7 Bean Salad with Chimichurri image

7 Bean Salad with Chimichurri Dressing ~ why should steak get all the perks? My healthy bean salad takes full advantage of the jolt of flavor from this garlicky herb sauce.

Number Of Ingredients 12

1 batch chimichurri sauce (you will have extra sauce)
1 cup cooked or canned black beans
1 cup cooked or canned blackeyed peas
1 cup cooked or canned red kidney beans
1 cup cooked or canned small white beans
1 cup cooked or canned garbanzo beans
1 cup cooked or canned aduki beans
1 cup frozen edamame beans, defrosted
1/2 cup finely chopped red onion
1/2 cup finely chopped colorful bell peppers
1/2 cup finely chopped tomatoes
salt and fresh cracked black pepper to taste

Steps:

  • Add all the salad ingredients to a large bowl and toss with enough chimichurri sauce to moisten everything, but not drown it.
  • Chill the salad, covered, until ready to serve. Toss with a little more dressing before serving if needed.
  • The salad will keep several days in the refrigerator.

This simple lunchbox-friendly salad of storecupboard pulses is dressed with chimichurri- a South American parsley, coriander and chilli sauce

400g can black bean , drained and rinsed
1 tomato , roughly chopped
¼ red onion , roughly chopped
½ avocado , chopped
50g feta cheese , crumbled into chunks
large handful coriander
large handful parsley
2 tbsp sherry vinegar
2 tbsp extra virgin olive oil
½ garlic clove , roughly chopped
¼ tsp chilli powder
¼ tsp ground cumin

Steps:

  • Whizz all the chimichurri ingredients together in a blender or the small bowl of a food processor, until combined. Season to taste and set aside.
  • In a bowl or plastic container toss together all the salad ingredients. Drizzle over the dressing, or keep it separate in a small jar to stir through the salad just before eating.

1 beef flank steak (1 pound)
4 teaspoons chili powder
1/2 teaspoon salt
1 package (8.8 ounces) ready-to-serve brown rice
1 can (15 ounces) black beans, rinsed and drained
1/2 cup salsa verde
Minced fresh cilantro, optional

Steps:

  • Rub steak with chili powder and salt. Grill, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°)., Heat rice according to package directions. Transfer rice to a small bowl; stir in beans and salsa. Slice steak thinly across the grain; serve with bean salad. If desired, sprinkle with cilantro.

  • Cook the cubed Sweet Potato and Corn: Bring to a boil in a medium saucepan then keep boiling for 5 minutes. Drain, cool for 2 minutes and use.
