MANGO, CORN, AND BLACK BEAN SALSA
My neighbor introduced me to this cool dish that can stand alone as an easy side dish or tastes great with chicken made up as fajitas. This is a recipe that can be altered to use up other fruits you have on hand. I have used a mix of mangoes and peaches to make this, and it would probably taste great with pineapple or other tart fruits, but if you like mangoes as much as I do, you will want to let that flavor dominate. Optional to chill before serving.

SPICY MANGO HABANERO SALSA WITH BLACK BEANS
A sweet and spicy mango salsa with black beans and fresh herbs. It comes together in a matter of minutes and pairs perfectly with your favorite tortilla chips or spooned on top of grilled meats and seafood.

Steps:
- Chop mangoes into small cubes, using the instructions in the post above as a guide, and place them into a medium-sized mixing bowl.
- Add cumin, chili powder, salt, and pepper to the chopped mango. Stir and allow the salt to extract the mango's juices while you prepare the rest of the ingredients.
- Carefully open the can of black beans, drain it, and rinse it until the water runs clear. Add them to the mango bowl.
- Finely chop, mince, and dice the rest of the ingredients, adding them to the bowl as well. The finer you dice, the more it'll look and feel like a blended salsa.The larger you dice, the more it'll look and feel like a chunky pico de gallo.
- Juice the lime over the bowl and mix to combine everything.
- Allow the salsa to sit in the refrigerator for at least 15 minutes before serving so the flavors can mix together. Serve with tortilla chips or spooned on top of grilled chicken, fish, or steak.

SUPER EASY BLACK BEAN, CORN, AND ZUCCHINI SALSA
I love black bean and corn salsa, but almost everyone makes it with onions (which I won't eat raw). I found recipe#117812 and ran with it for this salsa. The key is having good salsa. If you don't like it hot omit the pepper and use mild salsa. Experiment with jalapeno, serrano, habanero, the possibilities are endless. If you do, use hot salsa and add peppers one at a time until desired heat. This is also great with 3/4 cup Mexican cheese blend. I hope you enjoy. TIP:Always rinse canned beans, it drastically reduces the sodium.

- Mix all the vegetables, adding the avocado last or add avocado as you serve it to avoid browning.
- Combine lime juice, salt, olive oil, red wine vinegar, and pepper in a small bowl with a whisk.

BLACK BEAN AND HABANERO SALSA
Steps:
- Finely chop the onion and add to a large bowl, or the container you will be storing the salsa in. Add half the lime juice to the onions. Rough chop the tomatoes and add to the bowl. Very finely chop the habaneros and add to the bowl. Remove the seeds for less heat. Add salt to taste. Add black beans. *Optional* Cut the avocados into chunks roughly the size of the tomatoes and add to the bowl or add the corn. Add the other half of the lime juice and stir. Refrigerate or serve immediately.

- Make sure beans and potato are cooked. I cooked the potato in the microwave but the oven would work too. Just don’t boil because that brings in too much moisture.
- While farro is cooking, make avocado slaw by mashing avocado and mixing well with cabbage and salt.

- Place the finely chopped red onion in a strainer and hold in the sink under running hot water for about 1 or 2 minutes. This will take the strong “bite” out of the onions. Alternatively, place onion in a small bowl filled with ice water for about 10 minutes and then drain.
- Combine the black beans, mango, onion, jalapeño, juice of 1 lime, honey, olive oil, cilantro, and a pinch of Kosher salt in a bowl. Refrigerate for at least 30 minutes to allow flavors to meld, although longer (up to several hours) is better. Before serving, stir to redistribute juices and if needed, add the juice of the other lime. Also at this point, if the jalapeño is a really hot one and the salsa is a bit too spicy, I add a little more honey to balance the heat.
