1 cup chickpeas dry or two-15 ounce cans chick peas, drained
1 tbsp olive oil (1/4 cup water)
1 medium onion minced
2 cloves garlic minced
1/4 cup red bell pepper chopped
1 medium tomato chopped
1 carrot diced
1 tsp dried parsley
1/2 tsp dried basil
1/2 tsp dried oregano
1 tbsp tomato paste
2 cups liquid from boiled chickpeas or vegetable broth
1/2 tsp sea salt
1/4 tsp Cayenne pepper

Steps:

  • If you are using dried chickpeas, sort, wash and soak them overnight. The next day, drain and rinse chickpeas.
  • Cover with water about 2 inches above chickpeas and bring to boil on medium heat.
  • Lower heat to simmer and cook until tender, about 1 hour.
  • Drain chickpeas and reserve 2 cups of liquid, set aside.
  • If using canned chickpeas, start at step 5.
  • Heat oil or water in a large saucepan on medium-high heat. Add onions and cook until soft, about 3 minutes.
  • Add garlic and cook for 30 seconds stirring. Add bell pepper, tomatoes, carrots, chickpeas, parsley, basil, and oregano.
  • Add tomato paste and vegetable broth or reserved chickpeas water (aquafaba), cover and bring to boil. Reduce to a simmer for 20-30 minutes or until thickened.
  • Mash some of the chickpeas, with the back of a fork to thicken the stew.
  • Check the seasoning, add cayenne pepper and extra salt and pepper as needed.
  • Delicious served with brown rice.

The recipe calls for baking, but the ingredients can also be added to a slow cooker and cooked on Low for 7 hours. We serve this with cheese, tortilla chips, sour cream, salsa, black olives, and guacamole.

2 chicken breasts, cut into 2 inch pieces
1 (16 ounce) can stewed tomatoes, undrained

  • Preheat oven to 350 degrees F (175 degrees C).

160g new potatoes ½ tablespoon olive oil 1 small onion, chopped 1 clove garlic, crushed 1 teaspoon paprika 1 x 400g can chopped tomatoes ½ teaspoon dried mixed herbs 1 large carrot, peeled and chopped into thin batons Half a 400g can chickpeas, rinsed and drained Half a 400g can cannellini beans, rinsed and drained Freshly ground black pepper Parsley, chopped, to garnish

Steps:

  • Place the potatoes in a small saucepan, cover with cold water, bring to the boil and simmer for 5 minutes. Meanwhile, in a medium saucepan, measure out the olive oil and put on a medium heat. Add the chopped onion and cook, stirring, until transparent. Add the garlic and paprika and cook for 1 minute, stirring. Add the chopped tomatoes, mixed herbs and baby potatoes and stir. Add half a can of water if required, and bring to simmering point. Cover and simmer for 10 minutes. Add the carrots, chickpeas, beans and some black pepper. Bring back to simmering point and simmer with the lid off for a further 8 minutes, until the carrots and potatoes are just tender and the sauce has thickened slightly, stirring occasionally. Taste the sauce and season with extra black pepper if necessary. Serve on warmed plates, ensuring the potatoes are evenly divided between each portion, and garnish. Top tip: change the type of bean depending on which varieties are available locally. Experiment and find your favourite!

1 large onion, chopped
1 small green pepper, chopped
1 tablespoon canola oil
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup salsa
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 cans (15 ounces each) black beans, rinsed and drained
3 cups cubed cooked chicken breast
8 corn tortillas (6 inches)
1-1/2 cups shredded reduced-fat Monterey Jack or Mexican cheese blend, divided
Fat-free sour cream, chopped green onions and sliced ripe olives, optional

Steps:

  • In a large saucepan, saute onion and green pepper in oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, salsa, cumin, salt, oregano and pepper. Add beans and chicken; heat through., Spread a third of the mixture into a 13x9-in. baking dish coated with cooking spray. Layer with four tortillas, a third of the chicken mixture and 1 cup cheese. 1 large onion (chopped)
1 large green pepper (chopped)
2 cloves garlic (chopped)
1 bottle (15oz) chunky salsa
1 tablespoon cumin
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon red pepper flakes
1 pound boneless, skinless chicken breast meat (chopped into bite size pieces)
2 cans black beans (drained and rinsed)
1 package 8-10 flour tortillas
4 cups shredded Mexican blend cheese
1 can 28 oz diced tomatoes

