WHOLE BLACK BASS WITH GINGER AND SCALLIONS
A whole fish, representing abundance, is almost always included on the celebratory Chinese table. Ours is flavored only lightly, with ginger and scallions, so as not to overpower the fresh taste of the fish.

Steps:
- Put oven rack in middle position and preheat oven to 400°F. Put baking dish in roasting pan.
- Rinse fish and pat dry, then rub inside and out with salt. Transfer to baking dish and sprinkle with scallion strips (white and pale green) and ginger.
- Stir together soy sauce and sugar until sugar is dissolved, then pour over fish. Add enough boiling-hot water to roasting pan to reach halfway up side of baking dish. Oil a large sheet of heavy-duty foil, then tent foil (oiled side down) over fish and tightly seal around roasting pan. Carefully transfer roasting pan to oven and bake until fish is just cooked through, 30 to 35 minutes.
- While fish bakes, cut enough scallion greens diagonally into very thin slices to measure 1/2 cup (reserve remainder for another use).
- Just before serving, remove foil from fish and sprinkle with scallion greens. Heat wok over high heat until a bead of water vaporizes instantly. Pour oil around side of wok, then tilt wok to swirl oil, coating side, and heat until smoking. Remove from heat and immediately pour oil over scallion greens and fish.
BLACK BASS WITH WARM ROSEMARY-OLIVE VINAIGRETTE
The bittersweet flavors in this quick dish pair well with roasted potatoes, creamy polenta, or cooked white beans.

Steps:
- Heat oil in a large nonstick skillet over medium-high heat. Season fish with salt and pepper and cook, skin side down, until skin is golden brown and crisp, about 5 minutes. Turn fish and add garlic, olives, and rosemary to skillet. Cook, stirring garlic, olives, and rosemary occasionally, until fish is opaque throughout, about 3 minutes.
- Add orange juice to pan and swirl to combine. Divide radicchio and fish among plates and spoon warm vinaigrette over top.
SHRIMP CACCIUCCO
Steps:
- Coat a large saucepan with extra-virgin olive oil and bring to a medium-high heat. Add the diced onion, season with salt, and cook for 3 to 4 minutes. Add the fennel and crushed red pepper and cook for another 3 to 4 minutes. Add the garlic and sweat for 1 to 2 more minutes. The veggies should look soft and wilted, be very aromatic, but not have any color. Add the white wine and cook until it has reduced by half. Stir in the tomatoes, saffron, lemon zest, bay leaf, and 1 cup of water. Taste for seasoning, and season with salt. It should not taste done but it should taste good. Bring to a boil, then reduce the heat and simmer for about 15 minutes. Taste again; it should taste really good now. Add some more salt, if needed, (it probably will). Turn off the heat and reserve.
- Coat a large skillet with olive oil and bring to a high heat. Season the shrimp generously with salt. When the oil is sizzling, add the shrimp and cook them on both sides until they turn pink, about 1 minute on each side. Remove the shrimp from the pan to a plate and reserve.
- Remove the oil from the pan and put over medium-high heat. Add the clams and the cooked tomato mixture. Cover and cook until the clams begin to open, about 5 minutes. If the tomato mixture starts to become too thick add some water. Taste to make sure it tastes good and season with some salt, if needed. Add the beans, escarole, and the cooked shrimp. Cover and cook for another 2 to 3 minutes.
- Remove the clams and shrimp from the pan to a bowl. Spoon the tomatoes and beans into 2 large bowls. Arrange the shrimp and clams on top. Garnish with the reserved fennel fronds and drizzle with extra-virgin olive oil. Call yourself a super star!
SAUTEED BLACK SEA BASS WITH CAPERS AND HERB-BUTTER SAUCE
Letting a fillet sizzle in a pan with butter, capers, and fresh herbs is one highly civilized way to get dinner on the table in less than 30 minutes. Go with sea bass, trout, or snapper-or any flaky white fish with a thin skin that will get super-crispy in the pan.

