MOLE BLACK BEAN SOUP WITH DARK CHOCOLATE



Mole Black Bean Soup with Dark Chocolate image

1 Pieces of Red onion
4 Pieces of Garlic cloves
1 Pieces of Red pepper
2 Pieces of Tomatoes
145 Grams of Sweet corn kernels
240 Grams of Black beans
1 Tbsp of Olive oil
2 Grams of Cumin powder
2 Grams of Coriander powder
2 Grams of Smoked paprika powder
2 Grams of Chipotle powder
700 ML of Water
1 Pieces of Vegetable stock cube
20 ML of Maple syrup
40 Grams of Dark chocolate
1 Tsp of Salt
1 Tsp of Black pepper
1 Pieces of Avocado
1 Pieces of Lime
15 Grams of Fresh coriander
80 Grams of Nachos
60 Grams of Mild tomato salsa

Steps:

  • Peel and chop the onion and garlic. Chop the red bell pepper and tomatoes. Drain and rinse the sweet corn kernels. Rinse and drain the black beans.
  • Heat a large soup pot over a medium heat with a drizzle of oil. Fry the onion, garlic and bell pepper for 5 min. Add the tomatoes, cumin, coriander powder, smoked paprika and a pinch of chipotle powder (spicy!), and cook for 2 min further.
  • Add the measured water, stock cube, maple syrup, black beans and sweet corn kernels. Bring to a boil and simmer, covered, for 10-15 min.
  • After 10-15 min, crumble the dark chocolate into the soup and let it melt. Season the soup with salt and black pepper to taste. Cut the avocado in half and remove its stone. Scoop the avocado out of its skin using a spoon, then slice it. Juice the limes. Chop the coriander. Have the nachos and salsa at the ready.
  • Divide the soup among bowls. Season with lime juice. Top with the sliced avocado, nachos, tomato salsa and chopped fresh coriander.

Creamy Black Bean Soup image

This is an easy and forgiving recipe, so you can play around with it a lot. There are many variations all over Mexico: some with cream or milk, others with chicken broth or without it. Some also use dried peppers or fresh peppers.

2 small tomatoes (or one large tomato (about 8 ounces total weight))
1/3 cup white onion (chopped)
1 garlic clove
1 Tablespoon Olive oil
2 Cups cooked black beans (with a little of its cooking broth)
2 Epazote leaves (if available)
Salt & Ground Black Pepper to taste
1/2- cup chicken or vegetable broth.
1 Avocado (diced)
4 to rtillas cut into thin strips and fried.
1 Canned Chipotle pepper
1/2 cup crumbled Queso Fresco

Steps:

  • Chop the tomatoes and place in a blender along with the chopped onion and garlic. Process until you have a smooth sauce.
  • Heat the olive oil in a medium saucepan and then pour the tomato sauce.
  • Cook the tomato sauce over medium-high heat for about 7-8 minutes until it starts to boil.
  • While the tomato sauce is cooking, puree the black beans and their broth in a blender or food processor until they have a fine texture.
  • Pour the black bean puree into the saucepan and stir, mixing well. The puree has to have a very fine, silky texture. If you prefer, pass through a strainer to obtain the best results. If the soup is too thick, add the chicken broth a tablespoon at the time to get a creamy texture. Don't pour it all at once, since it could result in a watery soup. Season soup with salt and pepper.
  • Simmer the soup, stirring frequently for about 15 minutes. Serve warm with your choice of toppings.

3 cans (15 ounces each) black beans, rinsed and drained, divided
3 celery ribs with leaves, chopped
1 large onion, chopped
1 medium sweet red pepper, chopped
1 jalapeno pepper, seeded and chopped
2 tablespoons olive oil
4 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth or vegetable broth
1 can (14-1/2 ounces) diced tomatoes with green peppers and onions, undrained
3 teaspoons ground cumin
1-1/2 teaspoons ground coriander
1 teaspoon Louisiana-style hot sauce
1/4 teaspoon pepper
1 bay leaf
1 teaspoon lime juice
1/2 cup reduced-fat sour cream
1/4 cup chopped green onions

Steps:

  • In a small bowl, mash 1 can black beans; set aside. In a large saucepan, saute the celery, onion, red pepper and jalapeno in oil until tender. Add garlic; cook 1 minute longer. , Stir in the broth, tomatoes, cumin, coriander, hot sauce, pepper, bay leaf, mashed black beans and remaining whole beans. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. , Discard bay leaf. Stir in lime juice. Garnish each serving with 1 tablespoon sour cream and 1-1/2 teaspoons green onion.

This soup is a favorite pantry meal for my family. Easy, easy, easy to make and nutritious. I got the recipe from the back of a soup can but have improvised this soup many times. Feel free to adjust seasonings as you like.

Number Of Ingredients 9

3 tablespoons olive oil
1 medium onion, chopped
1 tablespoon ground cumin
2 -3 cloves garlic
2 (14 1/2 ounce) cans black beans
2 cups chicken broth or 2 cups vegetable broth
salt and pepper
1 small red onion, chopped fine
1/4 cup cilantro, coarsely chopped or finely chopped (whatever you prefer)

Steps:

  • Saute onion in olive oil.
  • When onion becomes translucent, add cumin.
  • Cook 30 seconds, then add garlic and cook for another 30 to 60 seconds.
  • Add 1 can black beans and 2 cups vegetable broth.
  • Bring to a simmer, stirring occasionally.
  • Turn off heat.
  • Using a hand blender, blend the ingredients in the pot, or transfer to a blender.
  • Add the second can of beans to the pot along with blended ingredients and bring to a simmer.
  • Serve soup with bowls of red onion and cilantro for garnish.
  • I add a bit of cilantro to the pot, too.
  • Can be doubled or frozen.
