BJ's Easy Blackberry Cobbler image

This recipe takes all of the fuss out of making cobbler and eliminates that doughy taste. Serve with whipped cream or ice cream. It's really tasty enough without topping!

cooking spray
5 cups fresh blackberries
½ cup white sugar
2 tablespoons lemon juice
1 (15.8 ounce) package lemon-poppy seed muffin mix
1 egg
⅓ cup milk
1 teaspoon ground cinnamon
½ cup butter at room temperature
1 cup brown sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x9-inch baking pan with cooking spray.
  • Spread the blackberries into the prepared baking pan, and sprinkle with white sugar; drizzle with lemon juice. In a bowl, mix the lemon-poppy seed muffin mix, egg, milk, and cinnamon, and stir until moistened. It's okay to leave lumps in the batter. Pour the batter over the blackberries.
  • Place the butter and brown sugar into a bowl, and mix with an electric mixer on medium speed until the mixture resembles coarse crumbs. Spread this mixture over the batter in the pan.
  • Bake in the preheated oven until the topping is browned and the blackberries are bubbling, about 1 hour. Allow to stand for 20 minutes before serving.

Pie is nice, but it's not as easy as cobbler. This shortcut method comes together in less than 5 minutes. It is also a cinch to personalize. You can substitute peaches, or combine stone fruits and berries. Serve with ice cream instead of whipped cream. The possibilities are endless! From Real Simple Magazine September 2006.

butter (for baking dish)
1 1/2 pints fresh blackberries or 1 (16 ounce) bag thawed frozen unsweetened blackberries
2 tablespoons confectioners' sugar
2 cups pancake mix
1 cup whole milk
2 large eggs
1 (8 ounce) container whipped cream

Steps:

  • Heat oven to 375 degrees.
  • Butter an 8-inch square baking dish. Add the berries and 1-1/2 T. of the sugar to dish and toss.
  • In a large bowl, combine the pancake mix, milk, and eggs until no lumps remain. Pour the batter over the berries.
  • Bake until the crust is golden and a toothpick inserted in the center comes out clean, about 30 minutes. Remove from oven. Let cool for 5 minutes.
  • Sprinkle with the remaining sugar and serve with a dollop of whipped cream.

This was my mother's recipe from the 1940's. I entered the Jefferson County Fair on August 28th for the first time. This cobbler won First Place, Champion, and Best in Show.

½ cup white sugar
1 cup all-purpose flour
2 teaspoons baking powder
½ cup milk
¼ cup melted margarine
2 cups fresh blackberries
½ cup white sugar
1 cup water

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • Whisk 1/2 cup sugar together with the flour and baking powder in a mixing bowl. Stir in the milk and margarine until a batter forms. Scrape into the prepared baking dish. Add the blackberries, and sprinkle with 1/2 cup sugar. Pour in the water.
  • Bake in the preheated oven until the batter has risen and the top is brown, 45 minutes to 1 hour. Cool before serving.

2 cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
½ cup unsalted butter, melted
1 cup heavy cream
6 cups fresh blackberries
¼ teaspoon ground nutmeg
1 teaspoon white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix together the flour, 1 cup of sugar, baking powder, salt, milk, melted butter, and cream to make a batter. Spread the blackberries out into an ungreased 9x13-inch baking dish, and top with the batter. Sprinkle the top of the batter with the nutmeg and 1 teaspoon of sugar.
  • Bake cobbler in the preheated oven until the top is browned, the fruit is bubbling, and a fork inserted into the center of the batter comes out clean, about 1 hour. Allow to cool before serving.
