BLACK AND WHITE COOKIES
From the cooks at America's Test Kitchen, here is a carefully tested and surprisingly easy homemade recipe for New York City style black and white cookies.

- Preheat oven to 350°F (180°C). Line 2 baking sheets with parchment paper or silicone baking mats.
- Whisk the flour, baking powder, baking soda, and salt together in medium bowl. Set aside.
- In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter and sugar together on medium-high speed until smooth and creamy, about 2 minutes. Add the egg and vanilla extract, and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine. Reduce to low speed and add the dry ingredients in 3 additions, alternating with the sour cream. Beat everything on low until combined and no pockets of flour remain. Batter is extremely thick.
- Using a greased 1/4-cup dry measuring cup, drop mounds of dough 4 inches apart on prepared baking sheets- 6 cookies per sheet. Bake for 16-18 minutes or until the edges are lightly browned. Allow cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely before icing.
- Whisk the confectioners' sugar, 6 Tablespoons milk, the corn syrup, vanilla extract, and salt together in a medium bowl. Transfer 1 cup to a separate bowl, add remaining Tablespoon of milk and the cocoa powder. Whisk until combined.
- Spread vanilla icing onto half of the cookies- the flat side. Refrigerate for 15 minutes or until set so that the icings do not bleed into each other. Spread chocolate icing onto other side and allow the icing to set completely, about 1 hour, before serving.
- Cookies will stay fresh in an airtight container at room temperature for 2 days or in the refrigerator for up to 1 week.
BLACK AND WHITE COOKIES
This is a black and white cookie recipe I've compiled together from many sources on the internet (mainly Brown Eyed Baker for the cookie, and Hemstrought's Bakery for the fondant icing) with my own additions to match what I remember from New York. Hope you like it!

- Preheat the oven to 375 degrees F (190 degrees C). Line a cookie sheet with parchment paper.
- Mix flour, baking powder, and salt together in a medium bowl.
- Cream sugar and butter together in a large bowl using an electric mixer for 3 minutes. Add eggs and beat for 30 seconds more. Add lemon zest, vanilla extract, and lemon extract. Mix together. Add flour mixture and milk gradually in equal 1/3 proportions, mixing batter well after each addition until fully incorporated.
- Spoon cookie batter out 1/4-cup portions onto the prepared cookie sheet.
- Bake in the preheated oven until edges just begin to turn golden brown, 13 to 15 minutes. Transfer cookies to a wire rack to cool completely.
- While cookies cool, melt butter for vanilla icing in a double boiler over medium heat. Stir in confectioners' sugar, corn syrup, vanilla extract, and salt. Add water gradually until vanilla icing comes together. Heat over the double boiler until icing falls off the back of a spoon in thick ribbons, 2 to 4 minutes. Set heat to low.
- Frost 1/2 of the golden brown underside of each cooled cookie with vanilla icing using a rubber spatula. Allow excess to dribble back into the double boiler. Let cookies cool for 10 minutes.
- Meanwhile, set the double boiler back to medium heat and add confectioners' sugar, semisweet chocolate, bittersweet chocolate, corn syrup, butter, vanilla extract, and food coloring to the remaining vanilla icing. Mix well, adding water until icing is combined. Heat until icing falls off of the back of a spoon in thick ribbons, 2 to 4 minutes. Set heat to low.
- Frost the other 1/2 of the cooled cookies using a rubber spatula in the same manner as before. Let cookies cool until icing sets, 1 to 2 hours. Serve.

BLACK-AND-WHITE ICE CREAM SANDWICHES
Mint chip ice cream (or the flavor of your choice) is the filling between tender chocolate cookies that have been dipped halfway into white chocolate.

- Drop six 2/3-cup mounds mint chocolate chip ice cream onto waxed-paper-lined baking sheet. Using metal spatula, shape each mound into 3- to 3 1/2-inch square; freeze squares.
- Beat butter and sugar in large bowl until smooth. Beat in egg yolk and vanilla. Sift flour, cocoa and salt onto butter mixture. Stir until blended and soft dough forms. Gather dough into ball; flatten into rectangle. Roll out dough between 2 sheets of waxed paper to 13 x 10-inch rectangle. Place dough, still between waxed paper sheets, on baking sheet. Chill until firm, at least 1 hour and up to 1 day.
- Position rack in center of oven and preheat to 300°F. Line large baking sheet with parchment paper. Peel top sheet of waxed paper off dough. Trim dough to 12 x 9-inch rectangle; cut dough into twelve 3-inch squares. Transfer squares to parchment-lined sheet, discarding waxed paper and spacing squares about 1 inch apart. Bake until cookies are firm to touch, about 20 minutes. Cool cookies completely on sheet.
- Melt white chocolate in medium metal bowl set over saucepan of barely simmering water, stirring until smooth (do not allow bottom of bowl to touch water). Remove bowl from over water.
- Holding corner of 1 cookie, dip cookie into melted chocolate until half covered on diagonal, tilting bowl if necessary to submerge. Shake cookie gently to allow some excess chocolate to drip back into bowl. Return dipped cookie to parchment-lined baking sheet. Repeat with remaining cookies and white chocolate. Freeze cookies until chocolate coating is firm, about 10 minutes.
- Arrange 6 cookies, flat side up, on work surface. Top each with frozen ice cream square, then another cookie, flat side down, pressing slightly to adhere. Cover and freeze sandwiches. (Can be made 4 days ahead. Keep frozen.)
BLACK AND WHITE SHAKES
A classic NYC black and white shake recipe from Rachael Ray (a former fountain girl in New York). The ingredient list didn't offer the word "tray" for quantity, so I listed the ice cubes as "sheets" - You will need one filled ice cube tray. Enjoy!

