BLACK BEAN AND SPINACH PIE
The black beans in this pie are well hidden! I used light cream cheese and fat fee sour cream. We enjoyed it with some salsa and a dollop of sour cream.

BLACK BEAN AND SPINACH LASAGNA
Not sure where this came from originally but I made a bunch of changes; I enjoyed it so much I decided to share it here. If you can't find refried black beans, use another can of plain black beans and mash them with a potato masher or in a food processor.

- Preheat oven to 350°F
- Lightly grease a 13 x 9 inch baking pan and set aside.
- Bring a large pot of lightly salted water to a boil and cook noodles until al dente, according to package directions.
- While water is coming to a boil, in a small bowl, blend the ricotta, spinach, basil, oregano, salt, pepper and egg.
- Spray a large skillet with cooking spray or use a tsp or so of oil and heat over medium heat.
- Saute onion, bell pepper, and garlic until tender.
- Add red pepper flakes if using and cook for 1 minute.
- Stir in beans, refried beans, and tomato sauce and cook until heated through.
- Spread about 1/4 cup of sauce on bottom of baking dish and top with three lasagna noodles. Layer ricotta mixture, sauce and mozzarella cheese; repeat two more times, ending with cheese. Top with parmesan cheese.
- Bake 45 minutes. Let stand 10 minutes before serving.

BLACK BEAN PIE
Serve this hearty dish with a dollop of cilantro laden sour cream, some Spanish rice, and a mixed green salad. The ingredients for this recipe make a very small 7 inch pie. If you are using a normal sized pan, you might want to increase the amount of black beans to 2 cans, and adjust only the seasonings accordingly. The chopped onion and peppers can remain the same.

- Heat oven to 325 degrees.
- In a saucepan over medium heat, add oil and saute onion, green pepper until tender.
- Add beans, salsa, red pepper, chili powder, cayenne and salt and pepper.
- Reduce heat to low and simmer for 15 minutes.
- Spoon half of the mixture into one of the pie crusts lining a pie plate.
- Cover with half of the cheese.
- Spoon remaining bean mix on top and then the rest of the cheese.
- Cover with second pie crust.
- Bake for 1 hour.

- Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 8 to 10 minutes, or until al dente; drain.
- In a large saucepan over medium heat, bring the vegetable broth to a boil. Reduce heat and mix in spinach, onion, garlic, cayenne pepper, salt, and pepper. Stir in the black beans and broccoli. Continue to cook and stir 5 to 10 minutes.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, mix the beans, green chiles, tomatoes, onion and garlic. Line 9 inch pie pan with one pie crust. Pour 1/4 of the bean mixture into crust and spread evenly. - Add the beans to a mixing bowl; mash with a potato masher until fairly smooth.
- Add in the pasta sauce, cumin, and garlic; stir to combine.
- In another mixing bowl, add the ricotta, spinach, eggs, and cilantro; sprinkle with salt and pepper to taste; stir until just combined; Spread 1/3 of the bean mixture over the bottom of a 13x9 inch casserole dish (glass or ceramic).

- Preheat oven to 400°. In a large skillet, heat oil over medium-high heat. Add green pepper, onion, cumin and pepper; cook and stir until vegetables are tender.
