CHORIZO & BLACK BEAN SMOTHERED BURRITOS

Steps:
- Preheat oven to 400 degrees. Line a 13x9 cake pan with foil or spray liberally with non-stick cooking spray.
- In a skillet brown chorizo and onion together until cooked through, stir in black beans and green chiles and heat through. If you have chorizo & onion in the fridge like I sometimes do when I cook ahead, take it out and microwave it with the beans & chiles until warm
- Stir in 1/2 C Cheddar Cheese
- Add about 2/3 C Mixture to an XL Tortilla - less if you use smaller. Top with a sprinkle of cheese (1/2 cup total - reserving 1/2 cup for the end) and roll up burrito style.
- Place in your prepared 13x9 cake pan and tuck them together. You should get about 6 big ones out of this mixture.
- Bake, uncovered, for about 20-25 minutes until the tortillas get a bit crispy - pull from oven and pour over the enchilada sauce and sprinkle remaining 1/2 C cheese on top and sprinkle with a few green onions. Slide back into the oven for about 15 more minutes.
- Enjoy with lettuce, tomato salsa, and sour cream!

- Heat oil and cook onion and bell pepper for 2 minutes, add beans, cook 3 minutes longer.
- Cut cream cheese into cubes and add to skillet with salt. When cheese melts, add salsa and cook for 2 minutes.
- Stir in cilantro.
- Serve in warm tortillas.

- Heat a large skillet to medium heat, add the bell peppers, onion, beans, corn, cilantro, butter, juice of the lime, and spices, saute for 2-4 minutes on high. Remove from heat and set aside.
- To make the wraps, Lay tortilla flat on plate or counter, add 1/4 cup of the bean mixture, 2 tablespoons rice, 2-3 tablespoons cheese. Be sure to leave about 2-3 inches from the corners. Wrap burrito by folding over the edges. Continue this for all 8 burritos.
- After the burritos are wrapped heat a large skillet or pan, add 1 teaspoon oil, place the burritos on the skillet for 1-2 minutes on each side until they are golden and crispy. For the "ridges" use a griddle that has the ridged lines.
- Serve warm with sour cream or salsa.

- Add 2 tbsp grapeseed oil to the sauté pan and place over medium-high heat for 1 to 2 minutes. Add turkey, 1⁄2 tsp pepper, and Tabasco and brown the meat, stirring regularly until turkey is cooked through-about 6 to 7 minutes. Drain the fat from the pan, place cooked turkey on a paper towel, and set aside. Return the sauté pan to medium-high heat, add remaining oil and onions, and cook, stirring continuously, until onions are slightly translucent. Reduce heat, add peppers, tomatoes, beans, salt, and remaining pepper, and cook until peppers are soft to the touch-about 10 minutes. Add vinegar, parsley, mustard, cilantro, and cooked turkey. Heat for an additional 2 to 3 minutes. To build a burrito, lay a tortilla on a flat surface and add a sixth (3⁄4 cup) of the turkey-bean mixture to the center of the tortilla. Top with cheese, fold, and eat.
