TUNA WITH WASABI SAUCE
Wasabi mayonnaise can be found in the Asian section of your local supermarket. Wasabi, an Asian plant similar to horseradish, has a fiery flavor. Add some plain mayonnaise to make a milder sauce.

- In a large resealable plastic bag, combine the teriyaki sauce, vinegar and oil; add tuna. Seal bag and turn to coat; refrigerate for up to 1 hour. Meanwhile, in a small bowl, combine the mayonnaise, onion and lemon juice until blended. Refrigerate until serving. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill tuna, covered, over medium heat or broil 4 in. from the heat for 5-6 minutes on each side or until medium-rare or until slightly pink in the center. Serve with wasabi sauce.

SEARED TUNA WITH WASABI-BUTTER SAUCE
I've had the seared tuna in nice restaurants, but this is better than all of them. One tablespoon of wasabi sounds like a lot of heat, but somehow this cooking method mellows it to almost nothing, just leaves the flavor. Really really great.

Steps:
- Combine the white wine vinegar, white wine and shallots in a small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons. Strain out shallot and discard, return liquid to the pan.
- Stir the wasabi and soy sauce into the reduction in the pan. Over low heat, gradually whisk in butter one cube at a time allowing the mixture to emulsify. Be careful not to let the mixture boil. When all of the butter has been incorporated, stir in cilantro, and remove from heat. Pour into a small bowl, and set aside.
- Heat a large skillet over medium-high heat. Brush tuna steaks with olive oil, and season with salt and pepper. Place in the hot skillet, and sear for 3 to 5 minutes on each side. Be careful not to overcook, this fish should be served still a little pink in the center. Serve with sauce.

Steps:
- Heat olive oil in saucepan and saute peppers and onion with salt, pepper and oregano.
- In a small bowl mix all spices for tuna and season steaks on all sides. About 2 minute per side.
- Heat skillet on high and sear tuna on all sides in olive oil.
- In a bowl combine ingredients for mustard sauce.
- To serve slice tuna 1/4 inch thick and top with sauce and vegetables.

- Marinate tuna slices in soy sauce in a bowl, 10 to 15 minutes.
- Remove fish from soy sauce to a plate and season with black pepper; set aside.
- Whisk sour cream and wasabi paste together in a small bowl; cover and refrigerate until ready to use.

BLACK AND BLUE TUNA WITH WASABI SAUCE
If you like a good piece of tuna and you like wasabi, you are in for a real treat! Buy sushi-grade tuna so you don't have to cook the heck out of the fish. Tuna is best served when the middle is room temp. However, even if you like your fish charbroiled, you will love the wasabi sauce with it!

- In a small saucepan, over medium heat, combine the wine, vinegar and shallots.
- Simmer until reduced to about 2 T. of liquid.
- Strain through a fine-mesh strainer, return the liquid to the pan, discard the shallots.
- Whisk in the wasabi and soy sauce.
- Over low heat, gradually whisk in the butter, on piece at a time, allowing the mixture to emulify.
- Do not let the mixture boil.
- When all the butter has been mixed in, remove from heat, pour into a small bowl and set aside.
- Brush the tuna steaks with a little oil.
- Either pan sear or BBQ to desired doneness.
- 3 minutes per side will leave a rare center.
- 5 minutes per side will be "pink".
- Watch closely, though.
- Serve with the sauce.

- Whisk 1/2 cup water and wasabi powder in medium bowl to form smooth paste. Whisk in soy sauce, 2 tablespoons peanut oil, Sherry, sesame oil and ginger. Stir in green onions. Set aside.
- Sprinkle tuna with salt and pepper. Heat remaining 1 tablespoon peanut oil in heavy large skillet over high heat. Add tuna and sear until opaque in center, about 3 minutes per side.
- Spoon cucumber onto center of plates. Top with tuna. Spoon sauce around. Garnish with radish sprouts.

- Citrus Wasabi Sauce ... First thing is to zest your fruit before juicing it. Add the zest, and the juice to a small bowl for the marinade to a small bowl; along with the mayonnaise, garlic, papriika and wasabi powder. Mix well to combine. Cover with plastic wrap, and refrigerate for 1-2 hours before serving. This can easily be made a day ahead as well. Extra zest makes a fantastic garnish.

- Then, add the sesame seeds, salt, and pepper to a pie plate and mix to combine. Remove the tuna from the sesame oil - shaking or brushing off most of the oil. I actually just use my hand to wipe off most of the oil. Then, press the entire tuna piece into the sesame mix, making sure to coat all the sides. Do this a couple of times to make sure it is completely coated.