BLACK-AND-WHITE ICE CREAM TART

- Coarsely chop 6 cookies; set aside.
- Make crust: Process 10 cookies in a food processor until fine crumbs form. Add butter, and process until combined. Transfer to a 9-inch tart pan with a removable bottom. Using the bottom of a measuring cup or glass, press crust firmly into pan. Top with a circle of 8 cookies.
- Dollop ice cream by the cup all over crust. Using a rubber spatula, gently spread. Sprinkle edge of ice cream with chopped cookies, forming a border. Freeze until firm, at least 4 hours, or cover with plastic wrap and freeze, up to 1 week.
- To unmold, run a warm, damp cloth or sponge around outside edge of pan. Lift removable bottom with tart out of pan. Transfer to a serving plate, and cut into slices.

BLACK-AND-WHITE SUNDAES
Steps:
- Spoon 1 tablespoon of each of the sauces into each of 4 shallow serving dishes, placing them next to each other. Place a scoop of the chocolate ice cream on the marshmallow sauce and a scoop of the vanilla on the chocolate sauce. Top each scoop of chocolate ice cream with marshmallow sauce and each scoop of vanilla with chocolate sauce.
- Add a dollop of the whipped cream to each scoop and serve immediately.
- Melt the chocolate with the cream, 6 tablespoons water, and the salt in a heatproof bowl set over a saucepan of simmering water, stirring until smooth.
- Use immediately, or let cool to room temperature, transfer to a glass jar, and refrigerate, tightly covered, for up to 2 months. Shake well before serving chilled, or gently reheat before serving.
- With a rubber spatula, scrape the marshmallow cream into a bowl. Add 3 tablespoons of warm water to the jar, screw on the lid, and shake hard. Add the liquid to the bowl and whisk until smooth. Thin the sauce with 1 to 2 tablespoons water if necessary. Use immediately or transfer to a glass jar and store at room temperature, tightly covered, for up to 3 months. Serve at room temperature.

- Add the cassis to the 1 3/4 cups blackberries and mash lightly with a fork.
- Whip the cream in a large bowl until thick but still soft. Roughly crumble in 1 of the meringues nests - you will need chunks for texture as well as fine dust.
- Fold in the fruit mixture and arrange on a serving plate in a mound, then crumble over the remaining meringue. Decorate with the remaining 1/4 cup blackberries.

- For the custard:
- In a heavy medium saucepan, combine the milk, cream, and sugar. Split the vanilla bean and scrape the seeds into the milk mixture. Add the pod and bring to a boil over medium heat. Remove from the heat and let steep for 30 minutes, or until the mixture cools to room temperature. Discard the vanilla pod or reserve for another use.
- Place a rack in the center of the oven and preheat the oven to 300°F.
- Lightly beat the egg yolks with a fork, then whisk into the milk mixture. Strain the custard through a fine-mesh strainer into a 2- to 3-quart shallow gratin dish.
- Place the gratin dish in a large deep baking pan or a roasting pan. Pour enough very hot water into the pan to come three-quarters of the way up the gratin dish. Bake for 45 minutes. Check the custard by gently shaking the dish; the custard should be set but still move slightly. Test by inserting a knife into the custard; it should come out clean and almost dry. If necessary, cook the custard for 5 to 10 minutes longer, checking often.
- Carefully remove the gratin dish from the water bath. Let cool to room temperature, then cover and refrigerate until cold, at least 4 hours overnight.
- For the mousse:
- Melt the chocolate and butter in the top of a double boiler set over gently simmering water, stirring occasionally until smooth. Remove from the heat and let sit in a warm spot until tepid or barely warm. (If the chocolate is too hot when added to the yolks, the yolks could curdle; if the chocolate is too cool, flakes of chocolate may form in the yolks.)
- The mousse is best made with a whisk or with a hand mixer; a stand mixer may not be able to whisk such a small quantity. In a medium bowl, whisk the egg yolks with 1 tablespoon of the sugar until a slowly dissolving ribbon forms when the whisk is lifted. Fold in the tepid chocolate. In a medium bowl, using a clean dry whisk or beaters, beat the egg whites with the cream of tartar until soft peaks form. Add the remaining 1 tablespoon sugar and continue beating until barely stiff peaks form. Gently fold half of the whites into the chocolate mixture, then fold in the remaining whites.
- Spoon the chocolate mousse over the chilled custard, smoothing the top with a small offset spatula. Wipe the rim of the dish with a damp towel to remove any chocolate. Cover with plastic wrap and refrigerate for at least 6 hours, or, preferably, overnight.
- Thirty minutes before serving, remove the crème brûlée from the refrigerator.
- To caramelize the brûlée:
- Sprinkle the sugar in an even layer over the top of the mousse. If using a torch, work from one end of the dish to the other. Adjust the level of the torch as necessary to regulate the heat, moving the flame over the surface to caramelize the sugar. If using a broiler, place a rack on the highest level and preheat the broiler. Broil until the sugar is melted and caramelized, about 2 minutes. Watch carefully, and move or turn the dish as necessary for even caramelization.