Steps:

  • Saute onion, green pepper and garlic in olive oil for about 5 minutes. Add cumin, salt, pepper, red pepper flakes, beans, salsa, tomatoes and chicken. Simmer on medium to low heat for 10 minutes.
  • Spoon some of this mixture into a 13 x 9 baking pan or two 8x8 pans.
  • Cut the tortillas in half.
  • Line the pan with the tortillas by placing the flat cut side against the sides allowing the center to overlap.
  • Sprinkle about 1/3 of the cheese on top of the tortilla layer.
  • Spoon half of the chicken and bean mixture on top.
  • Place another layer of tortillas on next followed by cheese and the remaining chicken & beans.
  • Finish with the remaining cheese
  • Cover with foil and cook for 35 minutes in a 350 degree oven.
  • Serve with chopped lettuce, tomatoes and sour cream.

This is a quick and simple vegetarian curry with lots of flavor, tons of protein, and not alot of fat. I recommend using a real flavorful, mild curry powder, or one that you've mixed yourself. My "Simple, Sweet and Mild Curry Blend" works well with this dish. However,if you do like heat, feel free to add some cayenne or crushed red pepper to suit your taste.

1 -2 teaspoon olive oil
1 cup chopped onion (scallion work well too)
1 tablespoon minced ginger
2 -3 teaspoons curry powder (for this recipe, I like a milder curry powder that has a bit of fennel seed)
1 (14 1/2 ounce) can diced tomatoes, undrained
salt
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can chickpeas, rinsed and drained
1/3 cup chopped fresh cilantro or 1/3 cup parsley
1 tablespoon fresh lemon juice

Steps:

  • Heat oil in a large, non-stick skillet over medium heat.
  • Add onion and ginger and saute about 3 minutes, or until tender.
  • Add curry powder and stir to coat onions evenly.
  • Add tomatoes with their juices and cook 1-2 minutes or until mixture seems slightly thickened, stirring well.
  • Add black beans, chickpeas and salt to taste.
  • Stir to coat beans evenly.
  • Cover, reduce heat and simmer for about 5 minutes or until chickpeas are heated through.
  • Turn off heat, and stir in fresh cilantro (or parsley), and lemon juice.
  • Serve warm.
  • This dish goes nicely over some jasmine or basmati rice.

1 medium onion, finely chopped
1 small birds eye chile, deseeded and finely chopped
2 garlic cloves, crushed
2 (400 g) cans tomatoes
2 cups vegetable stock
1 cup dried black beans, soaked overnight and drained
1/2 cup canned chick-peas, drained
2 zucchini, finely sliced
1 tablespoon olive oil

Steps:

  • Heat the oil in a large saucepan. Add the garlic and onion and chilli and sauté until soft.
  • Add all the other ingredients (excluding the chickpeas and zucchini) and bring to the boil. Reduce the heat to simmer and partially cover and cook for 60 minutes or until the beans are tender. (This can vary depending on the age of the beans).
  • Once the beans are tender add the chickpeas and zucchini and cook for a further 10 - 15 minutes.

1 tablespoon olive oil
1 clove garlic, minced
1 cup uncooked basmati rice
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 teaspoon ground cayenne pepper
1 quart chicken stock
1 ½ pounds ground turkey
2 (15 ounce) cans garbanzo beans (chickpeas), drained and rinsed
2 (15 ounce) cans black beans, drained and rinsed
1 bunch chopped fresh cilantro
1 bunch chopped fresh parsley
¼ cup pine nuts
salt and ground black pepper to taste

Steps:

  • Heat the olive oil in a large saucepan over medium heat. Stir in garlic, and cook 1 minute. Stir in rice, cumin, coriander, turmeric, and cayenne pepper. Cook and stir 5 minutes, then pour in chicken stock. Bring to a boil. Reduce heat to low, cover, and simmer 20 minutes.
  • Place the turkey in a skillet over medium heat, and cook until evenly brown.
  • Gently mix cooked turkey, garbanzo beans, black beans, cilantro, parsley, and pine nuts into the cooked rice. Season with salt and pepper.
