FRIED BLACK BEAN FILLED TORTILLAS (PANUCHOS)

20 corn tortillas
1/2 cup plus 2 tablespoons vegetable oil
1 can refried black beans

Steps:

  • Using a 5-inch round cookie cutter, cut a smaller tortilla out of each tortilla. Save the scraps for making chilaquiles, tortilla soup, etc. Heat 2 tablespoons of vegetable oil in a medium saute pan over medium-high heat. Then add the beans to warm and soften, about 5 minutes, stirring continuously to avoid burning. Turn the heat off and reserve.
  • In a large saute pan, heat the remaining 1/2 cup of vegetable oil to 350 degrees F. While the oil is heating, form the panuchos. Start by spreading 1 tablespoon of warmed beans on the surface of the tortilla. Stack the second tortilla over it pressing on the edges to seal. Remove the excess beans on the side of the panucho. Working in batches, fry the panuchos until golden in color, about 3 minutes per side. Remove from the pan and drain on a paper-towel-lined plate.

1 pinch cayenne pepper
1 pound lean ground turkey
1 dash garlic powder
1 (15 ounce) can black beans, drained and rinsed
1 cup water
1 large green bell pepper, diced
1 (4 ounce) can chopped green chiles
6 tablespoons taco seasoning mix
1 cup cooked brown rice

Steps:

  • Heat a large skillet over medium-high heat. Saute onion with sea salt and cayenne pepper until softened, about 7 minutes. Add ground turkey and garlic powder; cook and stir until turkey is no longer pink, about 5 minutes. Add black beans, water, green bell pepper, green chiles, and taco seasoning. Mix well. Reduce heat to low and let simmer with the lid on until flavors blend, 10 to 15 minutes.
  • Stir cooked rice into the turkey mixture; simmer until heated through, 3 to 5 minutes. Remove from heat and let stand for 10 minutes.

1/2 cup chopped green onion
1/2 teaspoon chili powder
2 teaspoons cumin powder
1 (8 ounce) can tomato sauce
1 (16 ounce) can black beans, rinsed and drained
1 tablespoon chopped cilantro
salt and pepper
12 soft corn tortillas
8 ounces low-fat cheddar cheese, shredded, reserve 2 tablespoons (I used fat free)

Steps:

  • Preheat oven to 350* F.
  • Spray a large skillet with cooking spray.
  • Add garlic, onions, tomato, green onion, cumin, and chili powder.
  • Cook on medium heat until onion is tender.
  • Add tomato sauce and cook 5 minutes more.
  • Stir in beans, cilantro, salt and pepper.
  • Spray a 9 inch square baking dish with cooking spray.
  • Layer 4 tortillas, 1/3 cheese, and 1/3 of the bean mixture; repeat 2 more times.
  • Top with reserved 2 tablespoons of cheese.
  • Bake 20 minutes, covered, then 10 minutes uncovered or until bubbly.

1 1/2 cups sliced onions (I use red)
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon black pepper
1 poblano chile, seeded and chopped
1 (15 ounce) can black beans, rinsed and drained
1 cup fresh mango, cubed (or sliced from a jar)
1 avocado, cubed
4 (8 inch) flour tortillas
cooking spray (or olive oil and a pastry brush)
3/4 cup shredded cheddar cheese

Steps:

  • Preheat broiler.
  • Heat oil in a large nonstick skillet over medium-high heat. Add onion, oregano, salt, pepper, and poblano and saute 5 minutes or until onion is tender. Add beans; cook 1 minute or until heated thoroughly. Remove from heat; stir in mango and avocado.
  • Place flour tortillas on a baking sheet coated with cooking spray. Arrange about 3/4 cup bean mixture on half of each tortilla, leaving a 1/2 inch border. Sprinkle with cheese and fold each tortilla in half. Lightly coat tortillas with cooking spray (or olive oil). Broil 3 minutes or until cheddar cheese melts.

There are many kinds of tacos, some piled high and overstuffed and some more minimal, meant to be more a snack than a meal. These little tacos are in the second category, similar to what you might find in a Mexican market for a quick bite. Savory black beans and roasted poblano chiles make a satisfying vegetarian version. Fresh soft corn tortillas, hot off the griddle, are essential.

1/2 pound black beans, rinsed and soaked 4 to 6 hours, or overnight if possible
1 small onion, halved
1 bay leaf
1 large sprig epazote (optional)
1 teaspoon salt
4 poblano chiles
Soft corn tortillas
1/2 pound fresh mozzarella or Oaxacan-style string cheese, shredded
1/2 pound queso fresco, available in Latino groceries
8 ounces crème fraîche or Mexican crema

Steps:

  • Drain beans, put in medium pot, add water to cover and bring to a boil over hight heat. Add onion, bay leaf, epazote and salt and reduce heat to a gentle simmer. Cook for about 1 hour, longer if necessary, adding water occasionally if liquid falls below surface of beans. When beans are tender, taste and adjust salt. Keep beans warm in their broth.
  • Meanwhile, roast poblano chiles over a charcoal grill, under the broiler or directly on a gas stovetop burners until skins are completely blackened and blistered. Set chiles aside to cool, then split lengthwise. Scrape away skins and seeds with a paring knife. Cut cleaned chiles into 1/2-inch ribbons, transfer to small bowl and season lightly with salt.
  • To serve, warm the tortillas on a hot griddle or cast iron pan over a burner. Put 2 warm tortillas side by side on a small plate. With a slotted spoon, place 2 tablespoons beans on each tortilla. Top with a few shreds of mozzarella and 2 or 3 strips of poblano. Crumble a little queso fresco and drizzle about 1 teaspoon crème fraîche on each taco.

  • Meanwhile, combine onion and oil in large nonstick skillet. Stir over medium-high heat until onion is golden, about 6 minutes. Add cumin and chili powder; stir 20 seconds. Add bell pepper, corn and carrot; sauté until almost tender, about 5 minutes. Add beans, tomatoes and jalapeño; bring to simmer. Season with salt and pepper. remove from heat.