- Pat fillets dry; slash skin side of each crosswise in 2-inch intervals. Season generously with salt and pepper. Sprinkle with flour to evenly coat, shaking off excess.
- Heat oil in a large skillet over medium-high. When oil shimmers and wisps of smoke rise from skillet, add fish in a single layer, skin-sides down. Reduce heat to medium; cook, undisturbed,until skin is crisp and flesh is opaque halfway up sides and almost cooked through, 5 to 7minutes, depending on thickness.
- Flip and continue cooking until just cooked through, 1 to 2 minutes more. Transfer to plates, skin-sides up. Add vermouth to skillet; boil until mostly evaporated, 1 to 2 minutes. Add capers and butter; cook until butter simmers and sauce thickens slightly, about 2 minutes. Remove from heat; stir in herbs. Return fish to skillet, skin-side up; spoon butter sauce over top. Serve immediately.
BLACK BASS WITH PIPERADE AND POLENTA
Steps:
- Coat a large saute pan with olive oil and bring to a high heat. Coat the bottom of another smaller saute pan with olive oil.
- Sprinkle the fish with salt and pepper on both sides. When the large saute pan is screaming hot but not quite smoking, lay the fish fillets in the pan skin-side down. Place the small saute pan directly on top of the fillets; this applies gentle pressure to the fish and forces the skin to have contact with the pan and will create crispy skin. Cook the fish for 2 to 3 minutes, and then remove the top pan. Shake the pan a little to unstick the fish. Use a fish spatula to flip the fillets, and cook until the flesh is opaque.
- Place a dollop of the Soft Parmesan Polenta on the bottom of each plate, top with some Yellow and Red Pepper Piperade and place a piece of fish on top. Finish with a drizzle of extra-virgin olive oil.
- In a medium-size saucepan, bring the milk, 2 cups water and bay leaf to a boil. Season generously with salt, almost to the point of over seasoning. How do you know that you are there? TASTE IT! When it has reached a boil, slowly whisk in the polenta in small sprinkles. Once all of the polenta has been incorporated, reduce the heat to medium and immediately switch over to stirring with a wooden spoon. Cook the polenta until it begins to pull away from the pan, adding water to loosen it up if it becomes too thick.
- When the polenta is thoroughly cooked, it should look creamy and not feel gritty on your tongue. Remove it from the heat and stir in the Parmesan and mascarpone.
- In a large saute pan, add enough olive oil to coat the bottom and place over medium-high heat. Add the garlic and cook until aromatic. Add the onions and continue to saute until slightly caramelized, 6 to 7 minutes. Add the plum tomatoes and diced peppers, season with salt and cook until slightly softened, about 2 minutes. Add the crushed tomatoes, chile flakes and pimenton and cook until the sauce thickens, about 5 minutes. Add the sherry vinegar and cook for an additional minute. Taste and season.
- Remove from the heat and stir in the chopped almonds and chives. Finish with a drizzle of olive oil.
BLACK BASS AND GAMBERI CACCIUCCO
Steps:
- For the polenta: Add the milk, cayenne, bay leaf and 1 cup water to a saucepot and heat until just barely a simmer. Stir in the polenta and cook, stirring, until thickened, about 20 minutes. Stir in the mascarpone and Parmesan. Spray an 8-by-8-inch baking dish with cooking spray and press the polenta in the bottom of the dish. Cover with plastic wrap and place in the fridge to set, about 1 hour.
- For the cacciucco: Add the wine, half of the chopped fennel (reserve the fronds for garnish), half of the chopped onions, a pinch of red pepper flakes and some salt to a large stockpot (about 8 quarts). Bring to a boil, then reduce to a simmer. Cook until the wine is reduced by one-half, then fill the pot halfway with water. Squish in the tomatoes with your hands and add them to the pot with their juices. Add the shrimp shells and cod carcass. Season with another pinch of red pepper flakes and some salt. Bring to a simmer and simmer for 30 minutes. Strain and reserve this tomato base.
- In a separate saucepot, bring some water to a boil; prepare an ice bath. Blanch the haricot verts in the boiling water, then shock in the ice bath. Reserve.
- In a large high-sided skillet, heat 1 tablespoon olive oil over medium heat. Add the remaining chopped fennel and onions and saute until translucent. Add the garlic and saute for a minute more. Add a ladle of the tomato base to the skillet and bring to a simmer. Add the clams, saffron and fennel pollen, cover and cook. Remove the clams from the skillet as they open and set aside. Add another 2 ladles of the tomato base and the lemon juice to the skillet and keep warm.
- Season the bass fillets with salt. In a nonstick pan, add the remaining tablespoon olive oil and heat over medium heat. Place the fillets in the pan skin-side down. Pan-fry the fish 2 minutes per side and remove to a baking sheet skin-side up. Add the shrimp and haricot verts with a pinch of salt and red pepper flakes to the pan and cook until the shrimp are pink.
- Add the clams back to the skillet with the tomato base.
- Remove the polenta from the fridge and flip it out onto a cutting board. Using a 3-inch round cutter, cut out rounds and place 1 in the bottom of each of 4 serving bowls. Top each with some haricot verts, a bass fillet, a couple of big shrimp and 2 to 3 clams. Then ladle about 1/2 cup of broth over top. Garnish with fennel fronds and a pinch of fennel pollen.
