repeat layers twice. Top with remaining tortilla. Place pan on a baking sheet., Bake, uncovered, until heated through, 15-20 minutes. Sprinkle with remaining cheese. Loosen sides from pan with a knife; remove rim from pan. Cut into 6 wedges.

8 corn tortillas

  • In a big skillet, warm the oil over medium heat; add in onion, green pepper, and garlic; saute about 5 minutes, until vegetables are soft.

A delicious layered one-dish meal with all-natural lean ground meat, browned and mixed with tomatoes, peppers, and black beans with southwest spices, layered with fluffy flour tortillas stuffed with a cream cheese and green chile mixture. Top it off with mild monterrey jack cheese and bake it to golden goodness.

1 lb ground beef
1/2 cup chopped onion
1 (15 ounce) can black beans, drained and rinse
1 (16 ounce) can stewed tomatoes (I usually use diced tomatoes)
1/2 cup enchilada sauce
1 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon pepper
6 flour tortillas
3 ounces cream cheese, softened
1 (4 ounce) can diced green chilies, drained
1 cup shredded monterey jack cheese

Steps:

  • Brown ground beef and onions in large skillet; drain fat. Put stewed tomatoes into a blender and blend just long enough to break up large tomato pieces. (I skip that step with the diced tomatoes.) Add to skillet with meat. Stir in black beans, enchilada sauce, chili powder, cumin and pepper. Bring to a boil, cover, and simmer about 10 minutes. Remove from heat and let cool.
  • Spread one side of tortilla with cream cheese, topping with green chiles. Fold tortillas in half over cream cheese. Pour half of the cooled meat sauce into the bottom of a 7-by-11 baking dish. (We actually did two smaller ones.) Arrange the folded tortillas over the sauce, overlapping if necessary. Pour the remaining sauce over the tortillas.
  • Freeze at this point, if that's your plan. Thaw to slush state when ready to bake.
  • To serve, cover dish with foil and bake at 350 degrees for 20-30 minutes, until heated through. Uncover and sprinkle with cheese on top. Bake for 5 more minutes or until bubbly.

4 flour tortillas (10 inches)
1 tablespoon canola oil
1 large onion, diced
1 jalapeno chile, minced (remove seeds and ribs for less heat)
2 garlic cloves, minced
1/2 teaspoon ground cumin
Coarse salt and freshly ground pepper
2 cans (15 ounces each) black beans, drained and rinsed
12 ounces beer, or 1 1/2 cups water
1 package (10 ounces) frozen corn
4 scallions, thinly sliced, plus more for garnish
8 ounces cheddar cheese, shredded (2 1/2 cups)

Steps:

  • Preheat oven to 400 degrees. With a paring knife, trim tortillas to fit a 9-inch springform pan. Use the bottom of the pan as a guide. Set aside.
  • Heat oil in a large skillet over medium heat. Add onion, jalapeno, garlic, and cumin; season with salt and pepper. Cook, stirring occasionally, until softened, 5 to 7 minutes.
  • Add beans and beer, and bring to a boil. Reduce heat to medium; simmer until liquid has almost evaporated, 8 to 10 minutes. Stir in corn and scallions, and remove from heat. Taste and adjust for seasoning.
  • Fit a trimmed tortilla in bottom of springform pan; layer with 1/4 of the beans and 1/2 cup of cheese. Repeat three times, using 1 cup cheese on top layer. Bake until cheese melts, 20 to 25 minutes. Remove side of pan; sprinkle pie with scallions. To serve, slice into wedges.
