BLACK BEAN SLOPPY JOES
Fresh onions, bell peppers, black beans, and tomato sauce come together in a fresher, healthier, version of my favorite sandwich .

Steps:
- Saute onion & peppers in few tablespoons of water or veg broth until softened.
- Add garlic and continue sautéing until fragrant - about 1 minute.
- Rinse and drain beans. Mash with potato masher or fork and add to veggie pot
- Add tomato sauce and paste and stir to combine
- Add spices, adjusting to taste as necessary
- Serve on buns, toast, potatoes, rice, or pasta

- In a large skillet, heat the olive oil over medium heat. When hot, add the onion and garlic, stirring frequently, and sauté until the onions are translucent.
- Add the black beans, green pepper, and red pepper and cook for 5 minutes (until the peppers have softened). Add the remaining ingredients and stir well. Cook for 10 minutes, stirring occasionally, until the sauce is hot. Turn off heat and let rest for 5 minutes before serving.
- Serve on hamburger buns.

BLACK BEAN SALSA
This is a wonderful salsa!! It is full of black beans, corn, tomatoes, and onion. I can never make enough when I have a party!! Chill 24 hours before serving if you have time!! Serve with tortilla chips.

- In a large bowl, mix together black beans, Mexican-style corn, diced tomatoes with green chile peppers, tomatoes and green onion stalks. Garnish with desired amount of cilantro leaves. Chill in the refrigerator at least 8 hours, or overnight, before serving.

TEX-MEX SLOPPY JOES
Steps:
- In a large skillet add the beef and onions, cooking well, breaking it apart but leaving some chunks for 5-6 minutes, then remove from the pan.
- Add in the canola oil, red bell pepper, green bell pepper, corn and black beans and cook for 5-6 minutes, stirring often until the bell peppers are softened.
- Add in the cumin, beef broth, tomato sauce, salsa, taco seasoning and ketchup, cooking until the sauce starts to evaporate and the mixture becomes "sloppy" (about 5-6 minutes).
- Spoon over the mixture and top with shredded cheddar cheese.

SPICY BEAN AND CORN SALSA SIDE
Our whole family loves this quick and easy side dish. I serve it with tacos, sloppy joes, or picnic meals... Great for potlucks because you serve it cold. Easily adjusted to your individual taste by using your favorite salsa. I often double this for church potlucks or company - it makes a lot to serve as a side and stretch a meal. I usually skip the onions and peppers when making it for guests. I rated this myself for ease and because it is a go-to recipe in my house.
